If you like French toast and grilled cheese, you'll love a Monte Cristo. This sandwich is usually pan-fried, but baking it instead means you can use less butter and make several at the same time.

2 tablespoons unsalted butter, softened, for brushing
6 large eggs, lightly beaten
1 1/4 cups whole milk
Coarse salt and freshly ground white pepper
1/2 cup cranberry sauce, coarsely chopped if chunky
8 3/4-inch-thick slices white bread, such as Pullman
12 ounces thinly sliced roast turkey
4 ounces extra-sharp cheddar, grated

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with a nonstick baking mat; brush with butter. In a 9-by-13-inch baking dish, whisk together eggs and milk. Season with salt and pepper.
  • Spread cranberry sauce on 4 slices of bread. Top with turkey; season with salt and pepper. Sprinkle cheese evenly over turkey. Top with remaining bread slices. Carefully transfer sandwiches to egg mixture and soak, pressing lightly with a spatula, 1 minute a side.
  • Transfer to baking sheet; bake 15 minutes. Flip and bake 7 minutes more. Let rest 5 minutes before serving.

8 slices egg bread
3 tablespoons Dijon mustard
10 ounces thinly sliced cooked turkey
6 ounces smoked Gouda cheese, thinly sliced
1/2 cup whole-berry cranberry sauce
3 large eggs
1/3 cup 2% milk
1/4 teaspoon salt
1/4 teaspoon pepper
3 teaspoons butter
3 teaspoons canola oil

Steps:

  • Preheat oven to 350°. Spread 4 slices of bread with mustard. Layer with turkey and cheese. Spread remaining bread with cranberry sauce; place on cheese., In a shallow bowl, whisk eggs, milk, salt and pepper. In a large skillet, heat 1-1/2 teaspoons each butter and oil over medium heat until butter is melted. Dip 2 sandwiches in egg mixture; add to skillet. Cook until golden brown, 2-3 minutes per side. Repeat with remaining butter, oil and sandwiches., Transfer sandwiches to a baking sheet. Bake until cheese is melted, 4-5 minutes.

4 slices thick cut bread
4 slices cheddar cheese
4 oz turkey breast (sliced )
3 tbsp cranberry sauce
2 large eggs
1/3 cup milk
1 tbsp unsalted butter
1 tsp powdered sugar

Steps:

  • Spread cranberry sauce on each slice of bread, then top the slices with cheddar cheese.
  • Divide the turkey between the sandwiches and place one slice of bread on top of the other to form the sandwich.
  • Melt butter in a large skillet over medium high heat.
  • In a shallow dish, whisk together the egg and milk until combined. Dip the sandwich into the batter, then flip it over and dip the other side in. Repeat with the other sandwich.
  • Add the sandwiches to the skillet and cook for 2-3 minutes on each side, until golden and crispy. Remove from the skillet and slice in half, sprinkling both sandwiches with powdered sugar.

Eight 1/2 inch thick slices challah bread or brioche
3 tablespoons Dijon mustard
6 ounces smoked Gouda cheese, shredded
12 ounces thinly sliced cooked turkey breast

3 large eggs
1/3 cup milk
2 tablespoons vegetable oil

Steps:

  • To make the sandwiches: Lay the bread out on the work surface. Spread one side of each slice with the mustard. Spread half of the cheese on 4 slices of the bread. Cover with half of the turkey and season with salt and pepper to taste. Evenly spread the cranberry on the turkey on the sandwich. Top with the remaining turkey; season with salt and pepper to taste, and cover with the remaining cheese and bread. Press down slightly on each sandwich. In a lipped plate or dish, whisk together the eggs and milk, and season with salt and pepper to taste. Preheat the oven to 350 degrees F. 8 slices bacon
Eight 1/2-inch-thick slices challah bread or brioche
3 tablespoons Dijon mustard
6 ounces smoked Gouda or Cheddar, shredded
12 ounces thinly sliced leftover turkey breast
Kosher salt and freshly ground pepper
1/2 cup leftover cranberry sauce or relish
1/3 cup milk
1/4 teaspoon freshly grated nutmeg
3 large eggs
2 tablespoons unsalted butter
2 tablespoons vegetable oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Lay the bacon in a large nonstick skillet and cook over medium heat until golden and crispy, about 5 minutes per side. Transfer to a paper-towel-lined plate to drain.
  • Lay 4 slices of the bread on a work surface. Spread one side of each slice with some mustard and top each with 2 slices of bacon. Evenly divide half of the Gouda and then half of the turkey among the sandwiches and season lightly with salt and pepper. 1/4 cup canned whole berry cranberry sauce
8 slices whole-grain bread, crusts removed
4 teaspoons mustard
8 teaspoons canned whole berry cranberry sauce
2 ounces thinly sliced cooked turkey
2 ounces thinly sliced Swiss cheese
3 cups cornflakes cereal, crushed
2 eggs
1/4 cup milk
2 teaspoons sugar
1/8 teaspoon salt
1/4 cup margarine or butter, melted

Steps:

  • Heat oven to 425°. Spray jelly roll pan, 15 1/2x10 1/2x1 inch, with cooking spray. Mix sour cream and 1/4 cup cranberry sauce until well blended. Cover and refrigerate until serving time.
  • Spread 4 bread slices with 1 teaspoon mustard each. Spread remaining bread slices with 2 teaspoons cranberry sauce each. Place turkey and cheese on mustard-spread bread slices. Top with remaining bread slices, cranberry sides down. Cut each sandwich into fourths.
  • Place crushed cereal in shallow bowl. Beat eggs in another shallow bowl; beat in milk, sugar and salt until blended. Dip each sandwich into egg mixture, then coat with cereal. Place in pan. Drizzle margarine over top slices of sandwiches.
  • Bake 12 to 15 minutes or until brown and crisp. Cut each sandwich diagonally in half. Serve warm with sour cream-cranberry sauce.
