SPINACH AND RED PEPPER-STUFFED CHICKEN

Number Of Ingredients 13

10 ounces frozen spinach, thawed and squeezed dry
One 12-ounce jar roasted red peppers, drained, patted dry and chopped
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan
1/4 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
4 small chicken breasts (about 8 ounces each)
2 tablespoon olive oil
1 shallot, grated or chopped
1/4 cup dry white wine
1 cup chicken broth
1 tablespoon unsalted butter, cold
Chopped fresh parsley, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • Mix together the spinach, peppers, breadcrumbs, Parmesan, smoked paprika, 1/4 teaspoon salt and a few grinds of pepper in a small bowl. Set aside.
  • Butterfly the chicken: Holding your knife parallel to the cutting board, slice a breast through the middle, stopping about 1/2-inch short of the other side. Open the breast up like a book and flatten it with your palm. Place between two pieces of plastic wrap and pound with a meat mallet to a little less than 1/2-inch thick. Repeat with the remaining breasts.
  • Divide the spinach mixture into four portions and place a portion in the center of each breast. Roll the breasts tightly around the filling and secure with kitchen twine. Sprinkle all over with salt and pepper.
  • Heat the oil in a large, oven-safe skillet over medium-high heat. Add the roll-ups and cook until golden brown on all sides, about 6 minutes. Transfer the skillet to the oven and cook until an instant-read thermometer inserted into the center of the filling registers 160 degrees F, another 6 to 8 minutes.
  • Transfer the roll-ups to a cutting board and cover loosely with foil. Return the skillet to the stovetop over medium heat (be careful, the handle will be very hot). Add the shallots and cook until softened, stirring, about 1 minute. Add the wine and boil until reduced by half, 1 to 2 minutes. Add the chicken broth; boil until reduced by half, about 3 minutes. Off the heat, whisk in the butter and season with salt and pepper.
  • Cut away the twine and slice the chicken into 1-inch rounds. Serve with the pan sauce and sprinkle with parsley.

3 large chicken breasts (boneless, skinless (1 3/4 to 2 lbs, even-sized pieces))
3/4 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp paprika
1 1/2 Tbsp olive oil
4 oz cream cheese (cold)
1 Tbsp mayonnaise
2 garlic cloves (pressed)
1/4 tsp salt
1 1/2 cups baby spinach leaves, chopped
1/4 cup mozzarella cheese
1/4 cup parmesan cheese

Steps:

  • Preheat oven to 425˚F with a rack in the center. In a mixing bowl, mash together cream cheese, mayo and garlic with a fork then stir in mozzarella, parmesan and chopped spinach leaves until combined.
  • Lay chicken on a flat surface and cut slit 3/4 of the way through without cutting all the way through. Stuff each chicken breast with 1/3 of the mixture and seal horizontally with a toothpick (make sure the chicken breast can lay flat on the sides for searing.
  • Season the outside of the chicken breast all over with 3/4 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic powder and 1/2 tsp paprika, or season to taste.
  • Heat 1 1/2 Tbsp olive oil in an oven-proof pan such as cast iron, or large heavy-bottomed skillet over medium heat. Add chicken and sauté for 4 minutes per side until golden brown on each side.
  • Flip a second time and immediately transfer skillet to preheated oven. Bake at 425˚F for 10-15 minutes until thermometer inserted into the thickest part of the chicken registers at 165˚F. Rest chicken 5 minutes before slicing. Spoon pan juices over chicken to serve.

2 tablespoons olive oil
1 bag (10-ounce) baby spinach
3 cloves garlic (minced)
Salt and freshly ground black pepper (to taste)
2 boneless skinless chicken breast halves (approximately 1 pound, cooked, cooled and diced)
1 can (15-ounce) artichoke hearts (drained, squeezed of excess moisture and chopped)
1 container (6.5-ounce) herb and garlic cheese spread (such as Boursin)
1/2 cup freshly grated Parmesan cheese
1/2 cup mayonnaise
2 tablespoons chopped fresh chives
1 large egg mixed with 1 tablespoon water
2 packages (each 17.3-ounce) puff pastry sheets such as Pepperidge Farm (or 4 sheets)

Steps:

  • Preheat oven to 400 degrees. Thaw puff pastry per package directions.
  • Heat oil in a skillet or saute pan over medium-high heat. Add the baby spinach and cook, 3-4 minutes or until wilted. Stir in garlic and cook 30 seconds more or until fragrant. Transfer baby spinach to a sieve or colander to drain. Gently press on the spinach with a wooden spoon to extract any excess moisture.
  • Combine spinach, chicken, artichoke hearts, herb and garlic cheese spread, Parmesan cheese, mayonnaise and chives in a small bowl. Season to taste with salt and black pepper.
  • Combine egg and water to form an egg wash. Set aside.
  • Roll out and cut each sheet into four even squares. Place even amounts of the chicken filling in the center of each puff pastry square. Dab a small amount of egg wash on each corner of the puff pastry. Pull the corners up and over the filling to form a square parcel. Dab each parcel with egg wash.
  • Bake for 20-22 minutes or until golden. If the pastry pulls away from the filling, gently press it back down with a spoon or spatula. Serve immediately.

2 tbsp garlic parsley salt
1 tbsp paprika
4 tbsp Unsalted Butter
6 oz softened cream cheese
1/3 cup parmesan cheese
2 tbsp mayonnaise
1 cup chopped spinach
2 galic cloves (pressed)

Steps:

  • In a large bowl, combine softened cream cheese, mayonnaise, parmesan cheese, garlic and chopped spinach. Set aside.
  • Butterfly the chicken breasts (see detailed instructions above).
  • Season each breast with garlic parsley salt and paprika on all sides.
  • Stuff each chicken breast with the cheese mixture. To keep the filling inside, seal each end of the breast with a toothpick.

This is a really unusual way of cooking, the parcels are rolled up in cling film and baked, they keep a perfect shape and all the juices are kept in. The result is a moist and delicately flavoured delight. Serve these at a dinner party and your guests will be very impressed.

4 chicken breasts, with fat removed
1 cup dry white wine
2 tablespoons soy sauce
1/2 teaspoon dried thyme
10 large fresh basil leaves
4 ounces dried apricots
4 ounces shiitake mushrooms
1/4 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons butter
450 g spinach
1 teaspoon honey
1 teaspoon lemon juice
1 teaspoon cornstarch (cornflour)
1 teaspoon melted butter (for basting)

Steps:

  • Put chicken breasts between 2 sheets of cling film and flatten with a meat mallet or rolling pin until double the size and about 1/4 inch thick
  • Place them in a large dish
  • Make marinade with white wine, soy sauce and thyme
  • Pour over chicken and leave for 1/2 hour, turning over half way through
  • Finely chop basil,apricots and mushroom together, season with salt and pepper, then blend in butter to form a smooth stuffing
  • Remove chicken when ready and pat dry
  • Lay the chicken breasts on a flat surface, put a single layer of spinach leaves on each breast,then 1/4 of stuffing on each one and spread evenly
  • Roll them up into a sausage shape to form a parcel
  • Cut 4x12inch squares of cling film,lay each chiken parcel on the cling film and wrap turning edges in,half way up
  • Place them in a baking tray and put into a preheated oven gas mark 4 electric 350 and bake for 30 minutes
  • Remove from oven and let cool for 5 minutes
  • Pierce each parcel to release juices and save, then carefully remove cling film from chicken
  • Brown chicken under the grill basting with melted butter
  • When golden set aside and keep warm
  • Mix the chicken juices with honey, lemon and cornstarch bring to boil, stir until thickend simmer 2 minutes
  • Put spinach in a ziplock bag seal and pierce a few times
  • Microwave on full power for 2 1/2 to 3 minutes
  • Drain spinach place chicken on top and drizzle with sauce
  • Serve with new potatoes and baby carrots

4 slices bacon, chopped
1 medium onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
1 box (9 oz) frozen spinach, thawed, squeezed to drain
1 egg, slightly beaten
1/2 teaspoon dried thyme leaves
1 cup shredded Italian cheese blend (4 oz)
6 boneless skinless chicken breasts (4 oz each)
1/2 teaspoon pepper
2 tablespoons olive or vegetable oil
Hot cooked rice or rice pilaf, if desired

Steps:

  • In 12-inch skillet, cook bacon over medium heat 5 to 8 minutes, stirring occasionally, until crisp. Remove bacon from skillet, reserving fat in skillet. Drain bacon on paper towels; crumble and set aside.
  • In same skillet, cook onion and garlic in bacon fat over medium-high heat 2 to 3 minutes, stirring frequently, until onion is tender. Remove skillet from heat; set aside. In medium bowl, mix spinach, egg, thyme and cheese. Stir in onion mixture and bacon.
  • In thick side of each chicken breast, cut 3-inch-long pocket to within 1/4 inch of opposite side of breast. Spoon about 1/4 cup spinach mixture into pocket in each chicken breast. Sprinkle pepper over chicken.
  • In same skillet, heat oil over medium-high heat. Add chicken; cook uncovered 8 to 10 minutes, turning once, until light brown on all sides. Reduce heat to low. Cover; cook 10 to 20 minutes longer, turning if necessary, until chicken is no longer pink in center (170°F). Serve immediately with rice.

½ cup sour cream
½ cup shredded pepperjack cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepperjack cheese, and garlic.
  • Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Secure with toothpicks, and arrange in a shallow baking dish.

½ cup mayonnaise
1 (10 ounce) package frozen chopped spinach, thawed and drained
½ cup crumbled feta cheese
2 cloves garlic, chopped
4 skinless, boneless chicken breasts
4 slices bacon

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, mix mayonnaise, spinach, feta cheese, and garlic until well blended. Set aside.
  • Carefully butterfly chicken breasts, making sure not to cut all the way through. Spoon spinach mixture into chicken breasts. Wrap each with a piece of bacon, and secure with a toothpick. Place in shallow baking dish. Cover.
