Cranberry orange mini loaves image

Number Of Ingredients 8

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1/3 cup vegetable oil
2 tablespoons orange peel, grated
8 ounces sour cream
2 egg, lightly beaten

Steps:

  • Heat oven to 350*. Prepare loaf pans with sugar and flour. In a medium bowl mix flour baking powder and salt. In another bowl, whisk together sugar oil and orange zest. Stir in sour cream and eggs until well mixed. Add sugar mixture to flour mixture, stirring gently until just blended. Fold in 1/2 of the cranberries
  • Divide batter among loaf pans. Sprinkle with remaining berries
  • Bake 45-50 minutes or until a toothpick comes out clean. Cool 10 minutes. Remove loaves from pans to cool completely
