3 cups granular sucralose sweetener (such as Splenda®)
1 cup evaporated milk
¼ cup unsweetened cocoa powder
¼ cup peanut butter
¼ cup butter

Steps:

  • Line an 8-inch baking pan with aluminum foil. Clip a candy thermometer to the side of a saucepan.
  • Combine sweetener, evaporated milk, and cocoa powder in the saucepan. Bring to a boil. Reduce heat to medium; cook and stir until the thermometer registers 234 degrees F (112 degrees C) or until a small amount of syrup dropped in cold water forms a soft ball, 5 to 10 minutes. Stir in peanut butter and butter until melted, about 1 minute.
  • Pour mixture into the prepared pan. Chill until set, 1 to 2 hours. Cut into squares.

1 ¾ cups evaporated milk
3 ½ cups granular sucralose sweetener (such as Splenda®)
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Line an 8-inch square baking pan with aluminum foil.
  • Place chocolate in a food processor; pulse until finely chopped.
  • Pour evaporated milk into a microwave-safe bowl. Stir in sweetener, 1/2 cup at a time, until dissolved. Add vanilla extract. Stir in chopped chocolate.
  • Heat mixture in the microwave in 30-second intervals, stirring after each interval, until chocolate is melted and smooth, about 2 minutes total. Stir in walnuts.
  • Spread chocolate mixture in the prepared pan. Refrigerate until firm, about 2 hours. Cut into 1 1/2-inch squares.

24 packets Equal sugar substitute
1 teaspoon vanilla extract

  • Melt margarine over low heat.

1 cup water
1 1/4 teaspoons stevia powder
8 ounces evaporated milk
3 ounces unsweetened chocolate, grated
1 cup nuts, chopped

Steps:

  • Put aluminum or plastic foil around an 8x8 pan with high rim. Butter foil and set pan aside. Combine water and stevia in a large saucepan. Put over medium heat and stir until stevia dissolves. Add in evaporated milk and clip candy thermometer to side of pan. Keep stirring until mixture boils and temperature reaches 235°F (113°C). Take the pan off the heat and stop stirring. Let mixture cool to 110°F (43°C), then stir in the grated chocolate until it melts. Beat the mixture with a wooden spoon or spatula until it thickens. When you start to hear popping noises (oxygen) while stirring, add in the nuts and stir until spread out evenly. Pour mixture into prepared pan and refrigerate for several hours until fudge has hardened. Cut into 1 inch squares and serve at room temperature.

2 cups Splenda granular, sugar substitute
4 tablespoons vanilla protein powder (4 scoops)

  • Melt the butter and peanut butter in the microwave on high for 2 minutes. Stir. Microwave for another 1 minute
  • Remove and stir in the cream cheese until completely dissolved.

1/4 c cold water
2/3 c splenda
2 Tbsp butter
1 pkg sugar free hershey's chocolate chips (9 oz)
1 tsp vanilla
1/2 c nuts (optional)
2/3 c powdered milk instant

Steps:

  • 1. Combine the water and dry milk in a medium saucepan. Stir til smooth. Add the Splenda and butter and heat on stove on medium heat stirring constantly. Stir til butter is melted and mixture is warm but not boiling. Remove from heat.
  • 2. Stir chocolate chips and vanilla until chips are melted and mixture is smooth and glossy. (1 1/2 Cups of semi-sweet chocolate chips can be substituted if you can't find the Hershey's sugar free ones.)
  • 3. Fold in nuts. Pour onto wax paper and refrigerate until firm. (1-2 hours)

  • Press the cookie mix into the bottom of a pie pan and bake on 350 for 8-10 minutes watching it so it doesn't burn. Let this cool.
  • Mix up the pudding and fill your shell. (Note you can add additional peanut butter to the pudding mixture if you'd like it to be even richer. Refrigerate.
  • Top with sugar free Cool Whip.

I found this recipe while looking for something special to make my diabetic uncle for thanksgiving. A word on the sweetener. I have tried different combinations of sweeteners, including Splenda packets, Sweetzfree liquid Splenda, and powdered erythritol. I had the best results using the powdered erythritol and Sweetzfree, which is a very concentrated liquid. I have found that with chocolate, using artificial sweeteners with no sugar alcohols produces only an "OK" result. Adding a low glycemic sugar alcohol (not maltitol) improves the flavor and texture when working with unsweetened chocolate.

I've now found that when I make it with a higher-quality chocolate such as Ghirardelli, it comes out very hard, and works better to use less chocolate (like 6 or 7 oz.) or more of the other ingredients. 85g (1/3 cup) Natural Roasted Almond Butter
1 cup + 2 tbs Unsweetened Vanilla Almond Milk (or "milk" of choice)
1 tsp Stevia Extract
10 drops Lemon Flavor or Almond Flavor
168g (8 scoops) Vanilla Brown Rice Protein Powder** (I used SunWarrior)
60g (1/2 cup) Oat Flour
4 tsp Organic Matcha Powder
2-4oz Dark Chocolate, melted (or Mini Dark Chocolate Chips)

Steps:

  • Line an 8 inch brownie pan with parchment paper both ways, set aside.
  • In a stand mixer bowl with beater attachment, add the almond butter, milk, stevia and lemon flavor. Mix on low speed.
  • In a small bowl, whisk together the protein powder, oat flour and matcha powder. Slowly add this to the mixing stand mixer.
  • Mix until the mixture is even, scraping down the sides of the bowl if necessary. It should have a texture like cookie dough.
  • Scoop the mixture into the prepared pan and flatten the surface with a rubber spatula or pastry roller.
  • Tightly cover the pan with plastic wrap and refrigerate overnight.
  • The next day, slice the protein bars and drizzle them liberally with chocolate. Serve!
  • To store, place the protein bars on a plate and wrap tightly.

3/4 cup almond milk (or other low carb milk)
3 tablespoons unsweetened cocao powder (or unsweetened cocoa)
8 ounces unsweetened baking chocolate
1 teapoon monk fruit liquid (or 1/2 teaspoon stevia drops)
1 teaspoon vanilla extract
2 tablespoons powdered erythritol (or other powdered sweetener (optional))

Steps:

  • Heat coconut cream, almond milk, and cocao powder in medium sauce pan over medium low heat until hot.
  • Whisk in the baking chocolate until completely melted.
  • Remove from heat and add in the sweetener drops and vanilla extract. Add powdered sweetener if needed to taste.
  • Pour into popsicle molds and place in freezer for 30 minutes. Add popsicle sticks and continue to freeze until set. Remove from molds and allow to thaw slightly before serving as they will freeze very hard.
