This recipe for Blue Cheese Broccoli Casserole is a twist on a traditional dish.

2 10 ounce packages of broccoli florets
4 tablespoons of butter divided
2 tablespoons of all purpose flour
1/2 cup of whipping cream
1/2 cup of milk
4 ounces of cream cheese (softened and cubed)
5 ounces of blue cheese divided
1 sleeve of Ritz Crackers (crumbled)
pepper to taste

Steps:

  • Cook broccoli according to package directions and set aside.
  • In a heavy saucepan melt two tablespoons of butter over low heat, add in flour while continuously stirring. Next gradually add in the milk and the whipping cream and increase heat to medium. Continue to stir and add cream cheese and about 4 ounces of blue cheese and pepper. Stir until cheese is completely melted and then add in the cooked broccoli.
  • Place everything in a sprayed casserole dish, cover and refrigerate. You can refrigerate for 2-3 hours or overnight if you want to prepare the day before.
  • Remove from fridge and add buttered crumbs for topping (2 tablespoons of melted butter combined with crumbled Ritz crackers). Sprinkle remainder of the blue cheese on top. Cook uncovered for 25-30 minutes on 350.

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.

2 heads broccoli (2 1/2 pounds), cut into florets, stems peeled and cut into 1/2-inch pieces
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter, plus 2 tablespoons melted
1 small onion, finely chopped (1 cup)
8 ounces cremini mushrooms, thinly sliced
3 tablespoons unbleached all-purpose flour
3 cups milk
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper
1/2 cup sour cream
8 ounces shredded Gouda cheese (about 3 cups)
30 saltine crackers, crushed (2 1/4 cups)

Steps:

  • Preheat oven to 400 degrees. In two batches, cook broccoli in a large pot of salted boiling water until slightly tender, about 3 minutes. Drain and rinse with cold water to cool. Drain well.
  • Melt 2 tablespoons butter in a large straight-sided skillet over medium-high. Add onion and mushrooms; season with salt and pepper. Cook, stirring occasionally, until tender and starting to brown, about 7 minutes. Add flour and cook, stirring constantly, 1 minute. Stir in milk in a slow, steady stream. Cook, stirring constantly, until mixture coats the back of a spoon, about 9 minutes. Remove from heat. Stir in mustard, Worcestershire, cayenne, sour cream, and cheese. Season with salt and pepper. Stir in cooled broccoli. Transfer to a 2 1/2-quart shallow baking dish. Combine crackers and remaining 2 tablespoons melted butter. Sprinkle evenly over top of casserole. Bake until bubbling and top is browned, about 20 minutes.

1 1/4 cup shredded sharp cheddar cheese
1/3 cup blue cheese dressing
2 eggs
1/2 teaspoon salt
1 1/2 teaspoon fresh ground black pepper
Flavor Pack from Ramen
6 cups broccoli, peeled stems and heads, chopped and blanched in salted water
12 ounces sliced mushrooms, Sauteed in 1 tablespoon butter
1 package chicken flavored Ramen noodles, broken up

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl combine mayonnaise, yogurt, cheddar cheese, blue cheese dressing, eggs, salt, pepper, and flavor pack from noodles. In a separate bowl combine broccoli, mushrooms, and broken noodles then toss together wet mixture and vegetables to evenly coat. Place in an 8 by 8-inch baking dish that has been sprayed with non- stick cooking spray and cook for 45 minutes covered. Then remove cover and bake for additional 15 minutes to brown. Cool for 15 minutes before serving.

Number Of Ingredients 9

4 cups fresh broccoli florets, chopped
2 tablespoons butter
2 tablespoons flour
4 ounces cream cheese
1/2 cup blue cheese, crumbled (for a milder blue cheese flavor reduce to 1/4 cup)
1 cup milk or 1 cup half-and-half
fresh ground black pepper (optional and to taste)
1 1/2 cups Ritz cracker crumbs
6 tablespoons butter, melted

Steps:

  • Set oven to 350°F.
  • Grease a medium casserole dish.
  • Steam broccoli florets until firm-tender (about 2-3 minutes) drain well then pat dry with paper towels.
  • In a large saucepan melt 2 tbsp butter over med-low heat; add in flour and stir for 1 minute.
  • Add cream cheese, blue cheese and milk; stir over low heat until melted and smooth, then add/stir in broccoli.
  • Mix 6 tbsp melted butter with the cracker crumbs until well combined.
  • Stir in 1 cup cracker mixture into the broccoli mixture.
  • Season with black pepper if desired.
  • Pour mixture into a casserole dish.
  • Cover with foil or a lid and bake for 15 minutes.
  • Remove from oven then sprinkle the top with remaining cracker crumbs.
  • Return to oven and bake uncovered for another 15 minutes.
  • Allow to cool for 10 minutes before serving.
