This is a tropical bundt cake, with pineapple and banana. This is a great cake for summertime, or when you need a lift during a cold winter!

Number Of Ingredients 13

2 cups sugar
1 cup vegetable oil
3 large eggs
1 (8 ounce) can crushed pineapple, undrained
1 1/2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 cups bananas, very ripe and mashed
1 3/4 cups powdered sugar, sifted
2 -3 tablespoons orange juice

Steps:

  • Beat 2 cups of sugar and oil at the medium speed of an electric mixer for 2 minutes. Add the eggs, one at a time, beating just until the yellow disappears. Add the crushed pineapple and vanilla, beating just until blended.
  • Combine the flour, baking powder, baking soda, salt, and cinnamon; Stir well. Add to the oil mixture alternately with the mashed banana, beginning and ending with the flour mixture. Mix at low speed just until blended after each addition.
  • Pour the batter into a greased and floured 12-cup Bundt pan. Bake at 350 degrees for 1 hour or until a wooden pick inserted in the center comes out clean. Cool in the pan on a wire rack for 10 minutes; remove from the pan, and let cool completely on a wire rack.
  • Combine the powdered sugar and orange juice, adjusting the amount of orange juice to get the glaze you want. Stir well. Drizzle the glaze over the cake.

Well, you'd better kick off your shoes, grab a straw hat, your sunglasses and a Mai Tai with the frilly toothpick because you'll be off to the islands, mon! The name tells all! Wonderful cake for outdoors get-togethers, pool parties, pot lucks, and everything in-between. Rich with pineapple and a kiss of rum, this is a great cake. Decorate it with coconut, cherries, (frilly toothpicks) or anything else you can think of. I'd suggest a cream cheese frosting for this, as well as coconut.I have dyed the coconut to pastel colors for different occasions, holidays, etc. and it looks so pretty! If using frosting, make sure that the cake has been cooled to room temperature.

1 cup margarine (two sticks)
2 cups sugar
4 eggs
2 1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon pineapple flavoring
1 teaspoon rum flavoring, can use rum
1 cup buttermilk
1 cup crushed pineapple, drained

Steps:

  • Preheat oven to 350°.
  • Grease and flour 3 9-inch cake pans.
  • In a large bowl, cream sugar and margarine until fluffy. Add eggs, one at a time, beating after each adition.
  • In another bowl, mix flour, soda and salt together. Add flavorings to buttermilk. Add flour mixture to butter mixture, alternately with buttermilk, ending with flour. Stir in pineapple and coconut.
  • Pour into prepared cake pans and bake for 25 minutes or until toothpick inserted into center comes out clean.

Found this in the latest Kraft Food & Family magazine. Couldn't resist it b/c of the pineapple/coconut combo! Pina Colada, here I come! I will be adding some rum flavoring to both the cake and the topping along with coconut flavoring; and will also make this in a disposable foil pan for convenience.

1 (20 ounce) can crushed pineapple in juice, undrained
1 (17 -18 ounce) package yellow cake mix
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/2 cups cold milk
1 (3 1/2 ounce) package lemon flavor instant pudding and pie filling
2 cups thawed whipped topping
2 teaspoons rum extract, divided (optional)
1 teaspoon coconut extract (optional)
1/2 cup flaked coconut, toasted (optional)
1/2 cup finely chopped pecans (optional)

Steps:

  • PREHEAT oven to 350ºF.
  • Grease a 15x10x1-inch baking pan.
  • Drain pineapple, reserving 1 cup of the juice; set pineapple aside.
  • Prepare cake batter as directed on package, substituting 1 cup reserved juice for 1 cup of the water, and 1 tsp rum extract (if desired).
  • Pour batter into baking pan.
  • BAKE 15 to 18 minute or until wooden toothpick inserted in center comes out clean.
  • Cool completely in pan on wire rack.
  • ADD milk to dry pudding mix and beat with wire whisk 2 minute or until well blended.
  • Stir in pineapple and remaining 1 tsp rum extract (if desired) and spread over cake.
  • Cover this with whipped topping into which you have stirred coconut extract(if desired).
  • Sprinkle with toasted coconut and pecans (if desired).
  • Store in refrigerator.

1 box duncan hines orange cake mix
1 box small lime jello
1 can(s) pineapple, crushed
1 can(s) small mandarin oranges
1 large cool whip

Steps:

  • 1. 1) Follow directions on cake box and bake. 2) While cake is baking, pour jello in mixing bowl and add 2/3 c. of boiling water, 1/2 c. cold water. Mix good till jello is dissolved and set aside till cake is done baking. 3) Remove cake from oven. Poke holes in cake. Pour Jello over cake. 4) Pour just a little juice from crushed pineapple over cake. Just a little. Then drain the rest of the juice. Reserve a little pineapple for later. Spread the rest of the pineapple on top of cake. 5) Frost cake with cool whip. 6) Drain oranges. Place around on top of cool whip. 7) Using reserved pineapple sprinkle over top of cake. 8) Garnish with coconut. 9) Refrigerate till ready to serve. 1 pkg. (2-layer size) yellow cake mix
1 pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding
1-1/2 cups cold milk
2 cups thawed COOL WHIP Whipped Topping
1/2 cup BAKER'S ANGEL FLAKE Coconut, toasted
1/2 cup chopped pecans

Steps:

  • Heat oven to 350ºF.
  • Drain pineapple, reserving 1 cup juice. Prepare cake batter as directed on package, substituting reserved juice for 1 cup of the water. Pour into 15x10x1-inch pan sprayed with cooking spray.
  • Bake 15 to 18 min. or until toothpick inserted in center comes out clean. Cool completely.
  • Beat pudding mix and milk with whisk 2 min. Stir in pineapple; spread over cake. Cover with COOL WHIP; top with coconut and nuts. Keep refrigerated.

This cake will knock your socks off! Even those who do not like dessert cannot pass this up. It has been a favorite in my family for years.

1 box yellow or white cake mix
1 box large instant vanilla pudding (sugar free or regular)
1 can(s) crushed pineapple, drain and reserve juice
1 pkg frozen whipped topping or fresh whipped cream
3 or 4 bananas
1 c coconut, shredded
2 c milk of choice to mix pudding
2 c sliced strawberries

Steps:

  • 1. Drain pineapple reserving juice. Prepare cake mix as directed but substitute reserved pineapple juice for some of the water. Bake in a sheet pan as directed. Cool completely.
  • 2. Mix pudding according to directions. Use any milk desired. Fold whipped topping or whipped cream into pudding.
  • 3. Slice bananas and arrange on top of cake. Cover the cake with the pudding mixture, completely covering the bananas.
  • 4. Arrange cut strawberries, pineapple, and coconut over the pudding layer. Chill and enjoy! May add other berries or tropical fruit if desired. Banana pudding may also be substituted.
