1/2 lb mushroom (any type, I use medium sized button mushrooms)
2 tablespoons butter
salt and pepper
1 ounce brandy

Steps:

  • Slice the mushrooms into fours.
  • Melt the butter in a skillet.
  • Add to the pan and sauté on high heat until soft for about 5 minutes.
  • Remove from the heat and carefully add the brandy to avoid flame ups.
  • Return to the heat and cook until pan juices have slightly thickened.
  • Serve warm.

I am sharing my kitchen secret with you. I first read the small paragraph in Barbara Kafka's Microwave Gourmet about the possibilities of achieving "sauteed" mushrooms quickly in the microwave without a drop of butter. Then I began preparing my Portabello mushrooms this way to top my signature pizza (have you ever noticed that if you pile a lot of toppings on a pizza, it's hard to cook everything through?). I admit I use dry sherry almost as much as I use olive oil! One giant Portabello mushroom (5"-6" diameter) yielded 2 cups raw mushroom slice halves, which yielded 1 cup "sauteed" mushrooms for my pizza. These would also make a wonderful accompaniment to steaks or burgers, or omelets, or on other veggies...

2 cups mushrooms, cleaned, trimmed, sliced 1/4-inch thick
1/2 cup beef broth or 1/2 cup vegetable broth

Steps:

  • If using giant Portabello mushrooms, please halve each mushroom slice.
  • Place sliced mushrooms in microwave-safe pasta dish.
  • Pour dry sherry or red wine over mushrooms. Cover loosely with wax paper.
  • Microwave 2 1/2 to 3 minutes, until "sauteed.".
  • Drain before using.

I invented this recipe looking for a star-side dish to go with a fairly plan dinner of roasted chicken and salad. It was such a hit that I've made it a staple in my dinner-party side dish rotation! It's most-requested on chilly winter nights when everyone could use a little "happy" in the dinner hour.

2 box fresh whole white or "baby bella" (cremini) mushrooms
1 Tbsp butter
2 clove garlic
1/4 c whiskey
salt and pepper to taste

Steps:

  • 1. Brush dirt from the mushrooms (do not wash) and pop off the stems.
  • 2. Slice into approximately 1/4 inch slices.
  • 3. Heat a large skillet over medium heat and add olive oil.
  • 4. Add mushrooms and gently stir to coat. Add a good pinch of Kosher or Sea salt and pepper.
  • 5. Once mushrooms begin to wilt a little and the juices are coming out, add the garlic. Stir frequently to keep the garlic moving so it doesn't brown.
  • 6. Once the mushroom juices have evaporated, add the whiskey and slightly lower heat. Allow to simmer, stirring frequently, until the mushrooms are completely soft and the liquid is reduced.
  • 7. Serve as a side dish or on top of poultry or steak or fat burgers. Also makes a great topping for crusty bread slices!

I normally make these to go with steaks, but lately with the high price of beef, ground beef is all that's in the budget. I made these the last few times to go on burgers and topped it off with a slice of Swiss cheese. SUPER GOOD.

1/2 stick butter
2 chopped scallions or 1 small chopped shallot
2-3 clove garlic chopped
8 oz carton of mushrooms sliced
salt and pepper
a good splash of red wine you intend to drink with dinner (or you could use beef broth)

Steps:

  • 1. Melt butter in the pan, add the veggies, saute for about 10 minutes, then add the wine and s&p.
