SPINACH AND CHEESE CASSEROLE image

40 oz frozen spinach
1 large onion,chopped
2 tbl olive oil
32 oz shredded mozzarella
1 8 oz tub cream cheese
1 tsp salt
1 tsp pepper
2 eggs

Steps:

  • sauté diced onion in olive oil until translucent add spinach cook until all liquid is absorbed remove from heat, let cool a little add 1/2 the mozzarella and the cream cheese, salt, pepper and eggs mix well place mixture in a 9x13 pan top with remaining cheese bake at 350 until gently browned
