FRUITED TOFU CURRY SALAD



Fruited Tofu Curry Salad image

Vegetarian salad, with a lot of flavor. Serve as a meal or as a side dish on a bed of lettuce or in pita pockets. Tofu may also be pan fried in a small amount of oil with a tablespoon of curry powder instead of boiling method.

½ cup white rice
2 cups extra-firm tofu, drained and cubed
1 cup yogurt
2 tablespoons lime juice
1 tablespoon curry powder
1 cup halved grapes
1 tablespoon dried cranberries
½ cup diced celery
3 tablespoons diced green onions
¼ cup walnuts
salt and pepper to taste

Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes; set aside.
  • Bring a large pot of water to a boil. Cook cubed tofu for 3 minutes; drain, and set aside to cool.
  • In a bowl, blend yogurt with lime juice and curry powder; set aside. In a large mixing bowl, toss together halved grapes, cranberries, celery, green onions, walnuts, rice, and tofu. Drizzle with curry dressing, and toss until well coated. Season to taste with salt and pepper, as desired.

2 packages tofu, extra firm, diced
1 red bell pepper, chopped
1 bunch green onions (substitute one small onion if necessary)
1 carrot, peeled and shredded
chopped cilantro in whatever amount you like and have available
1/2 cup raisins
2 about 2 oz slivered almonds
1 small "toe" of fresh ginger, minced
1 garlic clove, minced or pressed
1/2 cup vegan mayonnaise
juice of 1/2 large lemon
1 tsp apple cider vinegar
4 tsp curry powder
1 tsp sugar
a dash of Cayenne
a dash of white pepper
several cranks of fresh ground black pepper

Steps:

  • 1.In a large saucepan over med to med-high heat, sauté tofu (in a bit of olive oil, if you'd like) until browned and firmed. Pour off excess liquid as needed (or do that squeeze-the-tofu-brick-between-two-plates-with-something-heavy-on-top trick before cooking). Set aside to cool. 2.In a separate bowl, blend the dressing ingredients. Taste, and adjust seasonings to your liking. 3.Add the tofu and the rest of the ingredients. 4.Enjoy!
