HOMETOWN TOFFEE



Hometown Toffee image

Ree Drummond's Hometown Toffee recipe is super easy and endlessly customizable. A base layer of caramel candy is topped with a layer of chocolate and finished with trail mix favorites. The Pioneer Woman's toffee is the perfect giftable treat.

Number Of Ingredients 14

1/4 cup unsalted almonds
2 tablespoons sunflower seeds
2 tablespoons pumpkin seeds
6 ounces semisweet chocolate chips
Nonstick cooking spray, for the baking sheet
3/4 cup granulated sugar
1 stick (1/2 cup) unsalted butter
1/2 cup packed light brown sugar
1 teaspoon kosher salt
1 teaspoon vanilla extract
1/4 teaspoon baking soda
1/4 cup golden raisins
1/4 cup mini candy-coated chocolates, such as M and M's
1 teaspoon sea salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Tip the almonds, sunflower seeds and pumpkin seeds onto a baking sheet. Toast until they begin to color, 10 to 12 minutes. Allow to cool.
  • Melt the chocolate in a glass bowl over a pan of simmering water (or in the microwave for 1 to 2 minutes) and stir until smooth and glossy. Set aside.
  • Spray a 9-by-12-inch baking sheet with nonstick cooking spray.
  • Add the granulated sugar, butter, brown sugar, kosher salt and 2 tablespoons of water to a heavy-bottomed saucepan fitted with a candy thermometer. Cook over medium-high heat, swirling the pan occasionally, until the thermometer registers 300 degrees F, 5 to 8 minutes. Remove from the heat and stir in the vanilla. Sprinkle in the baking soda and mix. Pour onto the prepared baking sheet and tip the baking sheet to spread the toffee evenly. Let it cool and set, about 6 minutes.
  • Drizzle the melted chocolate over the toffee. Scatter the toasted nuts and seeds, raisins and mini chocolate candy over the melted chocolate and sprinkle with the sea salt. Let set for 2 hours, then break the toffee into shards.

Number Of Ingredients 10

2 cups toasted whole-wheat cereal squares (such as Chex)
3/4 cup pretzel sticks
1 cup whole raw almonds
1 cup roasted unsalted peanuts
1/3 cup toffee bits
3/4 stick unsalted butter
5 sprigs thyme
1 tablespoon packed dark-brown sugar
1 tablespoon dry mustard
1/2 teaspoon coarse salt

Steps:

  • Preheat oven to 325 degrees. In a large bowl, combine cereal, pretzels, almonds, peanuts, and toffee.
  • Melt butter in a small saucepan over medium-high heat, stirring until golden brown, about 5 minutes. Remove from heat and stir in thyme. (Butter will splatter.) Stir in brown sugar, mustard, and salt. Add to cereal mixture and toss until evenly coated. Spread in an even layer on a rimmed baking sheet.
  • Bake, stirring halfway through, until nuts are toasted and toffee begins to melt, about 15 minutes. Let cool and discard thyme.

This is the most requested item I bring to the office. It has become the Christmas gift of choice from my kitchen.

½ cup butter
¾ cup white corn syrup
1 cup packed brown sugar
1 cup chopped pecans
1 cup almonds
1 (12 ounce) package crispy corn and rice cereal

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Spray a large roasting pan with non-stick cooking spray.
  • In a medium-size microwave safe bowl, mix butter, white corn syrup and brown sugar. Place the mixture in the microwave and cook 2 minutes, or until butter melts.
  • Place the cereal, pecans and almonds into the prepared roasting pan. Pour the melted butter mixture over the cereal and nuts and mix gently until the cereal and nuts are coated.
  • Bake for 1 hour, stirring every 15 minutes.
  • As the snack mix is cooling, be sure to continue to stir so that the mix will not harden in one big lump.

2 cups each Rice Chex, Corn Chex and Wheat Chex
2 cups miniature pretzels
2 cups pecan halves
2 cups salted cashews
3/4 cup butter, cubed
3/4 cup packed brown sugar

Steps:

  • In a large bowl, combine the cereal, pretzels and nuts. In a small saucepan, combine butter and brown sugar. Bring to a boil; cook and stir until thickened, about 2 minutes. Pour over cereal mixture; toss to coat. , Spread into 2 greased 15x10x1-in. baking pans. Bake at 350° for 8 minutes. Stir; bake 6 minutes longer. Transfer to waxed paper-lined baking sheets. Cool completely. Store in airtight containers.

2 cups butter
2 cups white sugar
¼ teaspoon salt
2 cups semisweet chocolate chips
1 cup finely chopped almonds

Steps:

  • In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.
  • While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper.
  • As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.
  • Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.
