CABBAGE ROLLS OR STUFFED PEPPERS image

1 head cabbage
1 lb. ground beef
1 roasted red pepper, chopped
1 large onion, chopped
1 tsp. nutmeg
cumin to taste
garlic powder to taste
1/3 rice, uncooked
1/4 c. cold water
2 eggs
1 16 oz. can crushed tomatoes in juice
1 8 oz. can tomato sauce
1 Tb. lemon juice
paprika to taste

Steps:

  • Preheat oven to 400. Separate cabbage into leaves, blanch, and cool. Combine ground beef, nutmeg, red pepper, onion, garlic, cumin, and garlic powder, rice, water and eggs. Place 1/4 c. meat mix in center of each leaf. Roll up and place seam side down in baking pan. Make sauce: Mash tomatoes and mix with tomato sauce. Add lemon juice, onion, garlic, paprika, salt, and pepper. Pour over rolls and bake 45 mins-1 hr. Top with sour cream.
