TEX-MEX QUICHE
I discovered this quiche recipe many years ago, and it's still one of my favorites today. It's quick and easy, yet very tasty. It's also a good dish to take to potlucks or serve as an appetizer. You might like it for a brunch or light supper, too. -Hazel Turner, Houston, Texas

- Sprinkle chili powder over the inside of the crust. Combine cheeses with flour and place in crust. , Combine eggs, cream, chiles, olives, salt and pepper. Pour over cheese. , Bake at 325° for 45-55 minutes or until a knife inserted in the center comes out clean. Cool for 10 minutes before cutting into wedges.

- 1. Preheat oven to 375. Line a 9 inch pie pan with pastry dough. set aside. Saute ground beef til browned; drain off fat. Remove from heat and stir in salt, garlic powder, cumin, chili powder, green onion and tomatoes Place eggs and water in bowl and blend well.
- 2. Layer ground beef mixture, egg mixture and cheese in the pie shell.
- 3. Bake for 50 to 60 minutes or til set. Makes 6 servings.

Steps:
- Heat oven to 425 degrees.
- Firmly press pie crust into 9 inch pie pan.
- Bake for 8 minutes.
- Prepare filling-------------.
- In a small bowl beat eggs, and add half and half.
- Sprinkle cheese over pie crust.
- Sprinkle green chili over cheese.
- Carefully pour egg mixture over cheese in pie pan.
- Bake at 425 for 15 minutes.
- Reduce heat to 350 and continue cooking for@ 20 minutes until golden brown or a knife inserted into the center comes out clean.
- After removing from the oven arrange tomato slices and avocado slices on top of quiche.
- Serve.

- Line unpricked pastry shells with a double thickness of heavy-duty foil. Bake at 400° for 5 minutes. Remove foil; bake 5 minutes longer., Sprinkle chili powder and cumin over shells; sprinkle with cheeses. In a large bowl, whisk the eggs, cream, chilies, olives, onions, cilantro, salt and pepper. Pour evenly over cheese. , Cover and freeze one quiche for up to 3 months. Cover edges of remaining quiche loosely with foil; place on a baking sheet. Bake at 400° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting. - Arrange pie crust in a pie plate.
- Sprinkle shredded cheddar evenly over bottom of crust.
- Spread drained tomatos/chilis and green chilis over cheese. Sprinkle olives over top.
- Beat eggs, sour cream, chili powder, paprika, cumin, cayenne, and garlic powder until well mixed. Pour over mixture in pie crust.
- Bake at 375 for 50 minutes, until firmly set. Allow to sit 5 minutes before serving.
