1-1/4 pounds extra-lean ground turkey
1 package (16 ounces) frozen stir-fry vegetable blend, thawed
1/3 cup reduced-sodium teriyaki sauce
1/4 cup hoisin sauce
3 tablespoons reduced-fat creamy peanut butter
2 tablespoons minced fresh gingerroot
1 tablespoon rice vinegar
1 tablespoon sesame oil
3 garlic cloves, minced
4 green onions, chopped
10 Boston lettuce leaves
Additional hoisin sauce, optional

Steps:

  • In a large nonstick skillet coated with cooking spray, cook turkey over medium heat until no longer pink., Coarsely chop stir-fry vegetables; add to the pan. Stir in the teriyaki sauce, hoisin sauce, peanut butter, ginger, vinegar and oil. Stir-fry over medium-high heat for 5 minutes. Add garlic; cook 1 minute longer., Remove from the heat; stir in onions. Place a scant 1/2 cup turkey mixture on each lettuce leaf; fold lettuce over filling. Serve with additional hoisin sauce if desired.

Vegetarian lettuce wraps with tofu and mushrooms that taste just like the famous P.F. Chang's lettuce wraps. All the flavor for a fraction of the calories!

3 tablespoons hoisin sauce
3 tablespoons reduced-sodium soy sauce
2 tablespoons rice vinegar
1 teaspoon sesame oil
2 teaspoons canola oil ( or grapeseed oil)
1 packages (12 to 14 ounces) extra-firm tofu (do not use silken)
8 ounces baby bella cremini mushrooms (finely chopped)
1 can (8 ounces) water chestnuts (drained and finely chopped)
2 cloves garlic (minced)
2 teaspoons freshly grated ginger
1/4 teaspoon red pepper flakes (omit if sensitive to spice)
4 green onions (thinly sliced, divided)
8 large inner leaves romaine lettuce (from a romaine heart or butter lettuce leaves)
Optional for serving: grated carrots (additional red pepper flakes)

Steps:

  • In a small bowl, stir together the hoisin, soy sauce, rice vinegar, and sesame oil. Set aside.
  • Press the tofu between paper towels to squeeze out as much liquid as possible. Refresh the paper towels and press again. Heat the 2 teaspoons canola oil in a large nonstick skillet over medium-high. Once the oil is hot, crumble in the tofu, breaking it into very small pieces as it cooks. Continue cooking for 5 minutes, then add the diced mushrooms. Continue cooking until any remaining tofu liquid cooks off and the tofu starts to turn golden, about 3 minutes more. Stir in the water chestnuts, garlic, ginger, red pepper flakes, and half of the green onions and cook until fragrant, about 30 seconds more.
  • Pour the sauce over the top of the tofu mixture and stir to coat. Cook just until you hear bubbling and the sauce is warmed through, 30 to 60 seconds.
  • Spoon the tofu mixture into individual lettuce leaves. Top with remaining green onions, grated carrots, and additional red pepper flakes as desired. Enjoy immediately.

3 tablespoons soy sauce

1 tablespoon Sriracha sauce

2 tablespoons grapeseed oil
½ medium onion, chopped
6 baby bella mushrooms, chopped
1 (8 ounce) can water chestnuts, rinsed and chopped
1 medium head bibb or Boston lettuce, separated into leaves
2 tablespoons Onions, spring or scallions (includes tops and bulb), raw
2 tablespoons shredded carrots, or to taste

Steps:

  • Combine hoisin sauce, soy sauce, ginger, rice vinegar, Sriracha sauce, sesame oil, and garlic in a bowl; mix to combine and set aside.
  • Place tofu onto a plate and place another plate on top. Set a 3- to 5-pound weight on top. Press tofu for 20 to 30 minutes; drain and discard the accumulated liquid.
  • Heat oil in a skillet or wok over medium-high heat. Crumble tofu into the skillet and cook for 5 minutes. Add onion and cook and stir for 3 minutes. Stir in mushrooms and water chestnuts and cook for 2 to 3 minutes.
  • Stir in hoisin mixture and mix well. Cook enough for the liquid to reduce some.
  • Serve with lettuce and garnish with green onions and carrots.

1 medium yellow onion, diced

2 cloves garlic, minced

I have never worked with Tofu before and was dying to try...so I found a recipe by Ellie Krieger that I switched up a bit to fit my husband and son's taste buds. I made the actual flavor of the tofu/turkey less spicy (for my son) and made an additional spicy sauce (for my husband and I). I also added some snow peas and and added Thai Basil at the end (for my husband and I). I also made some brown rice mixed with veggies for my son to add to the lettuce wrap - he LOVES rice! Overall the dinner was so yummy and healthy! I have to admit, it was only my second time eating Tofu and first time cooking with it. I am really proud of how good it turned out.

2 teaspoons chili-garlic sauce, bottled
1 1/2 teaspoons sesame oil
1/4 cup hoisin sauce
2 tablespoons rice wine vinegar
2 tablespoons sherry wine
1/4 cup soy sauce
8 ounces tofu, extra firm, drained and diced into very small pieces
1 tablespoon ginger, freshly minced
2 teaspoons garlic, freshly minced
1/2 lb ground turkey breast
1/2 cup water chestnut, diced
4 scallions, trimmed and thinly sliced
8 large piece iceberg lettuce
1 large red bell pepper, diced
1/4 cup snow peas, chopped
1/4 cup peanuts, chopped

Steps:

  • In a bowl, mix together chili-garlic sauce, sesame oil, soy sauce, hoisin sauce, vinegar, and sherry. Set aside.
  • Use cheese cloth or paper towels to remove as much moisture from the tofu as possible. For me, this ends up making the tofu more of a "ground-like" ingredient than diced, but this is perfect for this recipe.
  • Heat some oil in a large skillet or wok over medium heat. Add ginger and scallion whites, cook for about 2-3 minutes until fragrant and translucent. Add ground turkey and tofu. Stir until cooked through, about 4 minutes. Add bell pepper, snow peas, and water chestnuts. Stir. Add sauce.
  • Reduce heat to simmer, and cook 3-4 additional minutes.
  • Remove from heat. Add Peanuts and scallion greens.
  • Serve in lettuce pieces. Feel free to garnish with some toasted sesame seeds or cilantro.
  • I actually made a side sauce to garnish for my husband and I that was slightly spicy. It was a combination of the soy, hoisin, honey, chili-garlic paste, lime juice, olive oil, dark ground mustard, and ginger. Feel free to make your own sauce that fits your mood.

2 teaspoons vegetable oil
8 ounces white mushrooms, chopped
3 scallions, chopped
2 cloves garlic, minced
One 6-ounce can water chestnuts, chopped
1/4 cup soy sauce
1 tablespoon brown sugar
1 tablespoon rice wine vinegar
3 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 tablespoon honey
1 tablespoon Dijon mustard or spicy mustard
1 tablespoon Sriracha sauce
1/2 teaspoon sesame oil
8 to 12 large iceberg lettuce leaves, cleaned and dry
Shredded carrots, for serving
Bean sprouts, for serving
Chopped fresh cilantro, for serving

Steps:

  • For the filling: Brown the turkey in the oil in a large saute pan over medium-high heat until no longer pink. Add the mushrooms, scallions, garlic and water chestnuts, and cook until the mushrooms soften. In a small bowl, mix the soy sauce, brown sugar and vinegar, pour over the turkey mixture and cook 1 minute. Remove from the heat.
  • For the drizzling sauce: In a small bowl, whisk together the soy sauce, vinegar, honey, mustard, Sriracha, sesame oil and 1/4 cup water.
  • Serve the turkey mixture with the lettuce leaves, drizzling sauce and vegetables for lettuce wrap assembly.

2 teaspoons peanut oil
1 package firm tofu (12- to 14-ounce size)
1/4 teaspoon chili powder, or more to taste
Kosher salt and freshly ground black pepper
3 green onions, sliced
2 ears fresh corn, kernels cut off the cobs
1/4 cup soy sauce
1 teaspoon balsamic vinegar
6 large inner leaves romaine lettuce (from a romaine heart)
2 avocados, sliced

Steps:

  • Heat the oil in a nonstick skillet over medium-high heat. Throw in the tofu and break it up into very small pieces. Cook until much of the liquid cooks off and the tofu starts to turn golden, for several minutes.
  • Add the chili powder and some salt and pepper, then stir. Throw in the green onions and corn and cook for a few minutes (the corn can remain crunchy). Add the soy sauce and cook until most of the liquid has been absorbed. Turn off the heat and stir in the balsamic vinegar.
  • Pile the mixture into individual romaine lettuce leaves, then add slices of avocado. Fold up and chow down!

12 ounces extra firm tofu
4 tablespoons brown sugar
4 tablespoons soy sauce
1 teaspoon rice vinegar
4 tablespoons olive oil
2 cups diced water chestnuts
1 1/3 cups diced mixed mushrooms
1/4 cup diced white onion
2 teaspoons minced garlic
1 tablespoon soy sauce
1 tablespoon brown sugar
8 iceberg lettuce leaves
1/4 cup sugar
1/2 cup water
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons ketchup
1 tablespoon lemon juice
1/4 teaspoon sesame oil
1 tablespoon spicy mustard, thinned in 1 tablespoon hot water
1 teaspoon minced garlic

Steps:

  • Drain the tofu, and then remove excess moisture by cutting it in half lengthwise and microwaving on high, uncovered, for two minutes. Gently squeeze out and wipe off excess moisture, then throw tofu in the freezer for one or two hours before removing to thaw in the fridge -- this will give the tofu a slightly heavier texture.
  • Cut tofu into tiny cubes (about 1/4" thick) and arrange in a lidded dish to be marinaded. Combine brown sugar, soy sauce and rice vinegar in a small bowl. Pour over tofu. Let sit in the refrigerator for at least an hour; I usually leave it overnight.
  • Heat olive oil in a skillet over medium-high heat. Add tofu, water chestnuts, mushrooms, onion, and garlic and cook until vegetables are tender.
  • Dissolve 1 Tsp brown sugar in 1 Tsp soy sauce and add to pan. Saute until well mixed and heated through. Spoon mixture into lettuce leaf "bowls".
  • For the sauce, combine sugar, water, soy sauce, rice vinegar, ketchup, lemon juice, sesame oil, mustard and garlic in a bowl; pour over lettuce wraps and serve.
