This Turkey Taco Soup is easy peasy to make for a weeknight dinner... a healthy meal the whole family will enjoy. Toss all ingredients into a pot and simmer until you're ready to eat! The toppings are the best part!!

1 teaspoon olive or avocado oil
1 red onion, diced
1 tablespoon minced garlic
1/2 bell pepper, diced
1 pound lean ground turkey
1 packet taco seasoning
28 ounces canned petite diced tomatoes
1 can black beans
1 can corn
4.5 ounces canned green chilies
sour cream, green onions, tortilla chips (optional toppings)

Steps:

  • In large pot, heat oil over medium high eat and add onions and garlic until softened.
  • Stir in bell pepper and continue to cook to soften.
  • Add ground turkey and cook until browned.
  • Stir in taco seasoning to incorporate into meat and add tomatoes, beans, corn, and chilies and bring to a boil. Reduce heat to simmer until ready to eat.
  • Ladle soup into bowls and top with sour cream, green onions and tortilla chips if desired.

2 tablespoons olive oil
1 ¼ pounds ground turkey
1 onion, chopped
2 carrots, cut into 1/4 inch rounds
2 stalks celery, chopped
1 ½ cups frozen corn
5 cloves garlic, chopped
1 (1 ounce) package taco seasoning mix
¼ teaspoon ground cumin
¼ teaspoon chili powder
¼ teaspoon dried oregano
½ bunch chopped fresh cilantro, divided
1 (28 ounce) can diced tomatoes with juice
1 (15 ounce) can kidney beans, rinsed and drained
1 green chile pepper, halved lengthwise
½ cup sliced black olives
3 ½ cups chicken broth
1 cup water, or more as needed
¼ cup lime juice
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Transfer turkey to a bowl; set aside.
  • In the same skillet, stir in the onion; cook and stir until the onion is nearly translucent, about 5 minutes. Add the carrots and celery. Continue to cook and stir until tender, about 8 more minutes.
  • Stir in the corn, garlic, taco seasoning, cumin, chili powder, dried oregano, and about 1/4 cup cilantro along with the cooked turkey. Cook and stir until fragrant, about 2 minutes.
  • Mix in the tomatoes, kidney beans, green chile pepper, olives, chicken broth, water, and lime juice. Season with salt and black pepper. Bring to a boil, then reduce heat to low and continue to simmer for 20 minutes. Remove chile halves, and garnish with the remaining cilantro before serving.

Every spoonful of this Turkey Taco Soup is brimming with flavor thanks to the ground turkey, beans, corn, and a perfectly seasoned broth. It's a hearty and filling 30-minute soup that can easily be made on the stovetop or in a slow cooker for quick weeknight dinners or lazy weekends.

2 lbs ground turkey
3 x 15 oz cans tomato sauce (low sodium)
2 x 15 oz cans low sodium red kidney or romano beans (drained & rinsed)
3 cups corn (frozen or canned (drained))
2 tbsp taco seasoning
2 tbsp onion powder or flakes
1 tbsp maple syrup or honey
1 tsp salt
Ground black pepper (to taste)
4 cups water or low sodium broth
Oil (for frying)
Cilantro, sour cream/yogurt, lime, avocado, green onion, tortilla chips (for serving)

Steps:

  • Preheat large dutch oven or heavy bottom pot on medium - high heat, swirl a bit of oil to coat, and add turkey. Cook for 5 - 7 minutes, stirring occasionally and breaking into pieces.
  • Add taco seasoning and cook for 1 more minute, stirring frequently.
  • Add tomato sauce, beans, corn, onion powder, maple syrup, salt, pepper, water; and stir.
  • Cover, bring to a boil, reduce heat to low and simmer for 20-60 minutes (longer - deeper flavours but overall soup is ready fast).
  • Preheat large ceramic non-stick skillet on medium - high heat, swirl a bit of oil to coat, and add turkey. Cook for 5 - 7 minutes, stirring occasionally and breaking into pieces. Add taco seasoning and cook for 1 more minute, stirring frequently.
  • Transfer to a large slow cooker along with tomato sauce, beans, corn, onion powder, maple syrup, salt, pepper, water; and stir. Cover and cook on Low for 7 - 8 hours or on High for 3 - 4 hours.
  • Serving: Serve hot with cilantro, sour cream/yogurt, lime, avocado, green onion and tortilla chips.

1 pound ground turkey
1 medium diced onion
1 15 1/2 oz can pinto beans
1 15 1/2 oz black beans
1 15 1/2 oz can kidney beans
1 15 1/4 oz can whole kernel corn
1 14 1/2 oz can Mexican-style stewed tomatoes
1 14 1/2 oz can diced tomatoes
1 14 1/2 oz can Rotel tomatoes with lime chiles
1 4 1/2 oz cans diced green chiles
1 1 1/4 oz package taco seasoning mix
1 oz package Hidden Valley Ranch salad dressing mix
Corn chips, for serving
For garnish: sour cream, grated cheese, chopped green onions, (optional) black olives, jalapenos.

Steps:

  • Brown the ground turkey and onions in a large skillet; drain the excess fat.
  • **Quick tip: Take a potato masher and grind the meat while cooking to reduce size of chunks and to make more like minced taco meat.**
  • Transfer the browned turkey and onions to a large slow cooker or a stockpot.
  • Add all the beans, corn, all tomatoes, green chiles, taco seasoning, and ranch dressing mix.
  • I like to drain my beans and corn to reduce sodium. If you want a little more flavor do not drain can vegtables.
  • Add a can of water so the soup is not dry, it will reduce some.
  • Cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for 45 minutes to 1 hour in a stock pot on the stove.
  • To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions, black olives and jalapenos.

Easy soup to make using ingredients that I always have on hand. My husband loves this stuff. He likes to put a big spoonful of leftover mashed potatoes in the bowl and cover it with the soup. I like it served with corn chips and grated cheese. For a spicier soup, add a few diced jalapenos.

Taco Soup recipe from WW Leader Stefani. I did not add the ff refried beans in the original recipe. I did add 1 large onion sauteed in 1 T of Canola Oil. 1 1/3 pounds of ground turkey breast is the standard size of the package at Harris Teeter (grocery store I normally shop), I think you could use anything between 1-2 pounds, but it would change the NI. Also, I rinse the beans and/or use the low sodium varieties of seasonings. The NI shown includes the full sodium versions of everything, but does not include the sodium of the seasoning mix. If you make the recipe "as is" it is very high in sodium for those that are sensitive to that.

  • Dice onion and saute in oil until soft in large pot.
  • Brown ground turkey in onion/oil.
  • Add all other ingredients and simmer 30 minutes.
  • To lower sodium rinse and drain beans and use low sodium versions of corn, seasonings mix, etc. I also use "Goya Sazon" seasoning which can be found in the Hispanic foods section. It really gives a nice flavor without a lot of heat. Great in stews, chiles, etc. (contains MSG though).

1 anaheim pepper, raw
2 cups water
1 (16 ounce) can chili beans, undrained
1 (15 ounce) can black beans, undrained
1 (15 ounce) can whole kernel corn, undrained
1 (15 ounce) can petite diced tomatoes, undrained
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), undrained
1 (8 ounce) can tomato sauce
1 tablespoon ground cumin
1 tablespoon seasoned salt
½ teaspoon seasoned pepper
½ teaspoon dried oregano
½ teaspoon salt-free seasoning blend (such as Mrs. Dash® Chipotle seasoning)

Steps:

  • Heat oil in a skillet over medium heat. Add turkey, onion, and chile pepper; cook and stir until turkey is crumbly and no longer pink, 5 to 7 minutes. Transfer mixture (do not drain) to a slow cooker.
