GARLIC AND SUN-DRIED TOMATO CORN MUFFIN



Garlic and Sun-Dried Tomato Corn Muffin image

2 (8 1/2-ounce) packages corn muffin mix (recommended: Jiffy)
2 cups frozen whole kernel corn, thawed
3 garlic cloves, minced
2/3 cup diced sun-dried tomatoes (from an 8-ounce jar)
2/3 cup buttermilk
2/3 cup sour cream
2 large eggs

Steps:

  • Preheat the oven to 375 degrees F. Grease 2 muffin tins.
  • In a large bowl combine the muffin mix, corn, garlic, and sun-dried tomatoes. Stir to combine. In a small bowl whisk together the buttermilk, sour cream, and eggs until well blended. Add the buttermilk mixture to the muffin mix. Stir to combine. Spoon the mix into the muffin tins, filling up the cups about halfway. Bake until golden brown on top, about 15 minutes.

2 cups fresh parsley leaves, fresh, stems removed
1/2 cup sweet onion, chopped
8 garlic cloves, minced
1/3 cup white vinegar
1 tablespoon dried oregano
1/2 teaspoon hot pepper flakes
1/2 teaspoon salt
1/4 teaspoon pepper
2/3 cup olive oil
3 tomatoes, seeded and diced
2 cups sweet corn, cooked
1 teaspoon salt
1 teaspoon pepper
1 teaspoon oregano, dried
1 teaspoon cumin, ground
1 teaspoon garlic powder
1 teaspoon onion powder
6 boneless skinless chicken breasts

Steps:

  • Sauce: In food processor, combine parsley, onion, garlic, vinegar, oregano, hot pepper flakes, salt and pepper; process until finely chopped. With motor running, slowly add oil and process until well blended but with coarse texture. Pour into bowl. Stir in half the tomatoes. Stir corn into bowl.
  • Chicken: Combine salt, pepper, oregano, cumin and garlic and onion powders; sprinkle about 1/2 teaspoons on each side of each chicken breast.
  • Lightly oil barbecue grill and heat to medium. Place chicken on grill; close lid and barbecue for 3 to 5 minutes per side or until no longer pink inside. Serve with parsley sauce spooned over each one. Garnish with remaining tomatoes.

1 bulb garlic
1 cup fresh corn kernels or frozen corn
1/2 cup grape tomatoes, halved
2 tablespoons olive oil
2 tablespoons finely chopped shallot
Dash salt
1 can (12 oz) evaporated milk
1 can (7 oz) Old El Paso™ diced green chiles
4 oz (half of 8-oz package) cream cheese
1 cup shredded sharp Cheddar cheese (4 oz)
1 cup shredded pepper Jack cheese (4 oz)

Steps:

  • Heat oven to 425°F. Line cookie sheet with cooking parchment paper.
  • Break apart garlic bulb into cloves but leave skins on. In large bowl, toss garlic cloves, corn and tomatoes with 1 tablespoon of olive oil; spread on cookie sheet.
  • Roast 25 to 30 minutes or until vegetables are caramelized around edges a little bit. Remove from oven; set aside to cool.
  • While vegetables are roasting, in 3-quart saucepan, heat remaining tablespoon oil over medium heat. Add shallot and salt; cook until softened and translucent. Stir in evaporated milk and green chiles. Heat to boiling. Add cream cheese, stirring well to combine. In 2 batches, add Cheddar and pepper Jack cheese, stirring well after each addition until combined. Remove from heat.
  • Squeeze cooled cooked garlic from skins into cheese mixture. Fold in roasted corn and tomatoes. Serve queso warm with chips.

10 ounces fettuccine pasta (dry)
2 tablespoons garlic, minced
2 large tomatoes, seeded and chopped
2 cups corn kernels (fresh or frozen)
1/2 cup white wine
1 tablespoon olive oil
4 tablespoons basil, chopped
salt
pepper

Steps:

  • Combine garlic, tomatoes, corn, wine, oil and basil into a large pot.
  • Cover and bring to a boil.
  • Reduce heat.
  • Keep warm.
  • Bring 4 quarts of water to a boil.
  • Add pasta and stir to separate noodles.
  • Cook about 8 minutes or until al dente, drain.

I love corn muffins, so I'm always looking for new twists on the old standby, which can be kind of bland. These have the surprise of little flecks of sun-dried tomatoes and tender corn kernels, and the garlic makes them so rich they don't need butter or another topping.

2 (8 1/2-ounce) packages corn muffin mix, such as Jiffy
2/3 cup diced sun-dried tomatoes (from an 8-ounce jar)
2 cups frozen corn kernels, thawed
3 garlic cloves, minced
2/3 cup buttermilk
2/3 cup sour cream
2 large eggs, beaten

Steps:

  • Preheat the oven to 375°F. Insert paper liners in 16 muffin cups or grease the tins.
  • In a large bowl, combine the corn, muffin mix, garlic, and sun-dried tomatoes. Stir to combine. Mix in the buttermilk, sour cream, and eggs and stir just until combined.
  • Spoon the mixture into the muffin tins, filling up the cups about halfway. Bake until golden brown on top and a toothpick inserted into the middle of a muffin comes out clean, about 15 minutes.

  • Trim the tops off 2 heads of garlic; sprinkle with olive oil and salt. Wrap in foil and roast at 350 degrees F, about 40 minutes. Squeeze the garlic out of its skin and mix with 1 grated tomato and 2 tablespoons grated Parmesan; season with salt, pepper and fresh thyme. Grill 4 ears of corn, turning, about 12 minutes. Cover with the tomato mixture.
