SAUTEED TEQUILA LIME SHRIMP TACOS WITH MANGO-PINEAPPLE SALSA AND SPICY BLACK BEANS image

For the shrimp tacos
2-4 tablespoons olive oil
1 garlic clove, chopped
1/2 teaspoon ground cumin
Pinch red pepper flakes
1 pound medium shrimp, deveined
3 tablespoons high-quality tequila
Salt, to taste
Pepper, to taste
1 teaspoon dried chipotle powder
2-3 tablespoons cilantro, chopped
4 whole-wheat tortillas
For the mango-pineapple salsa
1 large ripe mango, chopped
1/4 cup red onions, chopped
1/4 cup red bell pepper, chopped
1 8-ounce can pineapple tidbits in juice, drained
1 tablespoon freshly squeezed lime juice
1-2 tablespoons cilantro, chopped
Salt, to taste
For the spicy black beans
2 tablespoons onion, chopped
1 garlic clove, chopped
1 tablespoon ground cumin
1 14-ounce can black beans
2 tablespoons red pepper flakes

Steps:

  • 1. To make the shrimp tacos: In a large skillet over medium heat, add the olive oil. Add the chopped garlic and cook for about 1 minute. Add the cumin and red pepper flakes, and let the flavors blend together. Add the shrimp and toss. Carefully add the tequila and flambé. Season with salt and add the dried chipotle powder. Once shrimp are cooked, add the chopped cilantro and toss. 2. In a separate nonstick skillet over low heat, heat a whole-wheat tortilla until pliable, about 2 minutes on each side. 3. Plate one tortilla per person and serve three shrimp in each taco. 4. To make the spicy black beans: In a saucepan over medium heat, add the chopped onion and chopped garlic clove. Sweat the onions for about 2 minutes. Add the cumin and the black beans. Stir and add the red pepper flakes. Simmer for about 5 minutes. 5. To make the mango-pineapple salsa: Peel the mango and chop into small dice and place in a bowl. Chop the yellow and red bell peppers and add them to the bowl with the mango. Add the drained pineapple tidbits and chopped red onion and toss together. Squeeze some lime juice over and toss. Add the chopped cilantro, salt to taste, and toss. Refrigerate until ready to serve.

4 tablespoons EVOO (extra-virgin olive oil)
6 slices smoky bacon, chopped
2 pounds ground chicken breast
2 to 3 tablespoons pureed chipotle in adobo, depending on preferred heat level
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon smoked paprika
1 large yellow onion, chopped
3 to 4 garlic cloves, finely chopped or grated
3 tablespoons tomato paste
1 quart chicken stock
Salt and pepper
1 yellow bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 orange bell pepper, seeded and chopped
1 medium red onion, chopped
2 jalapeño peppers, seeded and finely chopped
4 shots of tequila
Juice of 1 lime
1/4 cup chopped fresh cilantro leaves
1 avocado, pitted
1/4 cup finely chopped fresh chives
Juice of 1 lemon
1 cup buttermilk
Crushed tortilla chips, for garnish

Steps:

  • Place a large heavy-bottomed pot over medium-high heat with 2 tablespoons of the EVOO. Add the bacon to the pan and brown, about 3 to 4 minutes. Add the chicken to the pot and brown, 5 to 6 minutes, stirring occasionally to break up the lumps. Add the pureed chipotle, cumin, coriander, and smoked paprika, then stir for 1 minute. Add the onion and garlic to the pot and cook until tender, 5 minutes more. Add the tomato paste and chicken stock and some salt and pepper to the pot and bring the liquids up to a bubble. Reduce the heat to a simmer.
  • While the chili is simmering, place a medium skillet over medium-high heat with the remaining 2 tablespoons of EVOO. Add the bell peppers, red onion, and jalapeño to the skillet and cook until tender, 4 to 5 minutes. Remove the skillet from the heat and add the tequila. Return the skillet to the heat and flame the tequila to burn off most of the alcohol. Add the lime juice, the cilantro, and some salt to the salsa.
  • To a food processor bowl add the avocado, chives, lemon juice, and buttermilk. Process until smooth and then season with salt and pepper.
  • Serve up the chili with some of the tequila-pepper salsa and avocado ranch dressing. Garnish with tortilla chips.

3/4 lb halibut
salt and black pepper
1 tablespoon vegetable oil
1 tablespoon lemon juice
1 tablespoon lime juice

1 beefsteak tomato
1/2 red bell pepper
1 garlic clove
1/4 onion
1/2 chipotle chile, diced (canned in adobo)
1 tablespoon olive oil
1/4 cup cilantro leaf, chopped
1 lime, juice of
1/4 cup tequila
salt and black pepper
8 corn tortillas
1 bunch cilantro
2 limes, wedged

Steps:

  • For the Halibut:.
  • Heat a grill pan on high heat.
  • Season the fish with salt and pepper.
  • Rub the grill pan with vegetable oil.
  • Place the halibut in the hot pan and grill for 4 minutes before turning to grill the second side.
  • Baste the fish with the citrus juice.
  • Turn the fish and continue to grill until cooked through.
  • Remove the fish from the pan and allow to cool.
  • Flake the fish and side aside while preparing the salsa.
  • For the Salsa:.
  • Heat a Pan on medium heat.
  • Place the tomato, pepper, garlic clove, and onion in the pan.
  • Dry roast the ingredients for 8-10 minutes or until lightly caramelized.
  • Combine dry roasted ingredients, chopped chipotle pepper, olive oil, cilantro, and lime juice in a quart container in blender and process until smooth.
  • Mix in the tequila and season with salt and black pepper.
  • To assemble:.
  • Divide the flaked halibut onto the corn tortillas.
  • Spoon salsa onto the fish.
  • Top with cilantro and lime juice.

1/4 cup olive oil
1 medium white onion, chopped
2 cloves peeled garlic, chopped
6 plum tomatoes, roughly chopped
2 dried pasilla chiles
1 ancho chile, broken up
2 cups water
1 slice white bread, dried and crumbled
1/4 cup tequila
Salt and freshly ground black pepper

Steps:

  • In a 2-quart saucepot, heat the olive oil. Saute the onion and garlic for 2 minutes or until translucent. Add the tomatoes and dried chiles. Continue to saute for 2 minutes. Add the bread and water, stir in well. Cook the mixture for 12 to 15 minutes, or until the chiles are soft and cooked.
  • Add the cooked mixture to a blender and blend until smooth. Pour through a strainer to catch any large pieces and seeds. Return the strained salsa to the saucepot and add the tequila. On low-medium heat, bring the sauce to a simmer for 2 minutes. Season with salt and pepper and serve warm.

3/4 cup heavy (whipping) cream
3 tablespoons confectioners' sugar
1/4 teaspoon ground cinnamon
1 tablespoon tequila (preferably gold)
8 slices pound cake (each 1/2 inch thick)
2 to 3 tablespoons unsalted butter, melted
Pineapple "Salsa"
4 fresh mint sprigs, for garnish

Steps:

  • 1. Place the cream in a chilled mixer bowl or in a large metal bowl. Beat with a mixer until soft peaks form, starting on the slow speed and gradually increasing the speed to high. The total beating time will be 6 to 8 minutes. When soft peaks have formed, add the confectioners' sugar, cinnamon, and tequila. Continue beating the cream until stiff peaks form, about 2 minutes longer. Don't overbeat the cream or it will start to turn to butter. The tequila whipped cream can be made several hours ahead. Refrigerate it, covered, until ready to serve.
  • 2. Lightly brush each slice of pound cake with butter on both sides. Cook the pound cake, following the instructions below for any of the grills, until lightly toasted. If desired, rotate each slice a quarter turn after 1 minute to create a handsome crosshatch of grill marks. You may need to cook the pound cake slices in more than one batch.
  • 3. Place the pound cake slices on plates. Top each serving with a spoonful of Pineapple "Salsa" and a dollop of tequila whipped cream, garnish with a sprig of mint, and serve at once.
  • CONTACT GRILL:
  • Preheat the grill; if your contact grill has a temperature control, preheat the grill to high. Place the drip pan under the front of the grill. When ready to cook, lightly oil the grill surface. Place the slices of pound cake on the hot grill, then close the lid. The pound cake will be done after cooking 2 to 4 minutes.
  • GRILL PAN:
  • Place the grill pan on the stove and preheat it to medium-high over medium heat. When the grill pan is hot a drop of water will skitter in the pan. When ready to cook, lightly oil the ridges of the grill pan. Place the slices of pound cake in the hot grill pan. They will be done after cooking 2 to 4 minutes per side.
  • BUILT-IN GRILL:
  • Preheat the grill to high, then, if it does not have a nonstick surface, brush and oil the grill grate. Place the pound cake slices on the hot grate. They will be done after cooking 2 to 4 minutes per side.
  • FREESTANDING GRILL:
  • Preheat the grill to high; there's no need to oil the grate. Place the pound cake slices on the hot grill. They will be done after cooking 3 to 5 minutes per side.
  • FIREPLACE GRILL:
  • Rake red hot embers under the gridiron and preheat it for 3 to 5 minutes; you want a hot, 2 to 3 Mississippi fire. When ready to cook, brush and oil the gridiron. Place the pound cake slices on the hot grate. They will be done after cooking 2 to 4 minutes per side.

8 corn tortillas, taco sized
1/2 large jicama, peeled and diced
1 orange, peeled and diced
1/2 medium red onion, diced

1 tablespoon lime juice
1 lime, juiced
2 tablespoons tequila

Steps:

  • In a small bowl combine all ingredients for the shrimp marinade and stir. Place peeled and deveined shrimp in a resealable bag and add the marinade to coat the shrimp. Place sealed bag in the refrigerator for 20 minutes.
  • Meanwhile, in a large bowl combine jicama, orange, red onion, cilantro, garlic, oil, and lime juice. Stir well. Set aside until ready to use.
  • Heat a large non-stick skillet on medium high. Add shrimp and cook for no longer than 2-3 minutes. Once shrimp starts to curl up and turn pink, flip over and cook the other side. Remove shrimp to a plate immediately so it won't continue to cook. Set aside.
  • Stack corn tortillas on top of each other and wrap in a damp paper towel and microwave on high for 1 minute. To Serve: Place 2 corn tortillas on 4 plates and top each tortilla with a little of the salsa mixture and 3 pieces of shrimp per tortilla. Serve with leftover lime wedges cut into small pieces, if desired.

If you buy jalapenos ahead of time, they will turn red - much cheaper than buying the red ones. I try to pick a couple that are already turning, but are still in the green bin. 1/4 cup tequila
3 tablespoons lime juice, divided
1 teaspoon brown sugar
canola oil
1/2 red onion, cut into 1/4 inch dice

Steps:

  • Prepare an outdoor grill on medium to high heat.
  • Season the sole fillets with the sea salt and brush the fillets with olive oil. Grill each fillet until it begins to flake. Remove from the grill.
  • Lay out each grilled tortilla. Place each leaf of iceberg on top of the tortilla. Layer the grilled sole on next. Place the cooked lobster meat on each taco. Then sprinkle on the epazote and serranos over each taco. Add tomato slices and scallions in layers. Spoon the Tequila-Lime Salsa over each taco.   • To make the salsa: 1. Fry the onions and garlic until golden. 2. Add the tomatoes, chillis and spring onions. 3. Add the lime juice and 100ml of the Tequila. 4. Stir carefully and heat through. 5. Add the cilantro and season with salt to taste. In a large pot add the water and 100 ml of the Tequila. Place the mussels in the pot and heat through (about 5 mins for defrosted or 8 mins for frozen mussels) Serve the mussels immediately. 2 Tilapia filets
3 Limes
1 Large tomato, diced
2 oz tequila
1 Medium onion, chopped
2 Tablespoons butter
To taste:
Chopped cilantro
Cumin
Chili powder
Salt
Pepper

Steps:

  • 1. To marinade the fish, place in a shallow pan and sprinkle with spices and chopped cilantro and diced tomato. Squeeze lime juice over the fish and pour in the tequila. Cover with plastic wrap and spoon marinade over fish every half hour or so for 2 hours. Make sure to refrigerate the fish in between bastings. 2. Melt butter in a frying pan and gently sautee the onions until they are soft and golden brown. Toss the onions in the pan until they form an even, uniform layer on the bottom of the pan. Increase heat to high. 3. Remove the fish from the marinade and lay over the onions, and pour in about 1/3 of the marinade. Cover the fish. 4. Remove the tomato from the marinade and heat in a separate pan just long enough to heat it up and kill any microbes or parasites. Food poisoning ain't fun. 5. After 2 minutes, turn the tilapia over. Add more marinade and cover for another 2 minutes. 6. When the fish is cooked through, scoop the filets up with as much onion as possible and serve over spanish rice. Garnish the filets with the tomato salsa.

TOMATILLO TEQUILA SALSA



Tomatillo Tequila Salsa image

Tomatillos, poblano peppers and scallions are broiled until charred and then pulsed into a chunky salsa with tequila and lime juice. Its great served with salty tortilla chips.

6 tomatillos, husks removed and halved
2 poblano peppers, halved and seeded
1 bunch scallions, trimmed
Vegetable oil
Kosher salt and freshly ground black pepper
1/4 cup tequila
1/2 teaspoon chili powder
Juice of 1 lime
Tortilla chips (for serving)

Steps:

  • Preheat the broiler. Toss the tomatillos, poblanos and scallions on a rimmed baking sheet with a drizzle of oil and sprinkle with salt and pepper. Broil until well charred, flipping once, about 5 minutes per side. When cool enough to handle, remove the skins from the poblanos.
  • Put the charred vegetables in the bowl of a food processor along with the tequila, chili powder, lime juice, 1/2 teaspoon salt and a pinch of pepper. Pulse until well mixed but still slightly chunky. Transfer to a medium bowl. Season with salt and pepper. Refrigerate until chilled, at least 1 hour or overnight. Serve with tortilla chips.

Janette's Tortilla Chip Snapper with Tequila-Mango Salsa image

1 ripe mango, diced
1 red bell pepper, diced
2 plum tomatoes, diced
1/2 cup crushed pineapple, strained
1/2 cup orange juice
1 tablespoon grated lime zest
1 lime, juiced
1 tablespoon tequila
1 teaspoon minced fresh ginger
1 tablespoon chopped fresh cilantro leaves
Salt and freshly ground pepper
2 cups finely crushed baked tortilla chips
1 teaspoon cayenne pepper
1 tablespoon curry powder
1 egg white
2 dashes hot pepper sauce
Salt and freshly ground pepper
2 tablespoons olive oil
1/4 cup white wine
4 (6-ounce) red snapper fillets

Steps:

  • To make the salsa: Combine all ingredients in a small mixing bowl and let stand at least 20 minutes and up to 1 hour.
  • To make the snapper: Toss the tortilla chips with the cayenne and curry powder and spread on a large plate. Whisk the egg white with the hot sauce and season with salt and pepper.
  • Heat the olive oil and wine in a large nonstick saute pan over medium-high heat. Dip each fillet in the egg white, then dredge in the tortilla chip mixture and place in the pan. Saute until crust is browned and fish is just cooked through, 4 to 5 minutes per side.
  • Divide the snapper among 4 plates and spoon salsa over the top. Serve immediately.

1 cup white onion, chopped
1/2 cup anaheim chilies or 1/2 cup cubanelle pepper
1/4 cup cilantro, chopped
2 garlic cloves, minced
1/4 cup tequila-lime vinegar

Steps:

  • Chop and combine all ingredients.
  • Season to taste with salt and pepper.
  • Serve with corn chips or as garnish.
