TORTILLA FRUIT PIZZA
What's "easier than pie"? Fruit pizza made with tortillas and fresh fruit--just heat and eat!

Steps:
- Heat oven to 350°F. Place tortilla on ungreased cookie sheet. Bake about 10 minutes or until crisp. Meanwhile, mix sugar and cinnamon.
- Place hot tortilla on cutting board; spread cream cheese on tortilla. Sprinkle with sugar-cinnamon mixture. Arrange fruit on top. Cut into 4 wedges. Serve warm.
FRUIT TORTILLA PIZZA
Steps:
- 1. Preheat oven to 450.
- 2. Line baking sheet with foil and lightly spray with nonfat cooking spray.
- 3. Place tortillas on baking sheet and bake for 3 to 5 minutes, just until crisp.
- 4. In a food processor or blender, combine ricotta cheese, cottage cheese, 1 tablespoon brown sugar and cinnamon; blend until smooth and creamy.
- 5. Divide cheese mixture evenly among tortillas; top each tortillas with 1/4 cup mixed berries.
- 6. Sprinkle remaining brown sugar on top of berries and bake 5 minutes, until heated through.
- 7. Serve immediately.
