TOMATO SURPRISE
When I read this recipe I knew I would like it. As it turns out, we ALL loved it (even my mother-in-law who is hard to impress!) The sweetness of the tomato and the creaminess of the cheeses is a perfect combination. You can bet I will be making these again!!

- 1. PREHEAT OVEN TO 350 SLICE TOMATOES AND PLACE ON AN SPRAYED BAKING PAN(ONE WITH SIDES)SALT AND PEPPER TOMATOES TO TASTE. IN A BOWL MIX CHEESES AND MAYONAISE. PLACE ONE TEASPOON OF MIXTURE ON A SLICE OF TOMATOE. BAKE TILL BUBBLEY. AROUND 10 TO 15 MINUTES
- 2. I USE THIS IN PLACE OF AN SALAD WHEN GRILLING STEAKS OR USE AS AN SIDE WITH A MEAL.
CAMPBELL'S SOUP & LEMON JELL-O TOMATO ASPIC
Mom used to make this for Thanksgiving or Christmas, depending on which one we were hosting that year (we alternated with my uncle's family). I loved it as a kid, although it's one of those frequently scorned foods. No wonder, as it is incredibly sweet.

Steps:
- Heat undiluted soup in pan on the stove.
- Add jello and stir to dissolve.
- When dissolved, remove from heat and add vinegar and vegetables.
- Pour into a square Pyrex dish and chill until set.
- Fill a large bowl with hot water and dip the Pxrex in it to melt the gelatin next to the mold.
- Place plate on top and invert. You might need to carefully slide a butter knife along the side of the mold to release the suction and make the aspic drop out.
- Serve in squares on lettuce leaves.

Great great aunt Jessie copied this one from a paper dated August 18, 1949. It sounds interesting and I may try it on a really hot day when cooking over a stove is not on my top ten "fun things to do" list.

Steps:
- Scald, peel and chill tomatoes.
- Carefully scoop out the inside out of the tomatoes.
- Remove the seeds from the pulp and chill all ingredients.
- When ready to serve mix chicken, cucumber, tomato pulp and nuts with the mayo.
- Add salt if needed.
- Fill tomatoes and arrange on lettuce leaves.
- Garnish with parsley and cauliflower buds.

ORANGE JELLO SURPRISE
A wonderful treat for dessert or an appetizer for dinner. I first had this at my mother-in-laws and loved it so much, I now make it for holidays! Very light and tasty!

Steps:
- Boil 2 cups of water and add to Jello till dissolved.
- In blender add Jello mixture to cream cheese, (let cream cheese soften 10-15 minutes). Blend Jello mixture and cream cheese together till combined.
- In separate bowl whip 2 packages of Dream Whip according to instructions on box.
- Fold Dream Whip mixture into Jello/cream cheese mixture.
- Add crushed pineapple and mix well.
- Pour into 9x13-inch baking dish and refrigerate overnight.
