3 sweet potatoes
½ cup crushed pineapple with juice
¼ cup packed light brown sugar
3 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large soup pot, boil sweet potatoes whole until soft. Remove skins, and dice into bite-sized pieces.
  • Mix sweet potatoes, crushed pineapple, light brown sugar, and butter in prepared baking dish.
  • Bake for 45 minutes, or until casserole is mushy with no excess water in the dish.

4 tablespoons brown sugar
2 egg whites, beaten
4 tablespoons margarine, melted
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 1/2 cups pineapple, drained
to taste mini marshmallows

Steps:

  • Combine all ingredients except marshmallows in mixing bowl; beat well.
  • Butter baking dish; place 1/2 of mixture in dish, dot with marshmallows.
  • Add remaining mixture and bake at 350 degrees for 40 minutes.
  • Remove from oven, dot with marshmallows and bake another 10 minutes or until golden brown.

1 tablespoon ground cinnamon

  • In a large bowl, mash the sweet potatoes until smooth. Add the pineapple, cinnamon, nutmeg and cloves; mix well.

1/2 cup butter or 1/2 cup margarine
1/4 cup milk
1 (20 ounce) can crushed pineapple, drained
1/2 teaspoon salt (to taste)

Steps:

  • Place potatoes in 8-10 quart saucepot; add water to cover; bring to boil over high heat.
  • Lower heat to simmer and cook, covered, 15-20 minutes, or until tender.
  • Heat oven to 325 degrees F.
  • Drain potatoes thoroughly, then mash until smooth.
  • Beat in butter, milk, pineapple, salt, and pepper.
  • Spoon into 9"x13" baking dish or 3 quart casserole; top with marshmallows.
  • Bake for 15-20 minutes until marshmallows have lightly browned.
  • Note: Casserole may be prepared in advance and set aside or refrigerated until baking time; in that case, baking time must be increased so potatoes will heat through, and marshmallows should not be added until last 15 minutes of baking time.

6 medium sweet potatoes
1/2 cup butter, cubed
3/4 cup sugar
1 can (20 ounces) crushed pineapple, drained
2 large eggs, beaten
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg

Steps:

  • Place sweet potatoes in a large kettle and cover with water; bring to a boil. Boil gently until potatoes can easily be pierced with the tip of a sharp knife, 30-45 minutes. 1 (8 1/4 ounce) can pineapple chunks (save juice)
1/2 cup orange juice
1 dash nutmeg
1 dash salt
8 ounces cream cheese, softened
2 (17 ounce) cans sweet potatoes
1/4 cup chopped pecans

Steps:

  • Combine pineapple juice from can with enough water to make 1/2 cup.
  • Add orange juice, nutmeg and salt.
  • Mix in cream cheese and stir on low heat until smooth.
  • Drain and slice sweet potatoes.
  • Add with pineapple chunks to cream cheese mixture.
  • Add chopped pecans.
  • Put into a greased 1 1/2 quart casserole.
  • Top with more chopped pecans, if desired.
  • Bake at 350 degrees for 20 minutes.
  • Serve hot.

Okay I will admit it I only have one sweet potato casserole dish. Why? Guess it's cause I was born and raised in NY and we don't do a lot of sweet potato dishes, and I just love sweet potatoes too. This is a holiday dish and goes with baked ham so well.

3 c mashed sweet potatoes
3 Tbsp melted butter
1/2 tsp salt
1/4 c orange juice
8 3/4 oz crushed pineapple, drained
1/2 c brown sugar
6 large marshmallows, cut in half

Steps:

  • 1. Mash sweet potatoes, add butter, salt and orange juice.
  • 2. Beat with a mixer til light and fluffy
  • 3. Add pineapple and brown sugar. Mix well.
  • 4. Bake in a 350 degree preheated oven for 45 to 50 minutes,or until bubbly.
  • 5. The last 10 minutes of baking, scatter the marshmallows on top.

1/2 c brown sugar, dark
1/4 c bourbon
4 Tbsp butter, unsalted
1 1/2 tsp kosher salt
1 tsp cinnamon, ground
1 tsp ginger, ground
1/2 tsp allspice, ground
1/2 tsp freshly grated nutmeg
1/2 tsp ground black pepper
2 eggs
1 can(s) pineapple, crushed (8 oz can)
1 c sugar
1 tsp vanilla extract
4 egg whites

Steps:

  • 1. Heat oven to 350°. Place potatoes on a foil-lined baking sheet; bake until tender, about 1½ hours. Peel and transfer to a food processor along with brown sugar, bourbon, butter, 1 tsp. salt, cinnamon, ginger, allspice, nutmeg, pepper, eggs, and pineapple; puree. Transfer to a 9" x 13" baking dish; bake until heated through, about 25 minutes.
  • 2. While casserole bakes, bring sugar, and ¼ cup water to a boil in a 1-qt. saucepan over high heat; attach a candy thermometer to the side of the pan, and cook, without stirring, until syrup reaches 250°. Meanwhile, place remaining salt, vanilla, and egg whites in a large bowl; beat on medium-high speed of a hand mixer until soft peaks form. While beating, slowly drizzle in hot syrup, and beat until meringue is thickened and cooled.
  • 3. Heat broiler to high. Spread meringue over casserole; broil until lightly browned, about 2 minutes.
  • 4. Personal NOTE: You can probably use canned chunk sweet potatoes to decrease prep time. Just add the ounces on each can until you get 5 1/2 lbs (88 ounces) or thereabouts (cans may weigh less or more than 16 ounces--it's okay to have slightly less or slightly more than the given amount). Since I am unsure if the can's measurement includes the liquid, you might want to get one extra can, just in case; so when you taste it before baking, if it seems like it needs more sweet potato flavor you can add some. Also, the instructions do not indicate whether the pineapple should be drained, so I would drain it first and reserve the liquid, then if the pineapple-sweet potato mixture seems like it's too dry you can add in the pineapple water.

  • Heat oven to 350°F.
  • Drain pineapple, reserving 1/4 cup juice; pour into small bowl. Add sugar, pumpkin pie spice and butter; stir until blended.
  • Place sweet potatoes in 9-inch square baking dish sprayed with cooking spray; top with pineapple chunks. Drizzle evenly with sugar mixture. Sprinkle with coconut and nuts; cover.
  • Bake 35 to 40 min. or until sweet potatoes are heated through and coconut is lightly browned, uncovering after 30 min.

How to make Heavenly Sweet Potato Pineapple Casserole

1 can (17-ounce) sweet potatoes
4 tablespoons brown sugar
2 egg whites, beaten

1/2 teaspoon cinnamon

Steps:

  • Combine sweet potatoes, brown sugar, egg whites, margarine, salt, cinnamon, and pineapple in a mixing bowl; beat well.
  • Butter baking dish; place half of mixture in dish and dot with marshmallows.
  • Add remaining sweet potato mixture to casserole dish.
  • Cover and refrigerate overnight if desired.
  • When ready to serve, preheat oven to 350 degrees F and bake for 40 minutes.

3 lbs sweet potatoes (about 6 medium-large)
2 (8 ounce) cans crushed pineapple with juice, undrained
1/4 teaspoon ground cinnamon
4 teaspoons butter-flavored sprinkles
1/3 cup chopped pecans or 1/3 cup golden raisin
1 3/4 cups miniature marshmallows

Steps:

  • To cook the sweet potatoes in a conventional oven, bake at 400 degrees for about 45 minutes or until tender.
  • To cook in a microwave oven, prick each potato in several places with a fork, and microwave at high power for about 15 minutes, or until tender.
  • Set aside to cool; then peel and cut into bite-sized pieces.
  • Place the potato pieces in a large bowl and toss with all the remaining ingredients except the marshmallows.
  • Coat a 2-1/2 qt.
  • casserole dish with Pam, and place the sweet potato mixture in the dish.
  • Top with the marshmallows.
  • Bake at 350 degrees for 35-40 minutes, or until the sweet potato mixture is bubbly and the top is lightly browned.
  • If the top starts to brown too quickly, loosely cover the dish with aluminum foil during the last 10 minutes of baking.
  • Serve hot.
