Speckled Trout in Capers and White Wine image

Speckled trout baked in a white wine-capers sauce. This recipe will work with trout, grouper, or any solid white fish. So easy and delicious. Serve with corn, mixed vegetables, or glazed carrots and broccoli.

1 pound fresh speckled trout
2 tablespoons butter
1 tablespoon lemon pepper
1 teaspoon capers
1 pinch paprika, or to taste
ΒΌ cup white cooking wine
1 teaspoon minced fresh parsley, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking dish with aluminum foil.
  • Place trout in the middle of the aluminum foil; top with butter, lemon pepper, capers, and paprika. Pour cooking wine over trout. Close foil around the trout.
  • Bake in the preheated oven until fish flakes easily with a fork, about 30 minutes. Garnish trout with parsley.

My mother-in-law showed me this recipe - so easy my kids could make it! I have kept this very general as it really depends on the size of the trout you have, and your personal preference when it comes to the lemon. We catch speckle trout (all about 10 - 12 inches long); So tasty and sweet! Best with FRESH fish!! This could be served at camp too! Just bring the whole lemons and butter (ooh, even a few cloves of previously roasted garlic!)

2 trout fillets (your choice of frying size)
lemon juice, to taste
butter, to cover bottom of pan

Steps:

  • Clean trout properly; cut to the size you prefer to eat (our family leaves the skin on).
  • Put enough butter on bottom of pan (cast iron preferred) and let bubble.
  • Lay trout, skin side down, in pan; flip when necessary.
  • Squeeze lemon juice (or pour canned juice) over trout fillets.
