This is a very simple meal to make. You just throw everything in the crock pot and let it cook during the day. I like to serve this over thin spaghetti (especially garlic and herb thin spaghetti when I can find it).

4 skinless, boneless chicken breast halves
1 (28 ounce) jar spaghetti sauce (such as Classico® Cabernet Marinara with Herbs)
1 (6 ounce) can tomato paste
¼ pound sliced fresh mushrooms
½ yellow onion, minced
½ green bell pepper, seeded and diced
3 tablespoons minced garlic
1 ½ teaspoons dried oregano
½ teaspoon dried basil
½ teaspoon ground black pepper
¼ teaspoon red pepper flakes

Steps:

  • Place chicken in a slow cooker; stir in spaghetti sauce, tomato paste, mushrooms, onion, bell pepper, garlic, oregano, basil, black pepper, and red pepper flakes. Cover.
  • Cook on Low until chicken is tender, 6 to 8 hours.

Spicy Slow Cooker Chicken Cacciatore with Wine image

This is a delicious chicken cacciatore recipe that stems from my family's traditional recipes. Very flavorful and full of wholesome vegetables with an amazing flavor. So many tomato sauces are so bitter, but this utilizes plain white sugar to cut the bitterness and soften the sauce to make it delicious! This will end up sweet, savory, and spicy. Simple and easy to make as well! Serve over choice of pasta, rice, or just plain.

2 pounds skinless, boneless chicken breasts
2 ½ cups red wine
1 large onion, coarsely chopped
1 medium green bell pepper, seeded and chopped
1 medium yellow bell pepper, seeded and chopped
1 medium orange bell pepper, seeded and chopped
1 medium red bell pepper, seeded and chopped
7 tablespoons minced garlic
3 tablespoons red pepper flakes, or more to taste
2 tablespoons Italian seasoning
salt and ground black pepper to taste
2 (15 ounce) cans diced tomatoes
¾ cup white sugar, or to taste
2 (15 ounce) cans tomato sauce

Steps:

  • The night before cooking, layer ingredients into a slow cooker in the following order: chicken, wine, onion, bell peppers, garlic, red pepper flakes, Italian seasoning, salt, pepper, diced tomatoes, sugar, and tomato sauce. Cover and place in the refrigerator so chicken can soak up the wine, 8 hours to overnight.
  • The next morning, remove from the refrigerator and cook on Low, stirring occasionally, for 6 hours. Remove chicken and shred meat with 2 forks; return meat to the cooker.
  • Cook on High with lid slightly off to allow juices to evaporate and sauce to condense, about 2 more hours.

1 (28 ounce) can crushed tomatoes (basil and garlic flavor)
1 tablespoon italian seasoning

7 -8 boneless skinless chicken thighs
1 (15 ounce) can diced peeled tomatoes
1 (6 ounce) can tomato paste
1 (14 1/2 ounce) can tomato sauce
2 (2 1/4 ounce) cans mushrooms, stems & pieces
1 (2 1/4 ounce) can sliced olives
1 bay leaf
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon dried onion flakes
2 teaspoons dried parsley
1 garlic clove, minced
1/2 teaspoon thyme
2 teaspoons italian seasoning
1 tablespoon sugar

Steps:

  • Clean any unwanted fat from chicken pieces.
  • Add all ingredients to crock pot, mix well, making sure chicken is covered.

3 lbs chicken breast halves, Drums and Thighs, cut split breasts in half
4 tablespoons pan searing flour (as needed)
2 tablespoons olive oil
2 garlic cloves, minced
8 ounces sliced mushrooms
8 ounces bell peppers, sliced
8 ounces onions, sliced
1 cup dry red wine
2 teaspoons italian seasoning
24 ounces italian classics seasoned tomato sauce (Prepared Foods)
salt and pepper

Steps:

  • Dust chicken with pan searing flour.
  • Heat oil on MEDIUM in large braising pan; add chicken. Brown lightly on all sides, 8-10 minute Transfer chicken to slow cooker. Discard all but 1 Tbsp oil.
  • Add garlic, mushrooms, peppers and onions to pan. Cook, stirring occasionally, 3-4 min, until vegetables soften slightly. Add wine; cook 1-2 minute Add Italian seasoning and tomato sauce; stir. Bring to simmer and remove from heat.
  • Add sauce mixture carefully to slow cooker. Cover; cook 3-4 hours on HIGH or 6-7 hours on LOW. Season to taste with salt and pepper.

1 large onion, thinly sliced
3 lbs chicken, cut up
2 (6 ounce) cans tomato paste (I prefer it with the same amount of tomato sauce instead)
4 ounces mushrooms, sliced
1 teaspoon salt
1 -2 garlic clove, minced
1 -2 teaspoon oregano
1/2 teaspoon celery seed (I omit this)
1 bay leaf
1/2 cup water

Steps:

  • Place onions in bottom of crock pot. Add chicken pieces.
  • Stir together remaining ingredients.
  • Pour over chicken.
  • Cook on low 7 to 9 hours; high 3 to 4 hours.
  • Serve over angel hair pasta.
  • RJ's Note: I made this recipe on 9th of May 1998. I substituted the tomato paste with a large can of tomatoes that I put through the blender. The aroma of the chicken simmering in the crock pot sauce all day was fantastic. During the last ten minutes I added some frozen mixed Chinese vegetables and served the cacciatore over home made pasta noodles (my first attempt at making pasta). I only used one teaspoon of oregano. Next time I'll try two.

I originally got this recipe from WW. It's become such a staple around our house. I've added a few more veggies to it to make it a more complete meal. It's designed for a smaller crock pot, so if you have a large one, just double the recipe. Chicken can be thawed, partially thawed or even frozen; just adjust the cooking time. Fast, easy and oh so delicious.

1 1/2 lbs skinless chicken thighs, thawed
1 (28 ounce) can Italian-style stewed tomatoes
1 small green pepper, chopped
1 small onion, chopped
1 small zucchini, chopped
2 garlic cloves, minced (optional)

Steps:

  • Combine all ingredients in crock pot, stir to mix.
  • Simmer on low for 8 to 10 hours, or on high for 6 hours.
  • Serve over brown rice or any type of pasta/noodle.
  • Note: Bone-in chicken thighs can be used but boneless is easier; 1-1/2 lbs should be about 8 thighs.
