Pumpkin Cupcakes w/pumpkin mousse frosting image

This is a easy semi-homemade cupcake. I used my favorite seasonal pudding and replaced the oil with cinnamon apple sauce. Pudding is in the frosting too. Number Of Ingredients 9

1 box yellow cake
1 3oz box pumpkin spice pudding
3/4 c milk
1 c cinnamon applesauce
4 eggs
FROSTING
1 container whipped topping
1 3oz box pumpkin spiced pudding
1 c milk

Steps:

  • 1. Wisk wet ingredients in bowl. In another bowl stir together cake mix and pudding mix. Blend wet ingredients into dry. Blend for 2-3min till lumps are gone.
  • 2. Fill cupcake papers 3/4 way full (i use icecream scoop) Bake at 350 for 15-17min. Let cool.
  • 3. FROSTING Wisk milk into pudding. Let set for 5min in refrigerator. Fold in whipped cream. Frost or pipe frosting to each cupcake. Decorate with candies or dust with cinnamon sugar.
