TILAPIA IN MUSTARD CREAM SAUCE
I can't say that I have made this dish yet. I have some tilapia in the freezer, so this will be made soon. I will add any changes then. Chicken can also be substituted; and tomatoes and spinach can be substituted for the mushrooms.

Steps:
- Sprinkle fish with thyme, pepper, and salt.
- Heat a large nonstick skillet over medium high heat and coat pan with cooking spray.
- Add fish and cook 1 min on each side.
- Add broth, and bring to a boil.
- Cover and reduce heat, simmer 5 minute.
- Add mushrooms and cook uncovered 1 min or until mushrooms are tender.
- Remove fish from pan and keep warm.
- Add cream and mustard to pan; stir with a whisk until well combined.
- Cook 1 min or until thoroughly heated.
- Serve sauce over fish.
BROILED TILAPIA WITH MUSTARD-CHIVE SAUCE

- For the fish: Preheat a broiler. Spray a small baking sheet or flameproof baking dish with vegetable oil cooking spray. Set aside.
- Drizzle the tilapia fillets on both sides with olive oil and season with salt and pepper. Arrange the fillets in a single layer on the prepared baking sheet and broil until cooked through and the flesh flakes easily with a fork, about 6 to 8 minutes. Set aside to cool slightly.
- For the sauce: In a small bowl, mix together the yogurt, agave nectar, and mustard until smooth. Whisk in the lemon juice and chives. Season with salt and pepper, to taste.
- Transfer the tilapia to a serving platter and drizzle with the sauce.

MUSTARD-ROASTED FISH
Steps:
- Preheat the oven to 425 degrees F.
- Line a sheet pan with parchment paper. (You can also use an ovenproof baking dish.) Place the fish fillets skin side down on the sheet pan. Sprinkle generously with salt and pepper.
- Combine the creme fraiche, 2 mustards, shallots, capers, 1 teaspoon salt, and 1/2 teaspoon pepper in a small bowl. Spoon the sauce evenly over the fish fillets, making sure the fish is completely covered. Bake for 10 to 15 minutes, depending on the thickness of the fish, until it's barely done. (The fish will flake easily at the thickest part when it's done.) Be sure not to overcook it! Serve hot or at room temperature with the sauce from the pan spooned over the top.
TILAPIA IN MUSTARD CREAM SAUCE
This was a delightful surprise! The wine reduction sauce is full of flavor and a great complement to the mild tilapia. The mustard and Italian dressing give it a zesty and tangy flavor, but the cream balances it out. The sauce is also very rich so a little bit goes a long way. Capers add a touch of savoriness to the dish....

Steps:
- 1. Carefully wash tilapia, pat dry with paper towels, set aside.
- 2. Place olive oil into large heavy bottomed frying pan. Saute garlic for 30 seconds over medium high heat then add onions, stir frequently. When onions are translucent add mushrooms and saute an additional 2 minutes.
- 3. Reduce heat to medium. Carefully place tilapia on top of sauteed vegetables. Allow them to steam-cook for 2 minutes. You may need to add a little water to make sure the fish steams.
- 4. Carefully turn the fish to steam the other side for 2 minutes.
- 5. Place the tilapia in an oven-proof dish, cover and place in the oven, just to keep warm.
- 6. Meanwhile, increase the heat under the vegetables, to medium-high. Add wine and allow the liquid to evaporate.
- 7. Add Italian dressing and reduce heat to simmer for 5 minutes.
- 8. Add mustard, stir until blended.
- 9. Add cream.
- 10. Stir until blended. Note: Do not boil as the cream will separate.
- 11. Return tilapia to pan and heat until fish is hot.
- 12. Add capers.
HONEY-MUSTARD TILAPIA
This is a great way to cook tillapia. My friends always request this when they come for dinner and my 11 year old son adores it.

- Preheat oven to 400 degrees F.
- Combine the first 3 ingredients in a small bowl.
- Combine the remaining ingredients in another bowl.
- Coat each of the fillets with the honey-mustard mixture lightly.
- Sprinkle the breadcrumb mixture over the fillets coating them evenly and well.
- Bake until the fillets flake easily with a fork (about 10-15 minutes).
