Bran Muffins with Applesauce image

This is one of my favorite bran muffin recipes, handed down from my mom. I made a few tweaks to make it even healthier. Add some raisins for a touch of sweetness.

½ cup brown sugar
½ cup applesauce
¼ cup canola oil
1 egg
1 teaspoon vanilla extract
¾ teaspoon salt
1 cup whole wheat flour
1 cup natural wheat bran
3 tablespoons ground flax
1 teaspoon baking soda
½ teaspoon baking powder
1 cup milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin.
  • Mix together brown sugar, applesauce, canola oil, egg, vanilla extract, and salt in a large bowl.
  • Mix flour, bran, flax, baking soda, and baking powder in a separate bowl. Add bran mixture to applesauce mixture. Add milk and stir until thoroughly combined. Pour batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 11 to 13 minutes.

These are delicious with cream cheese. I found this recipe in Know Your Apples M.A.C.S Alumni Scholarship Fund cookbook. This recipe was posted by Eleanor Rose Morton. I have not tried this recipe, but I'm posting it for safe keeping.

1 egg
2 tablespoons vegetable oil
1 1/2 cups unsweetened applesauce
2 cups unbleached white flour
3/4 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 cup raisins

Steps:

  • Beat together egg, oil, and applesauce. Add flour, baking soda, baking powder and spices; beat well. Stir in raisins.
  • Spoon batter into oiled and floured muffin tins. Bake at 375 for 20-25 minutes or until firm to the touch and browned. Cool on wire rack.

2 cups all-purpose flour
¾ cup white sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
¼ teaspoon salt
½ cup coconut butter
1 extra large egg
1 ½ cups unsweetened applesauce
1 teaspoon vanilla extract
1 cup raisins
½ cup crushed walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners.
  • Mix flour, sugar, baking powder, cinnamon, and salt together in a large bowl.
  • Melt coconut butter in a small bowl. Beat egg into the butter and pour into the flour mixture. Mix in applesauce and vanilla extract. Fold in raisins and walnuts and mix into a doughy batter.
  • Scoop batter into the muffin liners using an ice cream scoop.
  • Bake in the preheated oven until tops spring back when lightly pressed, 18 to 20 minutes. Let muffins cool for about 5 minutes.

3 cups flour

2 cups golden seedless raisins
1/4 cup brown sugar

Steps:

  • Preheat oven to 375°F.
  • With mixer beat eggs slightly.
  • Add sugar, oil and applesauce; beat thoroughly.
  • In a separate bowl, mix dry ingredients together.
  • Add dry to the applesauce mixture; mix well.
  • Stir in raisins.
  • Fill greased muffin tins 2/3 full and sprinkle each muffin with a bit of brown sugar.
  • Bake for 15-20 minutes.
