GERMAN FRESH FRUIT KUCHEN (BREAD MACHINE)
Fresh Fruit Kuchen, a summertime favorite and, with the help of a bread machine, is especially easy to prepare. It makes a delicious start to a lazy summer day when you want to hurry off to the beach or another favorite activity. Try it with juicy nectarines, peaches, plums or pears. The recipe calls for all-purpose flour to make the coffee cake especially light and tender. Dough can be prepared in all-size bread machines.

Steps:
- Measure dough ingredients into bread machine pan in the order suggested by manufacturer.
- Process on dough/manual cycle.
- When cycle is complete, remove dough from machine to lightly floured surface.
- If necessary, knead in additional flour to make dough easy to handle.
- Roll dough to 10 x 15-inch rectangle.
- Place on large, greased baking sheet.
- Arrange fruit, in lengthwise rows, 1/2 inch apart, on dough.
- Sprinkle Crumb Topping between rows of fruit.
- Cover; let rise in warm, draft-free place until doubled in size, about 20 to 40 minutes.
- Makes 1 (10 x 15-inch) coffee cake.
- Bake at 375°F for 20 minutes or until done.
- Remove from pan and cool on wire rack.
- Brush fruit with jam and drizzle Almond Icing over cake.
- Crumb Topping: Combine 1/2 cup all-purpose flour, 3 tablespoons sugar, 3/4 teaspoon Ground Cinnamon and 1/4 teaspoon Ground Nutmeg.
- Cut in 3 tablespoons softened butter or margarine until mixture resembles coarse crumbs.
- Almond Icing: In small bowl, combine 1 cup sifted powdered sugar, 4 to 5 teaspoons milk and 1/4 teaspoon almond extract; stir until smooth.

This recipes has lots of juicy fruit bedded on a beautiful yeast made bread, then topped with lots of nutty spiced crumbs that have a hint of candied ginger. Do use fresh peaches, plums whatever fruit you desire. I have an Abundance of fresh figs so that was my choice.

Steps:
- Place the dough ingredients into bread machine according to your bread machine specifications. Set to dough cycle.
- Butter a 10 inch springform pan.
- Preheat oven to 375 degrees.
- Lightly punch down dough on floured board. Roll out to fit the bottom of pan.
- In a food processor place the topping ingredients except butter and pulse till nuts are chopped add the butter and pulse till it resembles coarse bread crumbs.
- Arrange fruit on dough artfully.
- Sprinkle the topping over fruit.
- Cover with plastic wrap and place in a warm draft free place for 30 minutes.
- Bake for 45 minutes.

I can't remember whether I found this recipe in the newspaper or a magazine, but it's always a hit. It's best made when the fruits are in season.

- Lightly grease a shallow 2 quart baking dish.
- Mix plums and nectarines, spread in dish.
- Mix sugar and flour, cut in margarine with pastry blender.
- Stir in oats.
- Sprinkle mixture evenly over fruit.
- Dust with cinnamon.
- Bake at 350 30-35 minutes.
- Serve warm.

- In a small bowl, cream butter and sugar until light and fluffy. Beat in eggs. Combine flour and baking powder; add to the creamed mixture alternately with milk, beating well after each addition. Add lemon zest. Pour into a greased 10-in. springform pan. Arrange plums on top; gently press into batter. Sprinkle with brown sugar and cinnamon. , Place pan on a baking sheet. - TOPPING: Mix sugars, cinnamon and flour. Cut in butter until mixture is crumbly.
- CAKE: To make cake, mix 1 cup flour, sugar, salt and yeast in a large bowl.
- Place milk and butter in a sauce pan and heat until very warm (120°- 130° F). Gradually add to dry ingredients; beat 2 minutes.
- Beat in egg and 1 cup flour then beat on high speed for 2 minutes.
- Stir in enough of the remaining flour to make a soft but stiff batter.
- Spread batter into a well-greased 9-inch square cake pan and sprinkle with topping.
- Let rise in a warm place until double in bulk, about 1 1/2 hours.
- Bake at 350° for about 45 minutes or until done.
ITALIAN FRESH PRUNE PLUM BREAD
When fresh prune plums are in season, you won't find a better quick bread. You can freeze the second loaf.

- Preheat the oven to 350°F
- Lightly grease two 9 x 5 inch loaf pans.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, and beat well after each addition. Add the orange rind and vanilla.
- In a separate bowl, combine the flour, salt, cinnamon, cream of tartar and baking soda. Add the dry ingredients and sour cream alternately to the creamed mixture, beginning and ending with the dry ingredients.
- Stir in the nuts and plums. Divide the batter between the two loaf pans.
- Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the pans cool on a rack for 10 minutes, then turn the loaves out of the pans and cool completely on the rack. Makes 2 loaves.
