My mother in law always sends us various flavors of fudge for Christmas. The package can get prety expensive so she gave me the recipes so I could make them myself.

Steps:
- Beat cream cheese at medium speed with an electric mixer until creamy.
- Add melted chocolate, beating until smooth.
- Stir in vanilla wafer crumbs and preserves; cover and chill one hour.
- Shape into one-inch balls; roll in chopped almonds, and chill.

Steps:
- Toast almonds & finely chop ? set aside.
- Melt chocolate in a double boiler. Beat together with cream cheese until smooth. Mix in vanilla wafer crumbs and preserves. Cover and chill for 2 hours.
- Shape dough into balls and roll in almonds. Store in the refrigerator.
- I found a new goodie this holiday season that is a keeper! The next time I make these I am going to try raspberry and blackberry preserves and I will definitely try this with white chocolate morsels and dark chocolate morsels as well. And I am wondering how this would be substituting apple butter for the preserves and using butterscotch morsels??? Also, substituting other nuts with different variations??? hmmmmmmmm.......
