2 cups all-purpose flour
1 ½ cups white chocolate chips
½ cup white sugar
3 teaspoons baking powder
½ teaspoon salt
1 cup milk
⅓ cup vegetable oil
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tray with paper liners.
  • Mix flour, white chocolate chips, sugar, baking powder, and salt together in a large bowl.
  • Mix milk, oil, egg, and vanilla extract together in a medium-sized bowl. Add to flour mixture and mix well.
  • Fill 2/3 of each prepared muffin cup with batter.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 20 to 25 minutes.
  • Remove from the oven and let cool for 2 minutes. Serve warm.

1 teaspoon baking powder
½ teaspoon baking soda
1 pinch salt
¾ cup buttermilk
1 large egg
1 teaspoon vanilla extract
¼ cup unsalted butter, melted
2 cups fresh raspberries
½ cup miniature white chocolate chips
3 tablespoons seedless raspberry jam
2 tablespoons white sugar
2 teaspoons ground cinnamon
¼ cup miniature white chocolate chips

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease and flour a 12-cup muffin tin or use paper liners.
  • Sift flour, sugar, baking powder, and baking soda together in a large bowl.
  • Combine buttermilk, egg, and vanilla extract together in a small bowl and whisk together.
  • Add buttermilk mixture and melted butter to flour mixture, whisking until just moistened; batter will be lumpy. Fold in raspberries, miniature white chocolate chips, and raspberry jam. Fill muffin cups with batter.

2-1/2 cups all-purpose flour
1 cup packed brown sugar
1/3 cup baking cocoa
2 teaspoons baking soda
1/2 teaspoon salt
2 eggs
1-1/3 cups buttermilk
1/3 cup butter, melted
1-1/2 teaspoons vanilla extract
1-1/2 cups white baking chips

Steps:

6 tsp baking powder
1 c sugar
1/2 tsp salt
1 c butter
2 large eggs (slightly beaten)
1 c +2 tablespoons milk
2 tsp vanilla extract

1/2 c chopped pecans
2 c blueberries

Steps:

  • 1. Preheat oven to 375F. Grease cups of muffin tin or line with baking cups.
  • 2. Combine flour, baking powder, sugar and salt in a large bowl. Cut in butter using two knives or a pastry blender until mixture resembles coarse crumbs. Make a well in the dry ingredients and add eggs, milk and extracts, stirring just until the liquid is absorbed. Gently fold in orange rind, if using, berries, pecans and white chocolate chips, then fill muffin cups with the mixture.

This produces a very thick batter so hand mixing is best (unless you have a kitchen aid, which I do not). Also the batter is very sticky and I found that my second batch was easier to work with after it stood. The choice is up to you but I will let mine stand next time before filling the muffin cups. These little treasures taste wonderful with a cuppa afternoon coffee.
