BIKKIES (COOKIES) FROM HEAVEN
From Good Taste November 2008. Haven't tried this one yet but hoping to do so before the end of the year for the DS's recreation group. Times and quantities are as per recipe posted in the mag.

Steps:
- Preheat oven to 180°C.
- Line 3 baking trays with non-stick baking paper.
- Beat the butter and sugar in a stand mixer till pale and creamy.
- Add the condensed milk and flour to the butter mix, stirring to combine.
- Stir in the the craisins and chocolate.
- Divide the dough into 2 equal portions, wrap and refrigerate second portion while working with first and remove second portion when you put cookies/bikkies into oven.
- Roll tablespoons of 1st portion into balls and divide among the prepared trays, allowing room for spreading.
- Use the palm of your hand to flatten slightly (or you could press with a fork).
- Bake in oven,swapping trays halfway through cooking for 8 to 10 minutes or until golden (swapping shouldn't be necessary in a fan forced oven).
- Set aside on trays for 3 minutes to cool before transferring to a wire rack to cool completely.
- Repeat with remaining dough portion.

VICKI'S FAVORITE CHICKEN WITH GRAPES, COUSCOUS AND ROASTED ASPARAGUS

- Heat oven to 400 degrees F.
- Trim tough ends of asparagus and save for soup. Place asparagus in a large bowl and toss with about 3 tablespoons extra-virgin olive oil, 2 tablespoons of chopped thyme leaves and salt and pepper. Spread the asparagus out on a cookie sheet and roast 10 to 12 minutes until the asparagus is tender and crispy at the tips.
- Heat a large skillet over medium to medium high heat; add 2 tablespoons extra-virgin olive oil, 2 turns of the pan, and 2 tablespoons butter to the pan. Place flour in a shallow dish. Season chicken with salt and pepper then dredge the tenders in flour and add it to the pan. Cook chicken 7 to 8 minutes until browned. Add wine and scrape up browned bits as wine cooks down and bubbles, 30 seconds. Add 1/2 cup stock to skillet. Combine cream and mustard and add to stock. Add grapes to the pan and turn chicken and grapes to coat and combine with the sauce. Simmer 5 minutes over low heat.
- Bring remaining 2 cups chicken stock and remaining tablespoon of fresh thyme to a boil in a small pot. Add couscous. Put a tight fitting lid on pot and remove from heat. Let stand 5 minutes, then fluff with a fork.
- Serve tenders and grapes on couscous alongside asparagus.
AUSSIE BIKKIES (CRACKERS) WITH CHEESE AND ONION
Traditional Australian snack for when unexpected guests drop by. To be truly authentic the cheese must be the very cheapest brand available and the crackers a little stale. Use a good and strong fresh onion though so your guests don't know the difference.

DIDI'S "I CAN'T BELIEVE YOU USED UP MY WHOLE BOX OF CHEERIOS" SQUARES
My daughter Adiya (AKA Didi) adores Cheerios. No one else is allowed to eat out of her box. God help any one of her sisters if they eat some of HER Cheerios. Since she's a picky kid and has the temper of Rosemary's Baby, we let her get away with this, better than picking a fight. Anyway... one day when she was out at a friend's house I came across this recipe in a magazine, and the urge just took over, and I broke into one of Didi's sacred boxes of Cheerios. You should have heard that kid shriek. Still, she shut up pretty quickly when I jammed one of these into her mouth. Now we each have our own box of Cheerios, and got help anyone else in the family who steals even on "O"!

Steps:
- Grease a 13x9 pan.
- Melt margarine.
- Add marshmallows, toss to coat with the margarine.
- You can do this on the stovetop or microwave on high for 1 1/2 minutes or until smooth when stirred.
- Stir in the peanut butter.
- Immediately add the cereal.
- Mix lightly until well coated.
- Using a greased spatula or wax paper (I put plastic baggies on my hands), press the mixture into the greased pan.
- Cool and cut into squares.

- In a medium bowl, mix together eggs, sugar, and onion. Blend in flour and cornmeal.
- Heat 2 inches of oil to 365 degrees F (185 degrees C). Drop batter by rounded teaspoonfuls in hot oil, and fry until golden brown. Cook in small batches to maintain oil temperature. Drain briefly on paper towels. Serve hot.
