I was making tacos one night and noticed I was out of spicy taco sauce. Using a combination of spices and fat-free Catalina salad dressing saved our family taco night. -Cheryl Plainte, Prudenville, Michigan

1 pound extra-lean ground beef (95% lean)
1 medium onion, chopped
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon reduced-sodium beef bouillon granules
1 teaspoon ground cumin
1/4 teaspoon salt
SALAD:
3 cups torn romaine
1 large tomato, seeded and chopped
1 medium sweet orange pepper, chopped
3 green onions, chopped
8 taco shells, warmed
1/2 cup fat-free Catalina salad dressing
Shredded reduced-fat Colby-Monterey Jack cheese and reduced-fat sour cream, optional

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Stir in the chili powder, garlic powder, bouillon, cumin and salt; remove from the heat., In a large bowl, combine the romaine, tomato, orange pepper and green onions. Spoon beef mixture into taco shells; top with salad mixture. Drizzle with dressing. Serve with cheese and sour cream if desired.

Not really a 'recipe', just a way to serve them when you have a lots of kids over, and most important NO MESS to clean up. My DS's and their cousins really had fun with this, and they could layer whatever they wanted. I'm giving just an estimated quantity and serving is for 1 person. To free up your time buy presliced vegetables from the local salad bar in your supermarket, just place them individually in the plastic produce bag and place in salad bar container to keep ingredients apart.

1 cup plain Doritos or 1 cup tortilla chips
1/2 cup taco meat
3 tablespoons shredded taco cheese
1 tablespoon chopped onion
2 tablespoons chopped bell peppers, whatever type you prefer
4 cherry tomatoes, sliced in half
2 tablespoons sliced black olives
1 tablespoon sliced green olives
1/3 cup shredded lettuce
2 tablespoons taco sauce
2 tablespoons sour cream

Steps:

  • Heat leftover taco meat in microwave.
  • Have the kids help you carry the rest of the ingredients outside to the picnic table (you carry the meat).
  • Hand each child a plastic sandwich bag and pour the corn chips in the bag.
  • Have each child gently crush the chips, not roughly or else they'll poke holes in the bags.
  • Have each child walk around the table to layer their own ingredients in the bag, pass each child a fork and dig in!.
  • Simply toss out the bag when they are done.

I've always loved tacos but I think the assembling part can be a pain, especially if I'm making mine and the kids' because they were too small to make their own. Once I had taco salad this way, I never made tacos again! (Salsa pictured in my photo is recipe #97428) I have found that squeezing some lime juice over the prepared salad makes it even better! YUM!!

1 (13 1/2 ounce) bag tortilla chips (plain, nacho or lime) or 1 (13 1/2 ounce) bag corn chips
1 lb hamburger
1 (1 1/4 ounce) package old el paso taco seasoning mix
1/4 cup water
1 bunch lettuce, shredded
1 tomatoes, chopped (optional)
1 onion, diced (optional)
8 ounces cheddar cheese, shredded
1 (2 1/2 ounce) can black olives, sliced (optional)
1 (16 ounce) jar salsa
8 ounces sour cream (optional)

Steps:

  • Brown hamburger (I use the microwave) and drain.
  • Add taco mix and water, mix.
  • Heat thoroughly, about 2 minutes in the microwave, stirring once.
  • Layer ingredients on each plate.
  • I use the following order: chips (crunched up), meat, cheese, lettuce, tomato, onion, black olives, taco sauce and sour cream.
  • Use whatever taco toppings you enjoy.
  • Mix and eat.
