There is nothing comparable to the taste of freshly caught salmon, but to serve it planked.....is phenomenal!!! Out on the west coast, we get an abundance of salmon, so I am always looking for a different recipe. This recipe was published in our local paper from cookbook author Ronnie Shewchuk, Barbecue Secrets

1 cedar plank (soaked overnight or at least 1 hour)
6 tablespoons whiskey
3/4 cup maple syrup
1 teaspoon crushed red pepper flakes
1 tablespoon butter, room temperature
3 lbs salmon, skin on
kosher salt
ground black pepper
2 teaspoons granulated onion (or onion powder)
2 lemons, halved

Steps:

  • Plank: Make sure that the plank has soaked for at least 1 hour and up to 24.
  • Glaze: Combine the whiskey and maple syrup in a small saucepan, bringing the mixture to a low boil and reduce by about half. You should have a thick syrup that coats the back of a spoon. Add chilies and butter and stir until just combined. Set aside and keep warm.
  • Season the salmon with salt, pepper and granulated onion. Pour the glaze over the salmon carefully. Let the salmon sit for 10 - 15 minutes at room temperature, until the rub is moistened.
  • Preheat the grill on medium high heat for 5 - 10 minutes. Rinse the plank and place it on the cooking grate. Cover the grill and heat the plank for 4 - 5 minutes or until it starts to throw off a bit of smoke and crackles lightly.
  • Reduce the heat to medium low. Season the plank with kosher salt and place the salmon, skin side down, on the plank. Cover the grill and cook for 15 to 20 minutes or until the fish flakes.
  • Check periodically to make sure the plank doesn't catch fire and spray the burning edges with water if it does, making sure to close the lid afterwards.
  • When the salmon is done, squeeze half a lemon along its length and carefully transfer to a platter. Garish with remaining lemon cut into slices.

Whiskey-Glazed Salmon With Salt-Crusted Potatoes image

The savory snap of baby potatoes crusted in salt is just what you want with the subtle sweetness of this fish's glaze. The fish and the potatoes cook and come together at the same time in this fast meal. To achieve silky salmon without turning on the oven, gently cook it in a shallow pool of sauce that thickens to a syrup as it simmers. The potatoes, prepared using a technique from the Canary Islands, simply boil in generously salted water, then finish cooking with a splash of the liquid. When it evaporates, the salt that remains crusts onto the spuds. Shaking the pan vigorously helps the salt coat the potatoes evenly and sheds excess crystals. Serve with a salad or, after the glaze is scraped onto the fish, throw baby spinach into the still-hot skillet and stir to just wilt.

1 1/2 pounds baby gold potatoes, scrubbed
2 tablespoons coarse sea salt or kosher salt
2 tablespoons granulated sugar
6 tablespoons whiskey
2 tablespoons Worcestershire sauce
4 (5-ounce) salmon fillets
Salt and black pepper

Steps:

  • Make the potatoes: The potatoes should all be the same small size, about 1 inch in diameter, so cut any larger ones in halves or quarters. Place in a large saucepan with 4 cups water and add the salt. Bring to boil over high heat, then continue boiling until a paring knife slides through a potato easily, about 15 minutes.
  • About 5 minutes before the potatoes are tender, start the salmon: Combine the sugar, whiskey and Worcestershire sauce in a large skillet, and bring to a boil over medium-high heat, stirring to dissolve the sugar. Season the salmon with salt and pepper, then add to the skillet skin side down (or the flat side if the fillets are skinless). Reduce the heat to medium-low and simmer until the salmon becomes opaque about halfway up the sides, about 5 minutes.
  • Meanwhile, carefully tip the saucepan into the sink to pour out all but about 1/4 cup cooking water, keeping the potatoes in the pan. Return the saucepan to the stove with the potatoes and a thin layer of cooking water at the bottom, and set over high heat. Cook, shaking the pan often, until the liquid evaporates and the potatoes are crusted in a fine film of salt, about 5 minutes. The pan should be extremely dry and coated in salt and the potatoes will sound crackly when shaken.
  • Flip the salmon and continue cooking until just opaque from top to bottom and a paring knife slides through with almost no resistance, about 5 minutes longer. If you started with a 1-inch-thick fillet, this will be medium-rare. The timing will vary depending on the thickness of your fish and your preferred doneness. If you'd like, use tongs to peel off and discard the skin if there is any. The glaze should have thickened and be syrupy.
  • Divide the potatoes and salmon among serving plates and drizzle any glaze from the pan over the fish.

1/4 cup cider vinegar
1/4 cup Irish whiskey
2 teaspoons chopped fresh thyme
1 1/2 teaspoons grated lemon zest
2 tablespoons vegetable oil
salt & freshly ground black pepper
4 salmon fillets, 6 oz (175 g)

Steps:

  • Mix together honey, vinegar, whiskey, thyme, lemon zest, oil, salt and pepper. Pour over salmon and marinate 1 hour on the counter, or 4 hours refrigerated.
  • Preheat oven to 450°F (230°C).
  • Remove salmon from marinade and place on a rack over a roasting pan.
  • Bake for 10 to 12 minutes, basting once with the marinade or until golden and white juices are just beginning to appear.
  • Place on 4 plates and serve.

This sauce is so decadently delicious! The maple flavor is far more prominent than that of the whiskey, which suited my palette just right. It's perfect atop the salmon, but would be wonderful on chicken as well.

4 salmon filets
1/3 c whiskey (i use jack daniels) plus 2 tb
1/2 c butter
1/2 c maple syrup
1/2 c brown sugar, light
1/2 c pistachio nuts, chopped, dry roasted

Steps:

  • 1. Marinate salmon in 1/3 cup whiskey in zip-lock bag for at least 2 hours in refrigerator. Preheat oven to 350 degrees.
  • 2. Combine butter, maple syrup, brown sugar and 2 tablespoons of whiskey together in a saucepan. Cook on high heat till almost boil then simmer reducing heat until you have a thicker consistency, about 15 minutes. Reserve ½ of the mixture, set aside and keep warm.
  • 3. Place salmon on a foil lined cookie sheet or baking pan sprayed with non-stick spray then lightly baste with the remaining whiskey sauce on both sides. Bake for 25-30 minutes, basting twice during the baking. Time in cooking may vary depending on the thickness of the salmon. Discard the used basting sauce.
  • 4. Baste one last time with fresh reserve whiskey sauce and sprinkle with the roasted pistachios just before serving. Lightly drizzle with whiskey sauce and serve hot. Perfect with a Rice Pilaf and/or Asparagus Also, this works just fine WITHOUT the Whiskey if you don't want to cook with the liquor.

BLACKENED SALMON WITH WHISKEY BUTTER SAUCE



Blackened Salmon with Whiskey Butter Sauce image

This is easy, fast, and melts in your mouth. Be sure to use the freshest salmon you can find. Other blackening seasonings will work, but Emeril's really does give the best flavor. Also don't substitute Scotch or Irish whiskey; while they're great to drink, they don't give the right flavor in this dish. Lastly, and most importantly, be VERY careful when adding the alcohol to the frying pan--you don't want singed eyelashes or worse!

12 -16 ounces salmon fillets, 2 total
Emeril's Original Essence, original seasoning mix
1 1/2 tablespoons olive oil
1 1/2 tablespoons butter
1/2 cup whiskey or 1/2 cup brandy (I use Windsor.)
1/4 cup finely minced shallot
6 tablespoons butter

Steps:

  • Generously sprinkle both sides of each salmon fillet with the seasoning mix (you want a good coating).
  • Rub into the fillet and add more if you end up with bare spots.
  • Set aside.
  • With temperature on high, heat the olive oil in a saute pan large enough to hold both fillets.
  • When it starts to smoke and shimmer, add the butter and swirl just until melted.
  • Add the fillets and cook over high heat, 1-2 minutes per side until blackened, but not burnt (watch carefully).
  • Remove from the heat; standing back from the pan, add the whiskey.
  • Cover the saute pan, return to the burner over med-low, and cook for another 2-4 minutes, depending on the thickness.
  • When the fish is done through, remove to a plate and keep warm.
  • Bring the remaining whiskey in the pan to a simmer, add the minced shallot, and whisk in the remaining butter, one tablespoon at a time.
  • Let each addition melt before adding another.
  • Whisk constantly.
  • Pour over salmon and serve.

8-10 oz filet of steelhead
or other variety salmon
1 lemon, cut into wedges
1/3 cup good quality whiskey
3 Tlb honey
1/2 tsp each salt, black pepper
and hot red pepper
Herb butter -
blend together 1/4 cup butter,
2 cloves minced garlic, 2 Tlb
finely chopped parsley and
1 Tlb finely chopped thyme

Steps:

  • Preheat oven to 350 degrees use casserole dish - melt butter in casserole. Season salmon with salt, black and red pepper. Rub top side of salmon in butter turn and bake skin side down. Squeeze with lemon/add wedges. Cover with foil. Bake for 20 minutes fish begins to flake. Mix whiskey and honey together. Pour over salmon. Continue baking 6-8 minutes longer until a glaze forms over the salmon. Serve immediately. Sprinkle with parsley if desired

SMOKED SALMON IN CREAMY WHISKEY SAUCE OVER PASTA

The mascarpone cheese can be substituted with cream, but you will need to cook it down for a few minutes after adding to reduce and achieve the proper consistency for the sauce. 500 g spinach tagliatelle, cooked per package directions
50 g butter
4 fresh sage leaves
2 cloves garlic, peeled and finely chopped
200 g smoked salmon, cut in strips
50 g shelled pistachio nuts
4 tablespoons fresh lemon juice
4 tablespoons whiskey
200 g mascarpone cheese
fresh ground black pepper, to taste

Steps:

  • In a large frying pan, saute the sage in the butter; when it begins to be fragrant and turn color, remove and discard.
  • Add the garlic to the pan, and saute for 30 seconds.
  • Add the salmon to the pan, toss well, add nuts and cook for 30 seconds (the salmon will break down into small pieces, don't be alarmed).
  • Add the lemon juice and the whiskey, and cook for another minute.
  • Add in the mascarpone cheese and stir well until it melts and is completely incorporated with the other ingredients.
  • Add ground black pepper to taste.
  • Add the hot cooked pasta to your pan and mix it well into the sauce.
  • It is now ready to serve!

2/3 cup Scotch whisky
2/3 cup water
8 black peppercorns
3 bay leaves
1 chopped carrot
1 finely chopped onion
3 tablespoons lemon juice
1/2 teaspoon thyme
salt and pepper
3 egg yolks
1 tablespoon lemon juice
1/2 cup butter
3 tablespoons Scotch whisky
3 tablespoons poaching liquid

Steps:

  • Place all the ingredients for the poaching liquid in a pan and gently poach the salmon for 7-10 minutes or until the fish is cooked. Strain and reserve the poaching liquid.
  • Place the salmon on a warm serving plate, cover and keep hot.
  • Make the butter sauce by whisking the egg yolks and lemon juice together. Place in a heat-proof bowl and set over a pan of hot but not boiling water on a very low heat. Whisk until the mixture begins to thicken. Stir in the butter gradually, allowing a small amount to melt at a time. If any lumps appear in the mixture, remove the bowl from the heat and add a teaspoon of cold water before placing back on the heat.
  • Once all the butter has been mixed in and the sauce is to the required thickness, remove from the heat and add in the three tablespoons of whisky and the three tablespoons of poaching liquid. Pour over the salmon and serve with fresh vegetables.

2 lbs fresh salmon - thick slices (3-4)
1/4 Cup whiskey
1/4 Cup orange juice - fresh
1/4 Cup soy sauce
4 cloves garlic - minced
3 Tbs olive oil - light
1 Tbs fresh cracked black pepper
1 Tbs salt

Steps:

  • After scaling and de-boneing, rinse and dry. Place the fish on the plate. Mix all ingredients thoroughly in a non-reactive bowl (glass or plastic). Next, place the fish in the same bowl making sure to cover all surfaces of the fish. Allow to marinate several hours in the refrigerator (covered) before grilling. Next, prepare your grill for direct grilling making sure the grill is at least 350 degrees. To keep the fish together, it is best to use either a fish basket, grill topper or big grill brush to hold the fish together. Turn several times to prevent burning and check doneness with a fork. Salmon should flake when a fork is inserted into the thickest part and twisted. Do not over cook!. Remove and serve at once. You will find this to be a superb meal.

2 cups milk
2 8-oz. bottles clam juice
2-1/2 cups corn kernels
1 cup heavy cream
2-4 tablespoons tomato paste
1 teaspoon lobster base, optional
1 pound smoked salmon, cut into small pieces
Juice and zest of 1 small lemon
1/4 cup chopped fresh dill
2 oz. Jack Daniel's whiskey
Salt and pepper, to taste

Steps:

  • 1. Melt the butter in a large heavy-bottomed soup pot, and saute the onions, celery and saffron (if using) over medium heat until softened. Add the potatoes and fennel, and saute briefly before pouring in the milk and clam juice. Cover, and let the mixture simmer on medium heat until potatoes are soft, about 20 minutes. 2. Add the corn, cream, tomato paste and lobster base (if using). Cook 5 minutes more, add the salmon, lemon juice, lemon zest, dill and whiskey. Season with salt and pepper

  • Preheat oven to 425. Place salmon in shallow, lightly oiled baking dish and sprinkle with salt & pepper. In a small bowl, blend all remaining ingredients. Spoon over fish. Bake for 12-15 minutes. Serve with pan juices, dill & lemon.

IRISH WHISKEY CURED SALMON



Irish Whiskey Cured Salmon image

This delightfully different take on lox comes from Ireland and is easy to do. The hard part is waiting until it comes out of the cold and can be served.

1 skin-on salmon fillet, pin bones removed
2 tablespoons Irish whiskey
1/3 cup dark brown sugar, packed
3 tablespoons salt

Steps:

  • Line rimmed baking sheet with plastic wrap. Rinse fillet and pat dry with paper towels.
  • Arrange fillet, skin side down, on baking sheet and brush salmon flesh with the whiskey.
  • In a small bowl, combine the brown sugar and the salt. Rub mixture all over the salmon flesh.
  • Wrap plastic wrap securely around fillet. Top with another sheet of plastic wrap.
  • Place second baking sheet on top of fillet and place a heavy skillet or several cans on top to weigh it down.
  • Refrigerate fillet at least 48 hours and up to 72 hours.
  • Remove top baking sheet and unwrap fillet. Rinse under cold water to remove any salt residue that remains. Pat dry with paper towels.
  • Cut salmon flesh into very thin strips and serve with Irish soda bread or black bread and creme fraiche and thinly sliced red onion.

12 ounces salmon fillets, skin removed
1/2 cup flour
1 teaspoon unsalted butter
1 tablespoon olive oil
salt, to taste
white pepper, to taste
1 teaspoon garlic, minced
1 teaspoon shallot, minced
1/2 teaspoon Dijon mustard
1/2 teaspoon brown sugar
2 tablespoons raspberry vinegar
1/2 cup whiskey
1/2 cup orange juice
1/2 cup heavy cream

Steps:

  • Dredge fillets in flour, to coat both sides.
  • In a large skillet, heat butter and oil until hot. Brown fillets slightly on one side. Add salt and pepper.
  • Turn fillets over and add garlic, shallot, mustard and brown sugar. Cook for a few seconds.
  • Add vinegar. Fillet should be browned on second side now. With fillet still in pan, deglaze pan with whiskey. Add orange juice. Swirl pan to mix ingredients.
  • Reduce sauce until it begins to thicken. Add cream and cook until heated.
  • Place fillets on plates and spoon some sauce over each.
  • Garnish with grated orange zest or chopped green onions, if desired.
