3 tablespoons vegetable oil
1 leek, cleaned and thinly sliced
2 garlic cloves, pressed (or minced)
1/2 cup mushroom, finely chopped
1 head napa cabbage, finely shredded
2 tablespoons rice wine vinegar
2 teaspoons soy sauce
1 inch piece fresh ginger, peeled and grated
1 medium carrot, finely grated
24 wonton wrappers
1/4 cup soy sauce
2 tablespoons rice wine vinegar
1/2 inch piece fresh ginger, peeled and finely grated
1 teaspoon brown sugar
1/2 teaspoon toasted sesame oil
1/2 lemon, zest of

Steps:

  • Heat 2 tablespoons of veg. oil in a large nonstick skillet over medium high heat. Add the leeks, garlic and mushrooms and cook until leeks begin to soften, about 3-4 minutes. Add the cabbage, vinegar, soy sauce, and ginger and cook, stirring, until cabbage is soft, about 3-4 minutes more. Remove from the heat and stir in the carrot. Allow the filling to cool.
  • Transfer cabbage mixture to a mixing bowl and work together until fully incorporated. Keep refrigerated until ready to use.
  • To make the potstickers, lay a wonton wrapper on the work surface and put about 1 tablespoon of the filling in the center. Dip your finger in a little water and wet the edges of the wonton wrapper; this will help the potsticker seal when cooking. Bring the outside edges of the wonton wrapper together over the filling and press it together to form a pouch. Continue with the remaining wrappers and filling.
  • To cook the potstickers, heat the remaining oil in a very large skillet over medium heat. Place all of the potstickers upright in the pan and cook, without disturbing them, until browned on the bottom, about 1 to 2 minutes. Add 1/2 cup water to the pan and immediately cover. Allow the potstickers to steam for about 3 minutes, then remove the skillet lid. Continue cooking until the water is completely evaporated.
  • Transfer to a platter and serve with the dipping sauce. Enjoy!
  • Dipping Sauce:.
  • Stir all ingredients together in a small bowl until sugar is dissolved. Refrigerate until ready to serve.
  • Yield: about 1/3 cup.

1/2 large zucchini,grated
1 medium carrot,grated
1 medium red onion,sliced thin and rough chopped
4 clove garlic,minced
1 c broccoli florets,chopped
1 c mushrooms,chopped
2 c shredded savoy cabbage
2 Tbsp canola oil
1 pkg groats,8 ounces,cook according to package instructions
2 c all purpose flour
2 large eggs,beaten
1 pinch salt and pepper
1/2 c romano cheese, grated
2 Tbsp chopped italian parsley
THE DOUGH
2 c all purpose flour
1/2 tsp salt
2 large eggs,beaten
1/3 c water, warm

Steps:

  • 1. Start by sauteing the onions and the garlic in the canola oil until translucent the add the rest of the vegetables and cook down until slightly wilted.Remove from heat. Add the parsley,salt,pepper and grated cheese,mix well. Set to the side or in the fridge.
  • 2. Prepare the dough,combine the flour and salt then the eggs and water. mix well by hand or in a machine.which ever you prefer. Turn the dough out onto the counter that has been dusted with flour,helps to keep your hands dusted too!
  • 3. Cut the dough into four equal parts and start with one piece,rolling it into a rectangle,about 1/4 inch thick or a bit thinner. Cut the dough into circles,place on a floured board or plate and use the scarps in the next batch and so on.
  • 4. Fill each circle with 1/2 a teaspoon of mixture,dip your fingers in some warm water or lightly brush some around the edges,fold over and pinch to seal.Place the stickers on a floured dish or plate and freeze until ready to cook.
  • 5. To cook these just boil them as you would ravioli,drain then brown them on both sides in a tbsp.of butter until golden on both sides. Serve with Hoisin or Teriyaki,soy sauce. Enjoy!! :)
  • 6. This is what toasted groats look like. You can also buy them un-toasted and toast them yourself in a non-stick pan. Just put the groats in the pan dry,toast on medium-high until golden brown.
