GRILLED HALIBUT STEAKS

Halibut is probably my favorite fish and the steaks hold up to grilling well and are a fast meal anytime. This recipe is a combination of lots of recipe browsing and mostly what makes my family happy- that is the real goal now, isn't it? Prep time includes marinade time.

3 tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
3 tablespoons vermouth
1 tablespoon fresh rosemary
24 ounces halibut steaks
salt and pepper
lemon wedge

Steps:

  • Combine first 4 ingredients and mix well in a shallow dish (I use an 8x8 glass dish). Add Halibut, coat and marinate 30 minutes on each side.
  • Heat grill to high. Salt and pepper steak just before placing on grill. Cook 4 minutes per side. Flip it once only.
  • Serve with lemon wedges.

I adopted this recipe from a North American Hunting Club magazine a few years ago. My hubby is a big deer hunter. We love when hunting season gets here because this recipe becomes a weekly treat. This is an easy recipe, that is very filling. I usually fix a pan of cornbread to go with it.

1 tablespoon vegetable oil
2 lbs venison, cut into cubes
1 large onion, chopped
2 large baking potatoes, cubed
1 (10 1/2 ounce) can condensed minestrone soup
1 (10 1/2 ounce) can Campbell's beef and barley soup
1 (10 1/2 ounce) can beef gravy
1 (4 ounce) can mushrooms, drained
1 (15 1/4 ounce) can whole kernel corn, undrained
1 (15 1/4 ounce) can green peas, undrained
1 (15 1/4 ounce) can carrots, undrained
2 bay leaves, crushed

Steps:

  • In a dutch oven or large stockpot, heat oil, sear meat.
  • Reduce heat to med, add potatoes & onion, cook until potatoes are fork tender & onion becomes translucent.
  • Add all the canned ingredients & the bay leaves. Stir well.
  • Reduce heat to low, cook for one hour.
  • Remove bay leaves before serving.
  • **Note: This can be converted to a crockpot recipe, sear the meat as directed in step 1 and then combine all ingredients in a crockpot. Let it cook on low for 6-8 hours or high for 3-4.

1 tablespoon olive oil
1 small onion, halved and thinly sliced
½ bell pepper, sliced thinly
8 ounces sliced fresh mushrooms
1 clove chopped fresh garlic
2 medium zucchini, julienned
6 (6 ounce) halibut steaks
½ teaspoon dried basil
½ teaspoon salt, or to taste
½ teaspoon ground black pepper
1 medium tomato, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat the olive oil in a skillet over medium heat. Add the onion, bell pepper, mushrooms, garlic and zucchini. Cover, and cook stirring occasionally, until the onions are translucent, about 5 minutes.
  • Place halibut steaks into a shallow baking dish, and top with the sauteed vegetables. Season with basil, salt and pepper.
  • Bake for 10 minutes in the preheated oven, then remove the dish, and cover the fillets with a layer of sliced tomato. Return to the oven, and bake for an additional 10 minutes, or until fish flakes easily with a fork.

A superb fish recipe. I have been making this dish for over 30 years. The conmbination of the spices gives the fish a delightful flavor.

1 1/2 lbs fresh halibut steaks, 3/4 inch thick (3 steaks)
2 large eggs
1 tablespoon whole milk, homogenized
1/4 teaspoon mustard powder
1/4 cup crushed breakfast corn flakes
1 teaspoon granulated garlic powder
1 teaspoon dried dill weed
1/4 cup grated hard parmesan cheese (Parmigiano Reggiano cheese preferred)
1 1/2 teaspoons italian seasoning mix
2 tablespoons extra virgin olive oil
4 tablespoons butter

Steps:

  • Rinse halibut steaks in cold water and pat dry on paper towellling; set aside.
  • In a small bowl, beat together eggs, milk and mustard until blended.
  • Crush corn flakes.
  • In a shallow mixing bowl, combine crushed corn flakes, granulated garlic powder, dried dill weed, parmesan cheese and Italian herb seasoning mix.
  • Preheat oven to 450 F degrees.
  • Dip halibut in egg mixture.
  • Now dip halibut in corn flakes mixture to coat all surfaces well. With floured fingers, press the cornflakes firmly into the halibut.
  • In a shallow 8" x 10" oven-proof casserole dish, in preheated 450 F oven, heat butter and olive oil until butter melts.
  • Place coated halibut steaks in a single layer in the buttered casserole dish.
  • Bake in preheated 450 F oven for 5 minutes.
  • Turn halibut steaks over and continue to bake for 5 to 6 minutes or until fish flakes when tested with a fork; DO NOT OVERCOOK.
  • Serve immediately with tartar sauce, lemon wedges or both.

2 14-16-ounce bone-in halibut steaks (1"-1 1/4" thick)
Kosher salt, coarsely ground pepper
2 tablespoons vegetable oil
1/4 cup (1/2 stick) unsalted butter
4 sprigs thyme
2 garlic cloves, peeled, crushed
3 tablespoons drained capers

Steps:

  • Season halibut with salt and pepper. Heat oil in a large skillet, preferably cast iron, over medium-high heat until beginning to smoke. Cook halibut until golden brown, 6-8 minutes. Turn and cook until other side of fish is golden brown, about 4 minutes longer.
  • Add butter, thyme sprigs, and garlic to pan and cook, tilting pan and spooning butter over fish, until halibut is opaque throughout and butter is brown, about 2 minutes. Add capers; toss in butter to warm through.
  • Divide halibut among plates and spoon butter sauce over.

2 lemons, peeled and sliced
2 medium red onions, sliced
cayenne pepper
1/8 teaspoon allspice
1/2 cup dry white wine
2 tablespoons breadcrumbs
3 tablespoons grated swiss cheese
2 tablespoons chopped parsley
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Arrange steaks in buttered or sprayed shallow oven dish.
  • Arrange lemon and onion slices over fish.

This also works well with other fish steaks. Prepare the soy sauce mixture well in advance, it needs time to cool to room temperature. Because of the sodium content in the soy sauce do not use any extra salt, or use low-sodium soy sauce.

1/4 cup maple syrup (can use 3 tablespoons brown sugar in place of maple syrup)
2 teaspoons minced fresh garlic (or to taste)
2 tablespoons lemon juice
1 tablespoon soy sauce (can use low-sodium soy sauce)
1 pinch ginger powder (optional)
1/2 teaspoon black pepper
2 (1 lb) halibut steaks

Steps:

  • Place butter, maple syrup, garlic, lemon juice, soy sauce, ginger (if using) and black pepper in a saucepan; heat until the butter has melted (about 2 minutes) stirring constantly, then cool to room temperature.
  • Brush each and both sides of the steaks VERY generously with the soy sauce mixture, reserving some to brush on the fish while grilling.
  • Place into a shallow glass dish, cover and refrigerate for up to 4 hours.
  • Lightly oil the grill grate.
  • Cook the fish for about 5 minutes per side brushing with remaining sauce (discard any remaining sauce).
