SHRIMP AND CRAB CRUSTED SNAPPER image

4 yellowtail snapper fillets, about 7 oz each, seasoned with salt and pepper.
1/2 # lump crab meat cleaned.
1/2# coarsly chopped raw shrimp
4 oz clarified butter
1/2 C bread or cracker crumbs
1/4 C chopped scallions or chives
2 T chopped chervil or parsley
2 T lemon juice

Steps:

  • Mix cleaned crabmeat, shrimp, breadcrumbs, butter,scallions and seasoning in a bowl until they form a thick mixture. Pat into flat sheets on the board, anf lift with a spatula onto the fish fillets. Bake in 350 degree oven 10minutes or until golden brown on top. Serve with lemon and proper accompaniments
