As a change from mayonnaise-laden slaw, I created this refreshing alternative. It uses many of the garden vegetables I grow, so it's also economical. I serve it at our family reunion each Fourth of July, and it's always a big hit at get-togethers. -Sharon Payne, Mayfield, Kentucky

Number Of Ingredients 13

3/4 cup sugar
3/4 cup white vinegar
1/3 cup canola oil
1 tablespoon water
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon crushed red pepper flakes, optional
1 package (14 ounces) coleslaw mix
2 medium tomatoes, peeled, seeded and chopped
1 large onion, chopped
1 small green pepper, chopped
1 small sweet red pepper, chopped
1/2 cup sweet pickle relish

Steps:

  • In a large saucepan, combine the sugar, vinegar, oil, water, salt, pepper and, if desired, pepper flakes. Cook and stir over medium heat until mixture comes to a boil. Cook 2 minutes longer or until sugar is dissolved. Cool to room temperature, stirring several times., In a large salad bowl, combine the coleslaw mix, tomatoes, onion, peppers and pickle relish. Add the dressing and toss to coat. Cover and refrigerate overnight. Serve with a slotted spoon.

1 ½ pounds shredded napa cabbage
5 stalks celery, diced
6 radishes, quartered and sliced thin
1 (2.25 ounce) can sliced black olives, drained
3 green onions, sliced thin

  • Mix crabmeat, cabbage, celery, radishes, olives, and green onions in a large mixing bowl until ingredients are evenly distributed.

Hot Dogs with Summertime Slaw image

1 cup sour cream
1/4 cup prepared mayonnaise
2 tablespoons sugar
1 tablespoon red wine vinegar
1 tablespoon apple cider vinegar
2 cups sliced red cabbage
2 cups sliced green cabbage
Kosher salt and freshly ground black pepper
Grilled hot dogs of your choice, on a bun

Steps:

  • In a large bowl, whisk together the sour cream, mayonnaise, mayonnaise, sugar, red wine vinegar, and apple cider vinegar. Stir in the cabbage and toss to coat. Season the cabbage with salt, and pepper, to taste.
  • Serve the slaw on top of a grilled hot dog, or as a side dish for hot dogs, burgers, or grilled chicken.

Number Of Ingredients 9

2 large cucumbers
3 large carrots
1 bunch green onions
1/4 c dried chopped chive, can use fresh
1/4-1/3 c splenda or sugar
2 c sour cream- i prefer daisy brand
2 tsp coarse black pepper or as desired
1 tsp granulated garlic
extra slices cucumber & carrots as garnish (otional)

Steps:

  • 1. Wash and peel cucumbers and green onions, retaining a bit of the outside peel if desired for color.
  • 2. Cut into smaller cuts if desired to fit into tube of a food processor may grate by hand if you do not have a food processor.
  • 3. Then empty shredded cucumbers into a large sieve to drain excess liquid from cucumbers. Drain for at least a half hour, then press down on shredded vegetable to remove excess liquid, I got more than a cup of excess liquid. NOTE: THIS STEP PREVENTS THE SLAW FROM BEING WATERY.
  • 4. Grate the carrots, and remove any large pieces, combine the two together to a large bowl after the cucumbers has drained.
  • 5. Then prepare the sauce mixture by adding the sour cream and other ingredients to a medium size bowl, then stir till blended.
  • 6. Pour sauce mixture into bowl with shredded carrots and onions, then stir till completely blended together.
  • 7. Pour into desired serving dish and serve with your main entrée. NOTE: PREP TIMES INCLUDES 30 MINUTES OF DRAINING THE CUCUMBERS AND ONIONS IN A SIEVE.
