1 pint strawberry, sliced
1 cup raspberries or 1 package (10 ounces) frozen raspberries, thawed and drained
1 cup fresh or frozen (thawed and drained) blueberries
1/3 cup granulated sugar
2 1/3 cups Original Bisquick™ mix
1/2 cup milk
3 tablespoons granulated sugar
3 tablespoons butter or margarine, melted
3/4 cup sour cream
2 tablespoons packed brown sugar

Steps:

  • Sprinkle fruit with 1/3 cup granulated sugar; let stand 1 hour.
  • Heat oven to 425°F.
  • Stir Bisquick mix, milk, 3 tablespoons granulated sugar and the butter until soft dough forms. Turn dough onto surface dusted with Bisquick mix. Knead 8 to 10 times. Roll dough 1/2 inch thick. Cut with floured 3-inch cutter.
  • Bake on ungreased cookie sheet 10 to 12 minutes or until golden brown.
  • Mix sour cream and brown sugar. Split shortcakes; spoon fruit between halves and over tops. Top with sour cream mixture.

You make the shortcake and the filling homemade and is simple. Use any fruit that you like.

2 1/4 c all purpose baking mix
3 Tbsp confectioners' sugar
2/3 c plus 1 tablespoon; divided of milk
1 Tbsp sugar
2 c whipping cream
4 oz cream cheese; softened
1/4 c confectioners' sugar
2 tsp vanilla extract
2 c strawberries, fresh &sliced and blueberries
1 c raspberries

Steps:

  • 1. Combine baking mix,confectioners sugar and 2/3 cup milk in bowl and mix well.
  • 2. Knead dough 10 tmes and roll out to a 1/2 thickness.
  • 3. Cut out dough with a 2 inch biscuit cutter or glass. Arrange on greased baking sheet and brush tops with remaining milk and sprinkle with sugar. Bake at 450 degrees for 8-10 minutes;till golden.
  • 4. For the filling; Bear whipping cream until sort peaks form with electric mixer.
  • 5. Add the cream cheese a tablespoon at a time while beating. Blend in confectioners sugar and vanilla.
  • 6. Mix all fruit together.Cut biscuit in half. Spoon tablespoon of whipped cream onto the bottom half of each biscuit
  • 7. Top with equal portions of the berry mixture and remaining whipped cream. Place biscuit on top.
