This salad will be just as good and appropriate at Christmas or in the July heat. This is very typical of California.

1/3 cup olive oil
3 tablespoons sugar
2 tablespoons white wine vinegar
2 tablespoons sour cream
1/2 teaspoon dry mustard
1 (6 ounce) package spinach
1/2 cup chopped walnuts, toasted
1/2 cup dried cranberries

Steps:

  • In a shaker jar combine the oil, sugar,vinegar, sour cream and mustard. Shake well.
  • Divide spinach among four salad plates.
  • Drizzle with dressing.
  • Sprinkle with the walnuts and cranberries.

3 10 oz boxes frozen spinach,thrawed and drained
2 c low-fat 1% cottage cheese
1 1/2 c grated fat free chedder cheese
3 large eggs
1/4 c flour
4 Tbsp (1/4 cup) light,soft tub margarine, melted

Steps:

  • 1. Mix togeher all ingredients.
  • 2. Pour into a slow cooker
  • 3. Cook on High for 1 hour, Reduce heat to Low and cook 4 more hours.

2 tablespoons extra-virgin olive oil
8 cups uncut baby spinach, raw
2 tablespoons minced garlic
1/3 cup chicken broth
2 teaspoons sea salt
2 teaspoons freshly ground black pepper
2 teaspoons grated Parmesan

Steps:

  • Heat olive oil in medium stock pot, when hot add spinach and chopped garlic. Cook until fully wilted, then add chicken broth and reduce. Season with salt and pepper.
  • Garnish with the Parmesan and serve immediately.
