What's "easier than pie"? Fruit pizza made with tortillas and fresh fruit--just heat and eat!

1 Old El Paso™ flour tortillas for burritos (8 inch; from 11-oz package)
1/2 teaspoon sugar
1/8 teaspoon ground cinnamon
2 tablespoons soft cream cheese
1/2 cup chopped fresh fruit, (such as strawberries, blueberries, grapes, peaches), well drained

Steps:

  • Heat oven to 350°F. Place tortilla on ungreased cookie sheet. Bake about 10 minutes or until crisp. Meanwhile, mix sugar and cinnamon.
  • Place hot tortilla on cutting board; spread cream cheese on tortilla. Sprinkle with sugar-cinnamon mixture. Arrange fruit on top. Cut into 4 wedges. Serve warm.

4 small flour tortillas
1 c fat free ricotta cheese
1/2 c cottage cheese, lowfat
2.5 Tbsp brown sugar
1/2 tsp cinnamon
1 c fresh fruit, mixed

Steps:

  • 1. Preheat oven to 450.
  • 2. Line baking sheet with foil and lightly spray with nonfat cooking spray.
  • 3. Place tortillas on baking sheet and bake for 3 to 5 minutes, just until crisp.
  • 4. In a food processor or blender, combine ricotta cheese, cottage cheese, 1 tablespoon brown sugar and cinnamon; blend until smooth and creamy.
  • 5. Divide cheese mixture evenly among tortillas; top each tortillas with 1/4 cup mixed berries.
  • 6. Sprinkle remaining brown sugar on top of berries and bake 5 minutes, until heated through.
  • 7. Serve immediately.
