TURTLE CHOCOLATE CHIP COOKIES

Hershey's™ Rolo™, pecans and chocolate chip cookie dough make a quick and decadent turtle cookie.

1 pouch (17.5 oz) Betty Crocker™ chocolate chip cookie mix
Butter and egg called for on cookie mix pouch
2 tablespoons Gold Medal™ all-purpose flour
48 Rolo® chewy caramels in milk chocolate, unwrapped
48 pecan halves
15 caramels, unwrapped (from 11-oz package)
1 tablespoon heavy whipping cream
1/2 teaspoon coarse sea salt

Steps:

  • Heat oven to 375°F. In large bowl, mix cookie mix, butter, egg and flour with spoon until soft dough forms. Drop dough by rounded teaspoonfuls 2 inches apart on ungreased cookie sheets.
  • Bake 5 to 7 minutes or until light golden brown. Remove from oven; press chocolate in center of each cookie. Return to oven 1 minute. Remove from oven; immediately place 1 pecan half on top of chocolate. Press down slightly. Remove from cookie sheet to cooling rack. Cool 30 minutes.
  • In small microwavable bowl, heat caramels and whipping cream uncovered on High 30 to 60 seconds, stirring once, until caramels are melted. Drizzle over cookies. Sprinkle with sea salt. Let stand about 2 hours or until set.

cooking spray
1 ( 14 oz) can eagle brand sweetened condensed milk
2 ( 7 .4 oz ) packages chocolate chip muffin mix
48 foil- wrapped chocolate - covered caramel candies, unwrapped
5 oz unsweetened chocolate
1/4 c butter
2/3 c chopped pecans

Steps:

  • 1. Heat oven to 350
  • 2. Coat cookie sheet with spray.
  • 3. Microwave chocolate and butter in bowl until butter is melted.Stir until chocolate is melted and smooth.Stir in condensed milk Stir in muffin mix until blended- Roll tablespoonfuls of dough into balls.Dip bottoms into pecans.Place on sheet with nut side up, 2" apart
  • 4. Bake 7 to 8 mins or just until cookies look slightly crackled and centers are still soft- Press a chocolate-covered caramel candy into center of cookie. Place on rack- Swirl chocolate gently with knife while candy is warm, if desired.

4 tablespoons unsalted butter
1 package (12 ounces) semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1-1/2 cups chopped pecans, toasted
1-1/4 cups caramel bits
ICING:
1 cup semisweet chocolate chips
2 teaspoons shortening

Steps:

  • Preheat oven to 350°. Microwave butter on high until melted. Add chocolate chips and milk; microwave until chips are melted, stirring every 30 seconds. Stir in vanilla. Add flour; mix well. Stir in pecans and caramel bits., Drop dough by tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake until edges are set, 7-9 minutes. Cool on pans 2 minutes. Remove to wire racks to cool completely., For icing, microwave chocolate chips and shortening on high until melted. Drizzle over cooled cookies. Store in an airtight container.

4 1/2 cups sugar
1/2 cup butter
1 (12-oz.) can (1 1/2 cups) evaporated milk
4 1/2 cups miniature marshmallows
1 (12-oz.) pkg. (2 cups) semisweet chocolate chips
12 oz. sweet baking chocolate, chopped
2 oz. unsweetened chocolate, chopped
2 teaspoons vanilla
1 cup chopped pecans
25 caramels (from 14-oz. pkg.), unwrapped
2 tablespoons water

Steps:

  • Line 15x10x1-inch baking pan with foil, extending foil over sides of pan; grease foil. In Dutch oven or 4-quart saucepan, combine sugar, butter and evaporated milk; cook over medium heat until sugar is dissolved, stirring frequently. Bring to a full boil, stirring constantly. Without stirring, boil 5 to 6 minutes over medium heat or until candy thermometer registers 234°F. Remove saucepan from heat.
  • Add marshmallows, chocolate chips, sweet chocolate and unsweetened chocolate; stir until all chocolate is melted. Stir in vanilla and 1/2 cup of the pecans. Quickly spread mixture in greased foil-lined pan.
  • In medium saucepan, cook caramels and water over low heat until melted, stirring frequently. Drizzle melted caramels evenly over fudge. Sprinkle remaining pecans over caramel. Cool 2 hours.
  • Use foil to lift fudge from pan; remove foil. Cut into 1-inch squares.
