SLOW-COOKER HAM AND SWEET POTATOES



Slow-Cooker Ham and Sweet Potatoes image

Sweet and savory in equal measure, this impressively easy slow-cooker dish is a meal in one pot, and it's as great on a weeknight as it is for a special occasion. A glaze made with brown sugar, honey, thyme and ginger cooks with a boneless ham, sliced sweet potatoes and sweet onions, bringing out the natural balance of sweet and savory that each ingredient has. It's a crowd-pleasing meal that requires minimal effort for memorable results!

1 fully cooked boneless half ham (2 1/2 to 3 lb)
2 lb sweet potatoes, peeled and cut in half lengthwise, cut into 1/2-inch slices
1 large sweet onion, cut in half lengthwise, cut into 1/4-inch slices
1/2 cup Progresso™ chicken broth (from 32-oz carton)
1/2 cup packed brown sugar
1/4 cup butter, melted
2 tablespoons honey
1 teaspoon dried thyme leaves
1 teaspoon ground ginger

Steps:

  • Spray 6-quart oval slow cooker with cooking spray.
  • Make cuts about 1 inch apart and 1/4 inch deep in diamond pattern in top of ham. Place ham cut side down in center of slow cooker. Arrange potatoes and onion evenly around ham. Pour broth on top of potatoes and onion.
  • In small bowl, mix remaining ingredients. Pour mixture on top of ham, potatoes and onion.
  • Cover; cook on Low heat setting 4 to 5 hours or until potatoes are tender and instant-read thermometer inserted in center of ham reads at least 145°F. Remove ham to cutting board; cover loosely with foil, and let stand 15 minutes.
  • To serve, cut ham into slices, and transfer to serving dish. With slotted spoon, transfer potatoes and onions to serving dish with ham. Spoon some of the cooking juices on top of ham, if desired.

1 (16 ounce) package light brown sugar, divided
1 (6 to 7 pound) bone-in picnic ham, rinsed
1 (20 ounce) can crushed pineapple
¾ cup chai tea latte concentrate (such as Tazo®)

Steps:

  • Spread about 3/4 of the brown sugar into the bottom of the crock of your slow cooker to cover completely. Place ham atop the brown sugar with the flat side facing down. Pour pineapple over the ham. Rub remaining brown sugar over the ham. Pour chai tea latte concentrate over the ham.
  • Place cover on the slow cooker and cook on Low until an instant-read thermometer inserted into the center of the ham reads at least 160 degrees F (70 degrees C), about 5 1/2 hours. Baste ham once or twice with juices while cooking.

1/2 cup Dijon mustard
1/4 cup chopped green bell pepper
1 tablespoon instant minced onion
1 can (20 ounces) crushed pineapple in juice, undrained
18 sandwich buns, split

Steps:

  • Mix all ingredients except buns in 3- to 4-quart slow cooker.
  • Cover and cook on Low heat setting 4 to 5 hours.

1/4 cup wild cherry Pepsi
1 cup brown sugar
4 cups apple cider
1 cup yoshida teriyaki sauce
1 large red onion, chopped
1 cup Burgundy wine
1 (12 ounce) can precooked wild rice
4 cups ham

Steps:

  • Place all ingredients in a slow cooker and leave on low for at least 8 hours.
  • The resulting dish will be very liquidy, you could take the lid off the slow cooker and cook for 1 hour without it.
