Watermelon Feta Bites Recipe - These Watermelon Feta Appetizer Bites make a perfect appetizer for summer! Made with watermelon, feta, and topped with a balsamic glaze.

Steps:
- Assemble watermelon feta appetizer bites by layering a cube of watermelon, then feta cheese, and then topping it with another cube of watermelon onto a cocktail skewer or toothpick.
- If making ahead of time, store in an airtight container in the refrigerator until about 15-25 minutes before serving.
- Just before serving, drizzle with balsamic glaze.

ARUGULA, WATERMELON AND FETA SALAD
Steps:
- Whisk together the orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.
- Place the arugula, watermelon, feta, and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Taste for seasonings and serve immediately.
WATERMELON WITH BALSAMIC AND FETA
Steps:
- In a small saucepan, whisk together the balsamic vinegar and sugar. Cook over medium heat until reduced by half and syrupy, about 4 minutes.
- Stack 2 pieces of watermelon on each plate and drizzle with the balsamic reduction. Sprinkle with feta cheese and mint and serve.
