I have never tried a tuna patty before believe it or not and wanted to tonight. However, once looking through a few recipes I quickly realized that A. they were a bit higher calorie/fat than I could justify since we are on WW, and B. I didn't have some of the ingredients to a lot of the recipes I did find. So I took a chance and created my own for my first one. It turned out GREAT! At least we think so..... For those that may be counting these are 8pts a piece on weight watchers.

3 5/8 ounces tuna (Sundried Tomato & Basil Tuna Sensations)
2/3 cup Italian seasoned breadcrumbs (divided)
1/3 cup fat free sour cream
1/3 cup fat-free cheddar cheese, shredded
1/3 cup green onion, thinly sliced
1/2 teaspoon buttermilk ranch salad dressing mix
1 egg white
2 reduced-calorie multigrain hamburger buns (I like the Sandwich Thins)
2 lettuce leaves
2 tablespoons light mayonnaise
olive oil flavored cooking spray

Steps:

  • Put 1/3 cup breadcrumbs into a shallow dish and set aside.
  • Combine the other 1/3 cup breadcrumbs, tuna, sour cream, cheddar, onions, dressing mix and egg white in a bowl and mix well with your hands.
  • Carefully divide the mixture in half and form into two patties coating them in the bread crumbs you earlier set aside.
  • Heat a skillet on medium heat and generously spray with the olive oil cooking spray. Cook patties on each side for 3-4 minutes until well browned.
  • Spread 1 T. of light mayo on the top section of each bun, and layer with a tuna patty then lettuce.
  • Enjoy!

15 ounces pumpkin
1 (3 1/2 ounce) package vanilla instant pudding mix, fat free, sugar-free
1/2 cup skim milk
8 ounces Cool Whip Free, thawed
2 teaspoons pumpkin spice

Steps:

  • Using mixer, blend pumpkin and spice with the milk and mix.
  • Fold in Cool Whip. Chill.
  • Serve with ginger snaps or vanilla wafers.

cooking spray (5 one-second sprays per serving)
2 1/2 lbs boneless bottom round roast, well trimmed
1/2 teaspoon black pepper
1/4 teaspoon table salt
2 large onions, sliced
1 3/4 cups water
1 (8 ounce) packet onion soup mix
1 1/2 tablespoons balsamic vinegar or 1 1/2 tablespoons red wine vinegar
1 teaspoon dried thyme
8 large red potatoes, scrubbed and quartered (about 1 3/4 lbs)
1 lb baby carrots
1 tablespoon fresh parsley, chopped (for garnish)

Steps:

  • Preheat oven to 350ºF.
  • Coat a Dutch oven (a large pot with a tight-fitting lid) with cooking spray.
  • Heat over medium-high heat.
  • Sprinkle roast with pepper and salt.
  • Place in pot and scatter onions around roast.
  • Cook, turning roast and stirring onions occasionally, until roast and onions are browned, about 8 minutes.
  • Pour water into pot; stir in soup mix, vinegar and thyme and bring to a boil.
  • Cover and cook 1 1/2 hours.
  • Place potatoes and carrots around roast; cover and bake until roast and vegetables are tender, about 2 hours more.
  • Remove one potato from pot and puree in a blender.
  • Stir into gravy to thicken.
  • Transfer roast to a cutting board and slice against grain into 16 slices.
  • Serve with vegetables and gravy.
  • Yields about 2 slices of meat, 1 cup of vegetables and 1/4 cup of gravy per serving.

4 eggs, beaten
1/4 cup cherry tomatoes, chopped
1/4 cup crouton, fat free, crumbled
2 tablespoons cheddar cheese, reduced fat, shredded
1 sprig parsley

  • Preheat oven to 350-degrees F.
  • Place 1 slice bacon in each of four custard cups (8 or 10 oz size). Pour eggs over bacon and top with tomatoes, croutons and cheddar.

1 large egg, lightly beaten
1/2 cup dry bread crumbs
1/2 cup finely chopped celery
1/3 cup mayonnaise
1/4 cup finely chopped onion
2 tablespoons chili sauce
1 pouch (6.4 ounces) light tuna in water
2 tablespoons butter
4 hamburger buns, split and toasted
Optional: Lettuce leaves and sliced tomato

Steps:

  • Mix the first 6 ingredients; fold in tuna. Shape into 4 patties. , In a large cast-iron or other heavy skillet, heat butter over medium heat. Cook patties until lightly browned, 4-5 minutes on each side. Serve on buns. If desired, top with lettuce and tomato.
