TURKEY AND GREEN CHILE BURRITOS



Turkey and Green Chile Burritos image

Cubed turkey breast, spicy poblano peppers, Monterey jack cheese, and red potatoes are the filling for this delicious dinner wrap.

3 poblano peppers (about 8 ounces)
1 medium onion, coarsely chopped
1 clove garlic, minced
1 tablespoon olive oil
1/2 fresh turkey breast (about 1 1/4 pounds), cut into 1-inch cubes
Salt and freshly ground pepper
8 small red potatoes, unpeeled, cut into 1-inch cubes
1 3/4 cups low-sodium chicken stock
Four 12-inch flour tortillas
4 ounces Monterey Jack cheese, grated

Steps:

  • Roast poblanos on a fork directly over a gas flame, turning until all sides are charred, about 3 minutes. Set aside to cool in a plastic bag.
  • Heat oven to 350 degrees. Cook onions and garlic in olive oil in a deep skillet over medium-low heat until translucent, 5 to 7 minutes. Add turkey, raise heat to medium, and cook until meat is golden brown, 4 to 6 minutes. Season; add potatoes and stock. Reduce heat to medium low, cover, and simmer until potatoes and turkey are cooked, 10 to 12 minutes. Uncover; raise heat to medium; cook to reduce liquid, 8 to 10 minutes. Peel and seed poblanos, cut in strips, and add to mixture.
  • Place a quarter of the mixture on a tortilla, midway between the center and the edge near you. Scatter a quarter of the cheese over mixture. Fold right and left sides of tortilla over filling and roll up tortilla away from you. Repeat with other tortillas, place in a baking dish, cover with foil, and bake to heat through, about 15 minutes.

1 pound boneless pork, cut into 3/4-inch cubes
1 tablespoon olive oil
1 can (10 ounces) diced tomatoes and green chilies, undrained
2 garlic cloves, minced
1 cup water
1 cup diced fresh tomato
1/2 cup chopped onion
1/4 cup chopped green pepper
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground cumin
5 teaspoons cornstarch
2 tablespoons cold water
1 can (16 ounces) refried beans
10 flour tortillas (6 inches), warmed

Steps:

  • In a skillet over medium heat, brown pork in oil; drain. Add the next 10 ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour or until pork is tender. , Combine cornstarch and water until smooth; gradually stir into pork mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. , In a small saucepan, cook refried beans until heated through; spread evenly on tortillas. Spoon pork mixture down the center of each tortilla. Fold sides and ends over filling and roll up.

6 large eggs
3 large egg whites
1 jalapeno pepper, seeded and minced
Dash cayenne pepper
4 breakfast turkey sausage links, casings removed
3/4 cup shredded reduced-fat Mexican cheese blend
1 can (4 ounces) chopped green chilies, drained
6 whole wheat tortillas (8 inches), warmed
6 tablespoons salsa

Steps:

  • In a small bowl, whisk the eggs, egg whites, jalapeno and cayenne; set aside., Crumble sausage into a large skillet; cook over medium heat until no longer pink. Drain. Push sausage to the sides of pan. Pour egg mixture into center of pan. Cook and stir until set. Sprinkle with cheese and chilies. Tired of Thanksgiving or Christmas turkey? These burritos are packed with flavor and not the same old turkey. A great change from the old standards. The great thing is, you can change or adjust the seasonings to your own taste. I like it spicy!

10 (10 inch) flour tortillas
3 cups chopped cooked turkey
1 (15 ounce) can black beans, drained
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 (4 ounce) can chopped green chiles, undrained
1 teaspoon dried cilantro
1 teaspoon ground ancho chile powder
½ teaspoon garlic powder
½ teaspoon salt
1 (8 ounce) package shredded pepper Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Wrap tortillas in foil and place in the oven while preheating to warm.
  • Combine turkey, beans, diced tomatoes and green chiles, chopped green chiles, cilantro, ancho chile powder, garlic powder, and salt in a saucepan over medium heat; bring to a simmer and cook until all liquid evaporates, 5 to 8 minutes.
  • Remove burritos from the oven. Place turkey-bean mixture in the warmed tortillas, add pepper Jack cheese, and roll into burritos. Place in a baking pan.
  • Bake in the preheated oven until heated through, about 20 minutes.

2 poblano chile peppers
2 tablespoons butter
1 tablespoon olive oil
1 pound ground turkey (80/20 blend)
2 cups panko breadcrumbs
3/4 cup finely grated Parmigiano-Reggiano
1/4 cup olive oil
1/2 cup diced onion
2 teaspoons minced fresh garlic
3 tablespoons all-purpose flour
1 tablespoon cumin
1 tablespoon onion powder
1 teaspoon paprika
Kosher salt and fresh cracked black pepper
Kosher salt and fresh cracked black pepper
1 cup low-sodium chicken stock
1 1/2 cups heavy cream
1 cup frozen corn, thawed
12 ounces penne rigate
1 tablespoon minced garlic
1 lime, zested
2 cups creme fraiche
4 ripe Roma tomatoes
1/4 bunch fresh flat-leaf parsley

Steps:

  • Begin by charring the poblano chile peppers. Using tongs, place the peppers directly over an open flame on the stove top. Char all over, about 2 minutes per side, and then place in a bowl covered tightly with plastic wrap so they sweat. Leave to sit for 5 minutes, and then use a paper towel to remove the charred outer layer. Discard the stem and seeds, and then dice the peppers.
  • Set a large Dutch oven over high heat and add the butter and olive oil. Add the turkey, onions and garlic and cook, breaking up into small pieces, until lightly browned, 6 to 7 minutes. Add the flour and season with the cumin, onion powder, paprika and some salt and pepper. The flour will form a roux with the fat in the pan. Cook for 2 minutes while stirring, and then add the chicken stock and bring to a simmer. Add the heavy cream and bring back to a boil. Reduce the heat to medium and fold in diced chile peppers and corn. Simmer until the sauce is thick enough to coat the back of a spoon, stirring occasionally, 15 to 20 minutes.
  • Preheat the oven to 350 degrees F. Cook the pasta in a pot of boiling, salted water until al dente, about 12 minutes.
  • Fold the pasta into the turkey sauce and season with salt and pepper, stirring until thoroughly combined. Transfer to a 9-by-13-inch baking dish.
  • In a large mixing bowl, prepare the topping by combining the panko, Parmigiano-Reggiano, olive oil and garlic. Season with salt and pepper and stir to combine everything well. Sprinkle the breadcrumbs evenly on top of the pasta. Place the whole dish on a sheet tray (to catch any spill over) and place in the oven to bake until the breadcrumbs are golden and the sauce is bubbly around the edges, about 35 minutes.
  • For garnishes, stir the lime zest together with creme fraiche. Dice the tomatoes and roughly chop the parsley.

2 1/2 pounds bone-in, skinless chicken thighs, trimmed
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons ground cumin
2 tablespoons canola oil, plus as needed
2 large red bliss potatoes, diced (8 ounces)
4 poblano peppers, stemmed and seeded, cut into 1/4-inch dice
1 large sweet onion, cut into 1/4-inch dice
4 cloves garlic, minced
2 cups low-sodium chicken broth
12 dried guajillo chiles
4 whole cloves garlic, peeled
1 teaspoon Mexican oregano
1/2 teaspoon ground cumin
2 cups low-sodium chicken broth
2 tablespoons olive oil
1 teaspoon kosher salt
1 teaspoon fine sugar
3 to 4 turns freshly ground black pepper
Four 12-inch flour tortillas
1 pound grated Chihuahua cheese
Sour cream, for garnish
Chopped fresh cilantro, for garnish
Finely sliced scallions, for garnish
1 lime

Steps:

  • For the green chile chicken filling: Sprinkle the chicken thighs with 1 teaspoon of the salt, and the pepper and cumin. Heat the 2 tablespoons the canola oil in a large Dutch oven over medium-high heat. Working in batches, place the chicken thighs, skin side down, in the pan and cook until browned and crispy, 5 to 6 minutes. Turn the chicken over and brown on reverse side, 3 to 4 minutes; between batches, add more canola to the pot as needed). Remove the chicken to a plate and set aside.
  • To the pot, add the potatoes, poblanos, onions, garlic, and the remaining 1 teaspoon salt. Saute until the onions are translucent, 5 to 6 minutes. Return the chicken thighs to the pot and deglaze with the chicken broth, stirring to scrape any browned bits. Bring to a boil, then cover and lower to a simmer. Cook until the chicken thighs are tender and the potatoes are starting to break down into the sauce, 25 to 30 minutes. Remove the chicken thighs to a plate and let cool. Remove the bones from the chicken thighs and chop meat into 3/8-inch cubes. Place the cubed chicken back in the pot, and bring back to a simmer. Continue cooking until the sauce has thickened and most of the liquid has evaporated, another 5 to 6 minutes. Remove from the heat and keep warm.
  • For the guajillo sauce: Remove the stems and seeds from the guajillos; tear the chiles in half lengthwise. In a large saute pan over medium-high heat, toast the chiles and garlic until they become fragrant and start to brown, about 2 to 3 minutes. Remove the chiles to a bowl and add 2 cups boiling water, or enough to just cover. Set aside to rehydrate for 15 minutes.
  • In a blender, add the chiles with their soaking water, and the toasted garlic, oregano, cumin and chicken broth. Puree until smooth, 2 to 3 minutes. Pour the guajillo puree into a pan and bring to a simmer; cook gently until slightly thickened, 20 to 25 minutes. Remove from the heat, and stir in the salt, sugar and pepper. Cover and keep warm.
  • Make the burritos: Preheat the oven to 400 degrees F.
  • Place the flour tortillas on a clean flat surface. In the middle of each tortilla, place about one-quarter of the chicken filling, and top with a 1/2 cup of the Chihuahua cheese. Spread the filling out slightly. Fold in the sides of the tortillas and then carefully roll them up into burritos.
  • In a large nonstick saute pan over medium heat, place the burritos, seam side down, and cook to lightly brown and seal, about 1 minute. Turn and cook on the reverse side. Transfer the burritos to an oven-proof platter and cover completely in guajillo sauce. Sprinkle the remaining Chihuahua cheese over the top. Bake until the burritos are golden brown around the edges and the cheese is bubbly, 7 to 8 minutes.
  • Garnish the burritos with a dollop of sour cream and some cilantro and scallions. Add a squeeze of lime juice and serve.

12 white flour tortillas

2 cups grated cheddar cheese (8 ounces)
3 cups shredded lettuce
3 cups fresh tomatoes, chopped

Steps:

  • Simmer pork in broth until tender and thoroughly cooked.
  • Add chiles and canned tomatoes.
  • Simmer 15 to 20 minutes longer.
  • Spread each tortilla with refried beans.
  • Using a slotted spoon, put some pork mixture on each tortilla, reserving liquid to serve as sauce.
  • Roll each tortilla and place in a shallow baking dish.
  • Bake uncovered at 350 degrees for 15 minutes or until hot.
  • Thicken sauce with a little flour and spoon over burritos.
  • Serve topped with grated cheese, shredded lettuce and chopped tomato.
