Grilled Teriyaki Shrimp and Pineapple Skewers image

These savory-sweet shrimp skewers are easy to make and cook in just a few minutes. They are perfect for summer weeknights or weekend dinner parties. Prep the sauce ahead of time for an even faster dinner. I prefer to use jumbo shrimp (21-25 per pound), however use what you have on hand.

⅓ cup water
2 tablespoons soy sauce
2 tablespoons brown sugar
1 teaspoon honey
1 teaspoon grated fresh garlic
1 teaspoon grated fresh ginger
1 pound jumbo shrimp
½ fresh pineapple, cored and cut into 1 1/2-inch pieces
skewers
2 tablespoons minced fresh cilantro
1 tablespoon toasted sesame seeds

Steps:

  • Combine water, soy sauce, brown sugar, honey, garlic, and ginger in a small saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until sauce has reduced and thickened slightly, 8 to 10 minutes.
  • Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread shrimp and pineapple alternately onto skewers and place on a platter.
  • Arrange skewers on the hot grate. Grill 2 to 3 minutes per side, or until shrimp is opaque and cooked through. Turn grill to low heat and brush sauce on both sides of skewers. Transfer to a serving platter and sprinkle with cilantro and sesame seeds.

3 tablespoons lime juice
2 tablespoons olive oil
2 tablespoons reduced-sodium teriyaki sauce
1 tablespoon balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon garlic powder
6 drops hot pepper sauce
6 uncooked jumbo shrimp, peeled and deveined

Steps:

  • Combine the first seven ingredients in a large resealable plastic bag; add shrimp. Seal bag and turn to coat. Refrigerate for 1 hour, turning occasionally., Drain and discard marinade. Thread shrimp onto two metal or soaked wooden skewers. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 3-4 minutes on each side or until shrimp turn pink.

½ cup reduced-sodium soy sauce
½ cup pineapple juice
½ cup dark brown sugar
1 tablespoon Sriracha sauce
1 teaspoon sesame oil
½ teaspoon garlic powder
1 pound large shrimp, peeled and deveined

Steps:

  • Whisk soy sauce, pineapple juice, brown sugar, Sriracha, sesame oil, and garlic powder together in a bowl until fully blended. Transfer to a small saucepan and cook on medium heat until teriyaki sauce is slightly thickened, about 10 minutes.

Shrimp, ramen noodles, red bell pepper, pineapple chunks and teriyaki sauce are combined to make a foil packet recipe for the outdoor grill

2 pkgs (3 oz each) dry ramen noodles, discard seasoning packets
1 cup hot water
1 pound medium (31/40 count) peeled and deveined shrimp, thawed if frozen
1 medium red bell pepper, cut into 1/2-inch pieces (1 medium = 1 cup)
1 can (8 oz each) pineapple chunks in juice, undrained
1/4 cup La Choy® Teriyaki Marinade & Sauce
1 tablespoon La Choy® Lite Soy Sauce
PAM® Original No-Stick Cooking Spray
Sliced green onions, optional

Steps:

  • Preheat gas grill for medium heat. Cut each block of noodles into quarters and place in 8x8-inch baking dish. Pour water over noodles. Turn pieces over after 2 minutes. Meanwhile, stir together shrimp, pepper, pineapple, teriyaki marinade and soy sauce in large bowl. Place four 18x12-inch pieces of heavy aluminum foil on counter. Spray each with cooking spray. Divide noodles and any remaining water evenly between pieces of foil. Top with equal amounts of shrimp mixture. Carefully double fold top and ends of each piece of foil, leaving space for steam to gather. Place packets on grate; cover grill. Grill 15 minutes or just until shrimp turn pink and noodles are tender. Carefully open packets. Sprinkle with green onions, if desired.
