1 tablespoon honey
1½ tablespoons reserve sherry vinegar
Kosher salt
¼ cup extra-virgin olive oil
¼ cup corn nuts, preferably Quicos
4 medium heirloom tomatoes, cut into wedges
4 cups 1-inch watermelon cubes
¼ cup very thinly sliced sweet onion
3 ounces goat cheese, such as Capricho de Cabra
2 tarragon sprigs

Steps:

  • Whisk the honey, vinegar, and ½ teaspoon salt in a small bowl. While whisking, add the oil in a slow, steady stream until emulsified.
  • Pulse the corn nuts in a food processor until finely chopped.
  • Arrange the tomatoes in serving dishes in a single layer and sprinkle with ½ teaspoon salt. Top with the watermelon and onion and drizzle with the dressing. Crumble the goat cheese and pluck the tarragon leaves on top. Sprinkle on the corn nuts and serve immediately.

8 large shrimp, peeled and deveined
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon smoked paprika
¼ teaspoon chipotle pepper powder
1 seedless watermelon, cut crosswise into 2-inch thick slices
1 (8 ounce) goat cheese log, cut into 8 slices
2 teaspoons balsamic vinegar
4 sprigs fresh basil

Steps:

  • Preheat oven to 430 degrees F (220 degrees C).
  • Season shrimp all over with onion powder, garlic powder, salt, smoked paprika, and chipotle pepper powder. Set shrimp into a baking dish.
  • Bake shrimp in the preheated oven until bright pink on the outside and the meat is no longer transparent in the center, about 8 minutes.

1 teaspoon kosher salt
1/2 cup goat cheese
1 cup bias cut green onion

Steps:

  • Cut the watermelon into 1 by 1-inch cubes. On a long rectangular plate (or bowl) spread the watermelon in an even layer. Lightly sprinkle with salt. Cut the goat cheese into small chunks and distribute over the watermelon. Sprinkle with the green onions and refrigerate until ready to serve.

1/3 cup balsamic vinegar
1 tablespoon honey
1/2 baby watermelon, cut into 6 3-inch by 3-inch planks
1 cup baby arugula
4 ounces goat cheese, sliced into 4 1-inch slices
2 tablespoons olive oil
black pepper

Steps:

  • Make a balsamic sysrup by pouring the vinegar and honey into a small saucepan and simmering over medium heat just long enough for it to reduce and have a thick, running consistency - about 5 minutes. Set aside, as it will thicken further as it cools.
  • Assemble each salad on its plate. First 1/2 cup arugula. Drizzle 1 T. olive oil on arugula. Then place watermelon plank on its side on top of arugula, put a slice of goat cheese on its side, then watermelon slice again, then another goat cheese slice, ending with another slice of watermelon. You will end up with a layered salad on its side.
  • Season with cracked pepper.
  • Drizzle balsamic reduction over watermelon, goat cheese slices.
  • Serve immediatley.

1 lb seedless watermelon, chunks cut into small slabs
6 ounces fresh goat cheese, cut into 12 rounds
1/4 teaspoon finely grated orange zest
1 teaspoon nigella seeds (optional)
2 tablespoons fresh orange juice
1 tablespoon fresh lemon juice
3 tablespoons extra virgin olive oil
salt & freshly ground black pepper

Steps:

  • Arrange the watermelon slabs on 6 plates and top each with a fresh goat cheese round. Sprinkle all over with the orange zest and nigella seeds.
  • In a small bowl, whisk the orange juice and lemon juice with the olive oil and season with salt and pepper.

• 1/4 of a large seedless watermelon, cut into 1 inch cubes (about 3 c. cubes)
• 1 small shallot, minced
• 1/4 tsp ground coriander
• juice from 2 medium limes
• 1 tsp honey
• 1/4 c. white wine vinegar
• 1/4 c. olive oil
• kosher salt
• black pepper
• 1 large cucumber, peeled and thinly sliced lengthwise
• 4 oz. fresh goat cheese

Steps:

  • 1. Make the dressing: vigorously whisk together honey, vinegar, olive oil, shallot, coriander, lime juice, and honey. Taste, and season with salt and pepper as desired. Pour over cubed watermelon in a large bowl, cover, and refrigerate for 1 hour. 2. Lightly salt cucumber slices and place in a strainer over a large bowl. Let sit for 20 minutes, then wipe dry. 3. To assemble salad, place watermelon cubes on each of 4 plates, then top with slightly curled slices of cucumber. Dot each plate with 1 oz. goat cheese, then sprinkle with fresh black pepper.

16 large melonballer scoops watermelon (yellow or red)
2 tablespoons fresh squeezed orange juice
1 tablespoon olive oil
1/2 teaspoon chopped mint
2 ounces California goat cheese (room temperature)
2 ounces cream cheese
1 teaspoon minced garlic
1 teaspoon chopped chives
1 teaspoon chopped thyme
4 brioche croutons, about 1/2 inch thick
2 ounces assorted mixed greens
1/2 ounce aged balsamic vinegar
Salt and white pepper

Steps:

  • Watermelon Ingredients: Preparing the watermelon: Scoop watermelon balls out, and discard seeds. Place in small mixing bowl and toss with orange juice, olive oil, and mint. Set aside at room temperature. Take leftover scraps of watermelon and discard seeds. Place in blender and add small amount of white wine vinegar, to taste. Use this as a garnish on plate.
  • Herb Goat Cheese Ingredients: Preparing the salad: combine cheeses, garlic, and herbs; mix well until all ingredients are combined. Season with salt and pepper. Place equal amounts on top of brioche croutons.
  • Place crouton in the middle of each of 4 salad plates and set four watermelon balls on top of each crouton. Garnish with small amount of mixed greens tossed with balsamic vinegar. Drizzle some vinegar and watermelon puree on plate as garnish.
