SLOW COOKER CHICKEN AND SWEET CORN IN POBLANO SAUCE image

4 large poblano chiles, stemmed, seeded and roughly chopped
1 jalapeno pepper, seeded and roughly chopped
8 cloves garlic
1 medium yellow onion, sliced
1 tsp salt, plus more to taste
8 boneless, skinless chicken thighs (about 2 pounds)
1 1/2 tsp cumin
1 1/2 tsp dried oregano
1/4 tsp cayenne
2 cups sweet corn kernels (about 3 ears)
1/2 cup chopped cilantro, plus more for garnish
Sour cream for garnish
Lime juice

Steps:

  • In a food processor, combine the poblano, jalapeño, garlic and onion. Pulse until smoothened season with a pinch of salt, or to taste. In a small bowl, combine salt, cumin, oregano, and cayenne. Season all sides of the chicken using all of the spice mixture. Put the chicken and corn into the slow cooker. Pour the poblano mixture over the chicken. Cook on high for 3 hours or on low for 7 hours. When done, remove the cooked chicken, and stir in the cilantro. Serve by plating the chicken over rice. Top with poblano sauce, sour cream, and cilantro. Drizzle with a squeeze of lime.
