2 cups ketchup
1 cup water
5 tablespoons light brown sugar
½ cup white wine vinegar
3 tablespoons white sugar
3 tablespoons honey
1 tablespoon orange juice
1 tablespoon soy sauce
1 tablespoon Dijon mustard
1 tablespoon garlic powder
½ tablespoon black pepper
1 ½ teaspoons cornstarch
1 teaspoon cayenne pepper

Steps:

  • Stir ketchup, water, brown sugar, white wine vinegar, sugar, honey, orange juice, soy sauce, Dijon mustard, garlic powder, black pepper, cornstarch, and cayenne pepper together in a saucepan; bring to a boil, whisking frequently. Reduce heat to low and simmer sauce until thickened, about 40 minutes.

SWEET BAKED BRIE IN PUFF PASTRY

My favorite way of serving brie. I use a pretty fabric ribbon (must be fabric) to tie pastry with a pretty bow, before baking. Comes out fine and doesn't burn in the oven. Serve fruit on the side. I also make it with any flavor of jam. Blueberry strawberry or mixed fruit. For a shiny surface, brush pastry with an egg wash or brush with milk or cream...DIVINE!

1 sheet puff pastry
8 ounces brie round
3 -4 tablespoons brown sugar
1 (16 ounce) package frozen mixed berries
1/2 cup sugar
1 tablespoon cornstarch

Steps:

  • Roll out defrosted pastry slightly.
  • Shave top crust off of brie.
  • Cook fruit with sugar and cornstarch mixed with a little bit of water to make a slurry, until thickened.
  • Spray pan with pam and top with parchment paper. I use a pie plate. Place pastry on parchment and spread a little fruit on center of pastry just where brie will be. Sprinkle with brown sugar.
  • Place brie on top and spread a little more fruit on top. Sprinkle with brown sugar.
  • Pull points up to meet and scrunch together, folding pastry around brie, like a pretty gift. Brush with egg wash or milk.
  • Tie around center with a pretty fabric ribbon.
  • Bake at 350 degrees for about 30 minutes.
  • Let stand for about 10 or 15 minutes before serving.
  • Serve with extra warm fruit on the side.

This is a very elegant appetizer. Make sure to 'gently' pat down the brown sugar (perhaps sprinkling would be better). The first time I made it I was not gentle and the crust was much to hard (but still delicious). Some reviewers have suggested using less sugar which sounds like a good option. You be the judge. Either way, it's sure to be a hit at your next get together.

1 (24 ounce) brie round, not fully ripened, top rind removed (8 inch)
1 cup chopped pecans
2 cups firmly packed brown sugar

Steps:

  • Preheat broiler.
  • Place Brie in 10-inch quiche dish or other oven-proof dish or pie plate and sprinkle with nuts.
  • Cover top and sides with sugar, patting gently with fingertips (do not be concerned if sides are not fully covered).
  • Broil on lowest rack until sugar bubbles and melts, about 3 minutes (cheese should retain its shape).
  • Serve immediately with crackers.

1 wheel (450 g) PC Double Cream Brie
¼ cup (50 mL) PC Hot Red Pepper Jelly
¼ cup (50 mL) chopped pecans
1 tsp (5 mL) packed dark brown sugar

Steps:

  • 1. Preheat oven to 375°F (190°C). 2. With sharp knife, score top of Brie in criss-cross pattern cutting just through the rind. Do not cut through the edge. Place in glass pie plate. Spread jelly over top all the way to edge. Sprinkle with pecans, then brown sugar. 3. Bake in centre of oven for 20 minutes. GOOEY, OOZING CHEESE IS ALWAYS A HIT, especially when it's sandwiched between two slices of crisp toasted bread. The contrast of rich Brie and the sweet and spicy chili sauce in this combination is sublime. Leave the rind on the Brie; it's a natural, edible part of the cheese.

Yield makes 4 sandwiches

Number Of Ingredients 9

8 ounces Brie-style cheese, cut into 8 slices
8 slices hearty artisanal white bread
4 tablespoons Sweet Thai Chili Sauce (recipe follows)
4 garlic cloves, peeled
1/4 teaspoon kosher salt
1 1/2 teaspoons red pepper flakes
1/2 cup cider vinegar
2/3 cup gently packed light brown sugar
(makes 1 cup)

Steps:

  • Lay 2 slices of cheese on each of 4 slices of the bread. Spread 1 tablespoon chili sauce on each of the remaining 4 slices bread and lay them, sauce side down, on top of the cheese.
  • Heat a large skillet over medium heat and put the sandwiches in the pan. Cook until the cheese has melted and the bread is golden brown, about 3 minutes per side. Serve warm.
  • Using a mortar and pestle, pound or mash the garlic and salt together. Stir in the pepper flakes and set aside.
  • Place the vinegar in a small, nonreactive saucepan (see Note). Bring it to a boil over high heat. Stir in the sugar, reduce the heat, and simmer for 5 minutes. Stir in the garlic mixture and cook for 1 minute. Remove the pan from the heat. Let the sauce cool to room temperature before using.

2 large sweet potatoes
1 tablespoon extra virgin olive oil
salt
8 slices sourdough bread
3 tablespoons fig preserves
1/2 lb brie cheese, cut into 8 long even slices
4 ounces prosciutto
2 tablespoons unsalted butter, softened

Steps:

  • Preheat oven to 500 degrees. Line a large baking sheet with foil. Scrub the sweet potatoes and cut into fries 1/2-inch thick. Toss on the baking sheet with the olive oil and season lightly with salt. Spread in a single layer and bake for 10 minutes; flip with a spatula, then bake until the ends start to crisp about 8 to 10 minutes.
  • Heat a nonstick griddle or large skillet over medium heat.
  • Lay the bread slices in pairs on a work surface. Spread the fig preserves equally onto 4 slices of bread.
  • Lay 2 slices of cheese over the preserves.
  • Arrange the prosciutto on top, folding evenly with the edges of the bread.
  • Cover the remaining bread slices and spread half the butter on top. Invert the sandwiches and spread the remaining butter on the other side.
  • Put sandwiches in hot pan, cook turning once or twice until both sides are golden and crisp and the cheese is melted.
  • Cut the sandwiches in half and serve with sweet potato fries.

1/2 sweet potato, peeled and sliced 1/8-inch thick with a mandoline
1/2 small red onion, thinly sliced
2 sprigs fresh rosemary, leaves picked
3 tablespoons olive oil
Flour, for dusting surface
1 pound store-bought pizza dough, at room temperature
6 ounces brie cheese, sliced
Kosher salt and freshly ground pepper

Steps:

  • Adjust the racks to the middle of the oven and preheat to 475 degrees F. Spray a half baking sheet with nonstick spray.
  • Add the sweet potato to a large bowl and toss with the red onion, rosemary, 2 tablespoons olive oil, salt and pepper.
  • Flour your work surface and stretch the dough out to an oblong rectangular shape. (You may need to use a rolling pin.) Place the dough on a sheet tray and top with the sweet potato mixture in an even layer. Drizzle with 1 tablespoon of olive oil and scatter the slices of brie.
  • Bake until golden and crisp, 15 to 17 minutes. Slice into wedges and serve.
