Baked oatmeal is a great way to prep a delicious breakfast for the week, or a warm breakfast for the family to enjoy. This recipe is a great twist on my overnight oats recipe, especially if you prefer eating your oatmeal warm. Old fashioned oats are mixed with mashed banana, maple syrup, unsweetened applesauce, milk, and spices and baked to perfection. Split into four generous servings, this baked oatmeal keeps great in the fridge and is easy to reheat.

2 bananas (overripe)
1/4 cup unsweetened applesauce
2 tbsp maple syrup
1 1/4 tsp cinnamon (divided)
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp kosher salt
1 cup cashew milk (unsweetened, or almond milk or skim)
1.5 cups old fashioned oats
1 tsp sugar

Steps:

  • Preheat the oven to 375F.
  • Spray a small baking dish or casserole with cooking spray. I used an 8.5" x 11" 2.5qt casserole dish for this.
  • Add the overripe bananas to the bottom of a mixing bowl, and mash them with a fork.
  • Add the applesauce, maple syrup, 1 tsp cinnamon, baking powder, salt, and vanilla extract, and stir to combine.
  • Add the milk. Whisk together.
  • Add the oats. Fold in.
  • Pour the mixture evenly into the baking dish.
  • In a small bowl, combine the remaining 1/4 tsp cinnamon with the 1 tsp sugar. Sprinkle this mixture evenly on top of the oats.
  • Bake at 375 for 35 minutes.

Sweet and Savory Oatmeal image

Put a twist on your morning oats by adding Jimmy Dean fresh sausage and some greens. A drizzle of maple syrup mixed with the yolk of an egg provides a creamy note to the dish that is savory with hints of sweetness.

1 ½ cups water
salt to taste
1 cup uncooked instant or quick cooking oatmeal
¼ teaspoon ground cinnamon
½ teaspoon white sugar
1 tablespoon canola oil
1/4 (1-pound) package Jimmy Dean Premium Pork Sausage
1 cup lightly sauteed spinach
1 large egg
2 teaspoons maple syrup

Steps:

  • In a small pot with a lid, bring the water to a boil with a pinch of salt.
  • Stir in oats and reduce heat to low. Cover and let cook until the desired consistency is reached.
  • Add cinnamon and sugar, and stir.
  • In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain. Remove the sausage and set aside.
  • Add the greens to the frying pan and saute for about 1 minute or until they begin to wilt. Remove from heat.
  • Add the greens and sausage to your bowl of oatmeal, plus an egg cooked to your liking, and maple syrup to your taste. Serve immediately.
