I saw this recipe one evening on the cooking channel with Michael Symon. This is his mother and grandmother's recipe, it looked so delicious, so of course I just had to try and so happy I did, it's fantastic. Steps:
- SAUCE: In large Dutch oven, heat the oil over medium heat. Add the ribs and brown about 4 minutes each side. Add the onions and sprinkle with salt. Cook about 2 minutes. Add garlic and cook another 3 minutes.
- Add white wine, tomatoes, oregano, red pepper flakes, bay leaf, and Parmesan rind. Bring to simmer, reduce to low and cook up to 8 hours reducing sauce by 1/3.
- MEATBALLS: In small fry pan, add 1 tbsp. olive oil over medium heat. Add garlic and shallots and cook for 2 to 3 minutes. Soak the bread crumbs in medium bowl.
- Combine the beef, ricotta, basil, parsley, Parmesan, salt, egg, shallots and garlic in large mixing bowl. Add the bread crumbs. Mix thoroughly until combined. Form the meat mixture into 2 inch meatballs. In large frying pan, heat remaining oil and brown meatballs on all sides.
- Place meatballs in Yia Yia's sauce and simmer for 30 minutes.
- SPAGHETTI: In large pot, lightly salt water and cook pasta according to package directions. Drain. Add a cup or two to a large frying pan and add pasta, basil leaves, Parmesan, and butter. Toss to coat. Transfer to serving platter and serve with sauce, meatballs and ribs.
