I came across this recipe in a newspaper several years ago. Its refreshing and great for those who wish to abstain from alcohol yet join in the festivities, at Kentucky Derby parties, or anytime.

Number Of Ingredients 6

1 large bunch fresh mint leaves, about 10 stems
1 bottle ginger ale (1 quart or 1 liter, they are approximately the same)
1 c fresh lemon juice or real lemon brand juice
1/2 c sugar
1/2 c water
crushed ice

Steps:

  • 1. Rinse mint leaves and remove any thick stems. Set aside. Put ginger ale in refrigerator to chill. Mix lemon juice, sugar and water in a small saucepan. Heat and stir until sugar is dissolved. Chill.
  • 2. Pour chilled lemon juice mixture over mint leaves and refrigerate for 30 -60 minutes. In a large pitcher mix lemon juice-mint mixture, ginger ale, and ice. Stir vigorously until pitcher is frosted and serve.

4 ounces strawberries, stemmed
3 tablespoons lemonade, frozen concentrate thawed
1 teaspoon mint leaf, chopped
1 cup crushed ice
1/4 cup sparkling water
1 whole strawberry
1 mint sprig

Steps:

  • In blender, combine strawberries, lemonade and chopped mint.
  • Blend until smooth.
  • Add ice; blend until smooth.
  • Pour into glass.
  • Top with 1/4 cup sparkling water; mix.
  • Garnish glass with strawberry and mint sprig.
  • Serve with straws.

1 ounce lime juice (or juice of 1/2 lime)
1 ounce orange juice
1 ounce pineapple juice
1/2 ounce raspberry flavored syrup
club soda, to fill glass
4 crushed mint leaves

Steps:

  • Combine all ingredients except club soda in a shaker half filled with ice. Shake well.
  • Strain into collins glass. Add club soda and stir gently.
  • Garnish with a sprig of mint.
