A tropical twist on the Waldorf Salad! Turkey breast and pineapple are tossed with crisp celery, red bell pepper, and green onion, finished with a creamy curried mango dressing.

⅓ cup low-fat sour cream
2 tablespoons mango chutney
1 tablespoon fresh lemon juice
1 tablespoon honey
¼ teaspoon curry powder
4 cups chopped cooked turkey
1 cup diced red bell pepper
1 cup diced celery
1 cup pineapple chunks
1 cup chopped orange segments
½ cup chopped green onion

Steps:

  • For the dressing, blend sour cream, chutney, lemon juice, honey, and curry powder in a small bowl. Mix well, and refrigerate until ready to use.
  • In a large bowl, combine turkey, red pepper, celery, pineapple, orange segments, and green onion. Add dressing, and toss well to coat. Refrigerate for 1 hour before serving.

I originally had this salad while I attended a Pampered Chef party. This was a very pretty salad, and it had lots of flavor; especially the home-made salad dressing. My family loves this salad!! Prep time in making this salad is questionable.

Number Of Ingredients 13

6 tablespoons apricot preserves
4 tablespoons cider vinegar
4 teaspoons vegetable oil
4 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces smoked turkey, deli-meat torn into bite size pieces
1/2 cup diced red bell pepper
1 mango, cut into 1/2-inch to 3/4-inch cubes (about 1 cup)
3 hard boiled egg whites, coarsley chopped (discard the yolks)
1/4 cup chopped red onion
6 ounces fresh spinach
sliced almonds, add desired amount

Steps:

  • For dressing - In a jar with a tight fitting lid, shake all the dressing ingredients together until blended. Cover, and chill the dressing in the refrigerate until ready to use.
  • For salad - In a large bowl, add the salad ingredients, then add to individual salad bowls. Shake dressing vigorusly; pour desired amount of dressing over the salad bowls; tossing gently to coat.
  • Sprinkle sliced almonds over the salad, if desired, and serve immediately.
  • Serves: 4 (adult size servings).
  • Note: Peaches and nectarines can be substituted for the mango.

This is the best Turkey Salad I have ever tasted! It is totally addictive! It can be eaten on a bed of greens or between slices of your favorite bread. It is best eaten after chilled in the refrigerator for a couple hours, but it can be eaten immediately after being prepared as well. Inspired by a newly adopted Zaar recipe.

2 lbs turkey tenderloins or 2 lbs turkey breast, Cooked and Cubed
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup mango, Cut Into Small Cubes
1/4 cup red onion, Cubed
1/4 cup red pepper, Cubed
1/4 cup pineapple, Sliced
1/4 cup banana, Cubed
1/2 lime, Juice
1 tablespoon minced garlic
1 tablespoon fresh cilantro
1 tablespoon brown sugar
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon salt
1/8 teaspoon cayenne pepper (or adjust for more heat)
1 tablespoon orange juice
2 tablespoons chopped macadamia nuts (optional)

Steps:

  • Mix all ingredients together in a bowl.
  • Place scoop on salad greens or use as filling between your favorite bread.

5 cups torn fresh spinach
3 cups torn lettuce
2 cups cooked cubed turkey
2 slices red onion, separated into rings
1/2 cup chopped green pepper
1/2 cup mandarin oranges
1/2 cup sliced celery
1/2 cup pineapple chunks
1/3 cup canola oil
1/4 cup raspberry syrup
2 tablespoons red wine vinegar
1-1/2 teaspoons honey
1/2 teaspoon celery seed
1/2 cup sliced almonds, toasted
1/4 cup sweetened shredded coconut, toasted

Steps:

  • Line a large salad bowl with spinach and lettuce. Combine the next six ingredients; spoon into bowl. , In a jar with tight-fitting lid, combine oil, raspberry syrup, vinegar, honey and celery seed; shake well. , Pour over the salad. Top with almonds and coconut. Serve immediately.
