Spaghetti with Meatballs image

I saw this recipe one evening on the cooking channel with Michael Symon. This is his mother and grandmother's recipe, it looked so delicious, so of course I just had to try and so happy I did, it's fantastic. INGREDIENTS: MEATBALLS
1/3 cup(s) olive oil
1 clove(s) garlic, minced
1 - shallot, minced
1 1/2 cup(s) diced day old wheat bread
1/4 cup(s) milk
1 1/2 pound(s) ground beef
3/4 cup(s) ricotta
1/2 cup(s) fresh basil leaves, chopped
1/2 cup(s) fresh parsley, chopped
1/4 cup(s) grated parmesan
1 teaspoon(s) salt
1 large egg
YIA YIA'S NEAPOLITAN SAUCE
1/4 cup(s) olive oil
2 pound(s) baby back ribs, separated
1 large onion, diced
1 tablespoon(s) salt
6 clove(s) garlic, sliced
1 bottle(s) dry white wine
2 - 28 ounce cans tomatoes, chopped
3 tablespoon(s) fresh oregano leaves
1 tablespoon(s) crushed red pepper
1 - bay leaf
1 - 2 to 3 inch parmesan rind
SPAGHETTI
- kosher salt
1 pound(s) spaghetti
15 - fresh basil leaves, torn
1 to 2 tablespoon(s) butter
1/4 cup(s) grated parmesan

Steps:

  • SAUCE: In large Dutch oven, heat the oil over medium heat. Add the ribs and brown about 4 minutes each side. Add the onions and sprinkle with salt. Cook about 2 minutes. Add garlic and cook another 3 minutes.
  • Add white wine, tomatoes, oregano, red pepper flakes, bay leaf, and Parmesan rind. Bring to simmer, reduce to low and cook up to 8 hours reducing sauce by 1/3.
  • MEATBALLS: In small fry pan, add 1 tbsp. olive oil over medium heat. Add garlic and shallots and cook for 2 to 3 minutes. Soak the bread crumbs in medium bowl.
  • Combine the beef, ricotta, basil, parsley, Parmesan, salt, egg, shallots and garlic in large mixing bowl. Add the bread crumbs. Mix thoroughly until combined. Form the meat mixture into 2 inch meatballs. In large frying pan, heat remaining oil and brown meatballs on all sides.
  • Place meatballs in Yia Yia's sauce and simmer for 30 minutes.
  • SPAGHETTI: In large pot, lightly salt water and cook pasta according to package directions. Drain. Add a cup or two to a large frying pan and add pasta, basil leaves, Parmesan, and butter. Toss to coat. Transfer to serving platter and serve with sauce, meatballs and ribs.
