This is one of the best barbecue sauces I have tasted in a long time. It can be used as a marinade, a basting sauce and a dipping sauce. I used it for pork ribs but it would be good with chicken, too.

2 teaspoons vegetable oil
2 garlic cloves, minced
1/3 cup onion, minced
3/4 cup ketchup
1/3 cup water
2 tablespoons cider vinegar
4 teaspoons brown sugar, packed
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon Worcestershire sauce
1/2 teaspoon ground cumin
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon liquid smoke

Steps:

  • In a saucepan, heat the oil over medium heat; fry the garlic and onion, stirring occasionally, until softened, about 3 minutes.
  • Add the ketchup, water, vinegar, sugar, chili powder, oregano, Worcestershire sauce, cumin, mustard, salt and liquid smoke; bring to a boil.
  • Reduce the heat and simmer until slightly thickened, about 3 minutes.
  • Let cool before using for marinating or basting. If using as a dipping sauce, measure off the required amount, reheat and thin with a little water.

This is a double-duty sauce -- it also does a stellar job as a basting sauce for a roasted whole bird!

2 tablespoons unsalted butter
1/2 cup finely diced onion
4 garlic cloves, finely diced
6 plum tomatoes, coarsely chopped
1/4 cup ketchup
1/4 cup water
2 tablespoons English mustard
2 tablespoons dark brown sugar
3 tablespoons treacle (may substitute molasses)
2 tablespoons tamarind paste
1 teaspoon cayenne pepper
1 tablespoon dried ancho chile powder
1 tablespoon paprika
1 tablespoon Worcestershire sauce

Steps:

  • Heat the butter in a large saucepan over medium-high heat.
  • Add the onions and garlic and cook until soft.
  • Add the remaining ingredients and cook for 15 minutes.
  • Place the mixture in a blender and blend until smooth.
  • Return to the saucepan and cook for an additional 15 to 20 minutes, or until thickened to your liking.

Tex-Mex Barbecue Sauce image

This barbecue sauce has good bbq flavor with a Tex-Mex kick. I clipped the recipe from a Hellman's Mayonnaise jar several years ago. Although it tastes good when first mixed together, it tastes even better if it has had time to set for a little while so the flavors have time to blend.

1/2 cup mayonnaise
1/2 cup catsup
1/4 cup Worcestershire sauce
3 tablespoons chili powder
1 clove garlic (minced)
1/8 teaspoon hot pepper sauce

Steps:

  • Whisk ingredients together until smooth.
  • Brush on meats, turning frequently, during last 20 minutes of cooking.
